A. Verification

Verification evaluates compliance to the HACCP Plan processes and


documentation. These involves activities other than monitoring which are done at
established intervals and which determine the validity of the HACCP Plan and that
the system is operating according to this plan. The two major verification activities
are described below:

1.) CCP Verification CCP monitoring records are reviewed to evaluate day-to-
day compliance to the CCP documentation requirements. These are the
documentation requirements established in the procedures for CCP
monitoring activities as well as the required records for deviations and
corrective actions. CCP Verification would include:

Daily review of records for completeness, accuracy, and the


identification of non-compliance(s) and corrective actions taken.

Daily equipment function check review records on equipment checks


such as metal detector and thermohygrometer.

2.) HACCP Plan Verification entails evaluation of the compliance of practices


and procedures to the HACCP Plan. One of the objectives of this verification
activity is to review records over a period of time (weekly, monthly or
quarterly) to identify trends and root causes. System verification would
include Internal Audit which is done by the HACCP team at least once a
year.

3). HACCP Plan Re-Verification entails evaluation of the compliance of


practices and procedure to the HACCP Plan. One of the objectives of this re-
verification activity is to review the process and to determine that the HACCP
Plan is functioning as intended and if there are identified food safety hazards.
Re-verification activities in an event of the following:

New Processes
New Products
New Equipments
New Supplier
New Customer Requirements
New Legal Requirements

Frequency of Re-Verification:

1.) New Plan to check the HACCP plan adequacy and an on-site review
shall be performed in an event of re-verification activities stated above.

Method of Verification:

1. HACCP team coordinator will schedule on-site verification with the team
members.
2. HACCP team will conduct on-site verification on the scheduled date.
Existing process flow diagram will be use in verification.
3. The HACCP team shall review each processing step and the effect it
may have on the existing HACCP Plan.
4. All information /data collected from the on-site verification will be
summarized and reported on the closing of on-site verification activities.

B. Validation

Validation is one element of verification focused on collecting and evaluating


technical information to determine the HACCP Plan, if properly implemented, will
effectively control the identified hazards. It consists of activities which determine
that the HACCP Plan is functioning as intended and adequately controlling all
identified food safety hazards. Any new or emerging food safety concern shall be
identified during the validation process. Validation would include:

Equipment design assessment to ensure that critical equipment is


capable of achieving the parameters required for food safety.

Finished product testing to check the adequacy of the HACCP Plan. This
is apart from the routine product testing and release procedure.

Validation requirements are enumerated below:

1.) Frequency

1a.) New Plan to check the HACCP plan adequacy, an on-site review
and implementation audit shall be performed within six (6) months to
one (1) year from the plan approval

1b.) Existing Plan without Changes existing plans without any changes
shall be validated at least 12 months from the last validation date
using the HACCP Plan Validation Checklist in Appendix J.

1c.) Existing Plan with Significant Changes the HACCP Plan Validation
Checklist in Appendix J will be used for this purpose.

If there are any changes to the product, package or process, the


HACCP team shall convene to review the effect it may have on the
existing HACCP Plan. The review during the validation aims

To verify that all changes made since the last validation are
reflected in the Hazard Analysis and, as needed, in the HACCP
Plan itself.

Whenever there is a systematic or recurring product safety issue


or an industry recall of a similar product, validation will be
performed using the HACCP Plan Validation Checklist in Appendix
J.

2.) Responsibility

The HACCP Coordinator shall initiate and complete the HACCP Plan
validation process. The rest of the HACCP Team and the concerned
Department head(s) shall provide the necessary resources to assure the
adequacy of the validation.

3.) Process and Documentation


Validation of the HACCP Plan shall make use of the HACCP Plan
Validation Checklist in Appendix J.

The completed and signed HACCP Plan Validation Checklist and all
records related to verification shall be maintained by the HACCP
coordinator.
