RECEPTION

SELECTION
Consists of separating products not suitable for storage and processing And
selecting the raw material in categories of physical characteristics different such
as size, shape, color and maturity. The fruits should be chosen more appropriate
for the process, since the quality of the jam depends on the raw material used.

- Must be completely healthy, without signs or signs of decomposition
- Must be of the same variety
HEAVY
It is important to determine yields and calculate the amount of the other ingredients
that are added later.
WASHED
Consists of removing the dirt, dust, foreign substances and other impurities that
accompany the raw material.
SCALDING
LEATHER / GRATED
Consists of peeling and grating the carrots, being able to do it very fine or to the
taste. In the same way peel the oranges and grate or cut the peels in thin strips
(only 2 oranges). Keep the zum of oranges without pepas.
CONDITIONING
Again weigh the pulp obtained from the raw material, and dose the amount of sugar, pectin,
citric acid and preservative.
COOKING
Pour grated carrot, orange strips and orange juice into a kettle or cooking pot. You can add a
small amount of water. Mix the mixture at boiling temperature by stirring frequently.
When the raw material mixture has reached the boiling temperature, pour 1/3
of the sugar.
Immediately afterwards add the citric acid diluted in water or orange juice, to
avoid crystallization of the jam.
Incorporate the pectin mixed with the sugar 5 minutes before the jam reaches
its end point and finish cooking (62-63 Brix). To give consistency.
c) Using the drop test, which consists in introducing a few drops of jam in a
hot glass of cold water, if they reach the bottom without disintegrating,
the endpoint is reached.
PACKAGING
It consists in packing the jam in clean and sterile containers in hot at 85 C. The
containers should be inverted after sealing to create the vacuum on the top and
sterilize the lid on the bottom.

RECEPCIN
SELECCIN
Consiste en separar los productos no aptos para almacenamiento y elaboracin
y seleccionar la materia prima en categoras de caractersticas fsicas
diferentes tales como tamao, forma, color y madurez. Se deben escoger las
frutas ms apropiadas para el proceso, ya que la calidad de la mermelada
depende de la materia prima que se emplee.
- Deben estar maduras
- Deben estar completamente sanas, sin seales o signos de descomposicin
- Deben ser de una misma variedad
PESADO
Es importante para determinar rendimientos y calcular la cantidad de los
otros ingredientes que se aaden posteriormente.
LAVADO
Consiste en eliminar la suciedad, polvo, sustancias extraas y otras impurezas
que acompaan a la materia prima
ESCALDADO
Es un tratamiento trmico que consiste en dar una breve coccin (5-10min en
agua hirviendo), con el objetivo de inactivar las enzimas que pudieran originar
reacciones de oxidacin. En general se deben escaldar todas las frutas que
tiendan a pardearse rpidamente y aquellas que sean duras.
PELADO/RALLADO
Consiste en pelar y rallar las zanahorias, pudiendo hacerlo muy fino o al gusto.
De la misma forma se pelan las naranjas y se rallan o cortan las cascaras en
tiras finas (solo de 2 naranjas). Guarde el zum de las naranjas sin pepas.
ACONDICIONAMIENTO
Consiste en acondicionar las tiras de naranja para reducir el amargor, se realiza
sometiendo las tiras en una solucin (3% de sal) durante 15min a temperatura
de ebullicin. Posteriormente se realiza un enjuague.
FORMULACION
Pese nuevamente la pulpa obtenida a partir de la materia prima , y dosifique la
cantidad de azucar , pectina, acido citrico y preservante.
COCCION
Vierta en una marmita u olla de coccion la zanahoria rallada , las tiras de
naranja y el zumo de naranja. Se puede agregar una pequea cantidad de
agua.coccione la mezcla a temperatura de ebullicion removiendo con
frecuencia.
ENVASADO
Consiste en envasar la mermelada en envases limpios y estriles en
caliente a 85 C. Los envases debern invertirse luego de sellarse para
crear el vacio en la parte superior y esterilizar la tapa en la parte inferior.
