VARIOUS TYPES OF CATERING ESTABLISHMENTS

INTRODUCTION

A successful hotel, restaurant, club etc is one which guests are


anxious to visit again, a place where they feel as comfortable as
in their own homes. This pleasant atmosphere is produced by
courtesy, good, well-cooked food, advice in selecting from the
available dishes, a knowledge of how they are prepared,
efficient, but unostentatious service. It is by these amenities that
both buyer and seller are satisfied and goodwill of the business
increased.

Students must realize the social and economic health of a


nation etc.

The expansion of overseas tourism has caused a boom in


the catering industry.

The awareness of peoples food needs and how to meet


them is the responsibility of the industry.

The hospitality industry is the most dynamic and fastest


growing industry in the world today.

1. COMMERCIAL CATERING
These are hotels/restaurants that run on profit basis.
Individuals or private (i.e. profit oriented) include hotels
of different classes, restaurants with different service styles,
example; Wine bars, fast foods and take-away-offering.

Delicatessen (a shop that sells prepared food often brought


from other countries)

Salad/ Sandwich bars (selling wide variety sandwiches,


bread rolls, banquets and chilled food selection)

Chain Catering organizations (operating chain hotels or


restaurants).

Popular catering (pizza/ steak house/ bistro, etc.)

Private clubs administered by a secretary appointed by a


management committee, from club members.

Licensed house (Pub) catering. Simple meals,


moderation in price and served in a congenial atmosphere.
Four types: Luxury, Gastro pubs, speciality, finger snacks.

Country hotels developed in tourists area example


stately homes manor houses (large country houses
surrounded by estates).

Consortia group of independent hotels who purchase


products or service example marketing from specialist
companies providing members with international
reservation system.
Motels/Traveling lodges Sited near motor ways who
focus on persons who need overnight stay or tourist on a
driving holiday.

Time share/Condominiums right to occupy a self


catering apartment for some time or indefinitely.

Guesthouse owners live at the premises. Not more than


10 rooms.

Health farms for specialist health treatment for stressed


overworked or those who want to lose weight (often a
luxury hotel).

Farms Countryside i.e. farm holiday in a nearby farm/or


on the farm itself.

Youth hostels cater for single people or group traveling


on a tight budget.

Sea Ferries For good restaurant experience and leisure


with shopping, bars and lounges,( eg. Dodi Princess)

Airport operate 24 hours a day, 365 days a year. Offers


themed restaurants, specialty restaurants, coffee bars,
seafood bars and often with shopping arcade.

2. TRANSPORT CATERING (COMMERCIAL)


Railways meals are served by uniformed stewards and
stewardess in an environment similar to the airlines. This
food is included in the ticket price.

Aircraft provides meals during flights. Owing to very


limited space on the plane, special ovens are provided to
heat the food, which may be frozen or chilled. The food is
prepared by the airlines company or by outside Contract
Company.

Marine similar standard to the big first class hotels and


are noted for their excellent cuisines.

3. PUBLIC SECTOR CATERING (COST SECTOR)


This is known as welfare catering, which is characterized
by its non-profit making focus. These include hospitals,
University Colleges, Schools, Prisons, Armed Forces,
Meals on wheels etc.

It is known as cost sector, because they are run on


minimum cost to achieve maximum efficiency

Prisons May be on contract, food usually prepared by


prison officers and inmates. The kitchens are also used in
training inmates in food production, to help them seek
employment when released.

Armed Forces feeding armed services staff in the


barracks, in the mess and in the field. Operated by contract
catering to reduce cost but increase efficiency.
Hospital headed by a dietician is aimed to assist nursing
staff to get the patient well as soon as possible. That is
providing good quality food, carefully prepared to retain
maximum nutritional value, and presented to the patient in
an appetizing manner.

School meals Nursery, primary, secondary

Industrial Catering (canteen) for industrial workers


providing breakfast, lunch, and other forms of meals.
Vending machines may be part of the service.

Holiday centres increase holiday experience.

Motorway service station provide food together with


retail and petrol services for motorway travellers, often in
isolated locations.

Drive Inns/drive through Customers stay in their


vehicles and drive up to a microphone in order to place a
request.

Luncheon club provide most large offices belonging to


business firms, such as insurance, petroleum companies,
banks etc.
4. OTHER ASPECTS OF CATERING

Contract Catering Undertaking the catering for


businesses, schools, hospital, leaving those establishments
free to concentrate on their business. They are extensively
used by many organizations and the arrangements made
will vary.

Types of Contracts

- Cost Plus
Clients pay for all agreed costs plus a management fee,
either a percentage of the expenditure or an agreed fixed
fee.

- Guaranteed performance
Clients obtain guarantee from caterer to perform in
certain areas, such as to recover food costs or a gross
profit

- Fixed Cost
Caterer works to annual budget fixed with clients. If
caterer overspends, he or she pays if she under spends he
or she retains the profits.

- Nil Cost
Caterer retains all income and deducts operating cost. No
payments required by clients.
- Commercial Returns
Caterer pays to provide a service via fixed rental,
percentage of turnover, or both.

- Partnership
This is where the client and customer are partners in the
operations and share the cost and revenues.

Outside Catering Functions held where there is no


catering or where the function is not within the scope of the
normal catering routine. The function type will include
garden parties, banquets, parties in private houses etc.

Corporate hospitality to build business relationships and


to raise corporate awareness. Becoming popular because of
the growth of companies who want to woo clients.

Franchising: This is where a manager pays a license fee


and makes whatever he/she can above an agreed percentage
on what he/she sells.

Operating styles vary considerably from pizza, hamburgers,


full menu etc e.g. Wendys, KFC. Many of the most active
franchised schemes are based on a fast food style of menu
and operating system.

One advantage is that it allows for many to be set up,


nationally and by so doing maximizes on an economies of
scale in purchasing promotional materials in the
development of the brand image.
