In 10 years, the number of starred restaurants selected in the Michelin Guide

Hong Kong Macau has tripled!

Michelin is pleased to unveil the new selection for the MICHELIN guide Hong Kong Macau 2018,
which features a total of 227 addresses located in Hong Kong and 65 in Macau. Since 2008, the
Hong Kong market has matured, has improved in quality, as well as diversity, and the range
continues to be extensive: from local Cantonese gourmet scene to world-class fine dining
restaurants. Today, Hong Kong is a culinary hotspot in Asia, and one of the worlds most exciting
and dynamic dining destinations.

Michael ELLIS, International Director in charge of the MICHELIN Guides comments: Ten years
after the introduction of the very first MICHELIN Guide selection for Hong Kong Macau, we are
pleased to note the vibrancy of the local culinary scene: the number of starred restaurants has been multiplied by three!

In this new selection, all the restaurants awarded three-stars maintain their distinctions: Bo Innovation, LAtelier de Jol
Robuchon, Lung King Heen, 8 Otto e Mezzo-Bombana, Sushi Shikon, Tang Court, all located in Hong Kong, as
well as Robuchon au Dme and The Eight in Macau. Only slightly more than a hundred restaurants enjoy this unique
distinction worldwide.

The MICHELIN guide 2018 also was proud to distinguish numerous two-star establishments, for total of 11 restaurants in
Hong Kong and 5 in Macau.

Eight new restaurants are awarded one star in this years selection, all located in Hong Kong. Among them, Arcane, led
by the Aussie chef Shane OSBORN, offering a cuisine based on down to earth recipes and quality ingredients, turned into
artistic culinary creations in an open kitchen; Kaiseki Den by Saotome a restaurant relocated and renamed in 2017,
where chef SAOTOME serves Japanese cuisine based on the freshest food in season, like his signature dishes of sea
urchin truffle rice and chargrilled wagyu beef. Already well-known by foodies from Singapore and Shanghai, the first Hong
Kong branch of Imperial Treasure also gains one star in the MICHELIN guide Hong Kong Macau 2018. In this stylish
dining room with panoramic views of the harbor, diners can enjoy refined Chinese cuisine, such as poached garoupa in
fish soup with crispy rice and stuffed crab shell. Two Cantonese restaurants are awarded one star: Ying Jee Club where
clients can enjoy traditional Cantonese cuisine with a touch of finesse -like their signature crispy salted chicken- served in
an elegant and contemporary dining hall and Yee Tung Heen, which offer traditional Cantonese favorites but also serves
specialties of a more creative inspiration, prepared with seasonal ingredients.

Proof of the attractivity of the Hong Kong dining scene for world-class cooking professionals, two restaurants run by
renowned French chefs obtain their first star in 2018: The Ocean, owned by chef Olivier BELLIN, who creates superb
seafood dishes such as langoustine, sea urchin and scallops as brilliantly as he does in his Brittany restaurant.; and
Rech, the first international outpost of the famous Parisian seafood restaurant run by Alain DUCASSE. The talented chef
serves classics like a wonderful seafood platter, raw oysters, sole meunire, not to mention a fabulous Baba au rhum,
paired with creative offerings such as marinated raw fish and shrimps with nuts, herbs and seaweed.
And the selection would not be complete without mentioning the restaurant Tate, already awarded
one star in the 2017 selection, which moved to a larger space on Hollywood Road. The Owner-chef
Vicky LAU serves an innovative and artistic cuisine mixing Japanese and French inspirations.

This years selection also includes 82 Bib Gourmand, 73 in Hong Kong and 9 in Macau, offering a quality
three course menu for a maximum of HKD400. The selection highlights the quality of Cantonese cuisine
and the richness of local gourmet offerings including dishes like Cantonese stir fried, congee & noodle, dim
sum in attractive prices.
