KADAI PANEER IN AUTHENTIC PUNJABI DHABA STYLE

Cooking Time : 25 minutes


Serving : 5-6 people
Ingredients :

1. 200 gms. paneer cut in cube size 14. 1(one) tablespoon Cumin Seeds
2. 2(two) medium size chopped onions 15. 2 Cinnamons, 2 Cloves
3. 2 (two) baby onion petals 16. 1(one) tablespoon grated Ginger
4. 3(three) chopped tomatoes 17. 1(one) tablespoon Kashmiri Red Chilli Powder
5. 1(one) capsicum cut into square shape 18. 25 gms. Cashew Nuts
6. 2 tablespoon grated garlic 19. 1/2(half) teaspoon Black Pepper Seeds
7. 2(two) dry red chillies 20. 1(one) teaspoon Fennel Seeds
8. 1(one) tablespoon Coriander Powder 21. 1(one) teaspoon Coriander Seeds
9. 1(one) tablespoon Cumin Powder 22. 2(two) tablespoon Oil
10. 1(one) tablespoon Turmaric Powder 23. 1(one) tablespoon Butter
11. Salt to taste 24. Some fresh Coriander Leaves
12. 1(one) tablespoon Garam Masala 25. Amul Fresh Cream(Optional)
13. 1(one) tablespoon Kasoori Methi
Method :
* Dry roast all the whole spices for few seconds.Turn off the flame then add fenugrrek leaves in dry roasted
spices.Now grind the special masala.
* Put oil on a heated kadai.Fry onions,tomato, garlic for a while on medium flame.Add Cashew nuts and dry
red chilli & fry for 3-4 minutes on low flame.You can cover it with a lid.Then make a thick paste of it in the
mixture grinder with dash of water.
* Give oil & butter on the same heat kadai.Add green chilli,ginger paste,some cumin seeds cloves and
cinnamon into hot oil.
* After mixing it,add red chilli powder,turmaric powder.Now fry the baby onions ,tomato & capcicum for 2
minutes.Give the sauce and stir it.After that add special masala,and all remaining powdered masala including
salt.
* After mixing it for 3-4 minutes add water.Next after 2 minutes add paneer and mix it carefully.Now cover it
for 2-3 minutes on low flame.
* Now give coriander leaves & fresh cream in this gravy.You can skip the cream.So here it is ready our Punjabi
Dhaba style Tasty & delicious Kadai paneer.Enjoy it with Kulcha,paratha,or rice.

CHILLI GOBI RECIPE

Cooking time : 15 minutes approx


Serving : 4-5 people

Ingredients : -

1. 1 cauliflower florets 11. 1 tblspn grated garlic


2. 3 tbspn all purpose flour (maida) 12. 1 tspn vinegar
3. 2 tbspn corn flour 13. 1 tspn kashmiri red chilli powder
4. /2 chopped onion 14. salt to taste
5. 1/2 square shape cut onion 15. 1 tspn sugar
6. 1/2 green capscicum 16. 4 tbspn oil
7. 1/2 red bell pepper,1/2 yellow bell pepper 17. 1 tbspn green chilli sauce
8. some chopped white & green part of spring onion 18. 2 tbspn soya sauce
9. 2 chopped green chillies 19. 3 tbspn tomato ketchup
10. 1 tblspn grated ginger 20. 1 tbspn red chilli sauce

Method : -
Step 1 : Take a big bowl and give maida,corn flour,green chilli sauce, soya sauce & salt little in the
bowl one by one.Mix well with spoon or hand well.Now add little water and mix it again if needed add some
more water and mix it thoroughly.Make sure that the mixture should not be thin.Rather it should be thick &
pour the gobi florets in the mixture and coat them well.

Step 2 : Now Turn on the gas and take a pan on it.Give oil in it and heat the oil enough to fry the
gobi.Now give the coated gobi florets and fry them until golden from both sides.Take them out from the pan
and keep it on a tissue paper & keep aside.

Step 3 : On that pan give grated ginger garlic & chillies on hot oil and saute for 1 minute. Then add
chopped onion & spring onion (white part ) & cook it for another 2 minutes on medium flame.Add remaining
veggies and saute them for 2 minutes on high flame.

Step 4 :Add vinegar and all the sauces in it and salt,red chilli powder and salt & mix it for a minute.
Now add the batter mixture with a dash of water in it & cook it for another 1 minute on high flame.

You can add little water if you want to get more gravy.Mix it & cook it for a minute.Add gobi
florets and saute for another minute on high flame.Turn off the gas and ready our perfect restaurant style chilli
gobi recipe.Serve it hot with spring onion (green part).Enjoy the meal....
Paneer Makhani

Cooking time : 15 minutes approx


Serving : 4-5 people

Ingredients : -
1. 250 gms paneer pieces
2 1 medium size chopped onion
3. 25 gms cashew nuts(soaked)
4. 4 medium size chopped tomato
5. 10-12 garlic pieces
6. 5-6 small ginger pieces
7. 3 dry red chillies
8. some fresh coriander leaves
9. whole garam masala,cumin seeds
10. Dry roasted Fenugreek leaves 1 tablespoon
11. 1 teaspoon red chili powder
12. 1 teaspoon cumin powder
13. 1 teaspoon coriander powder
14. 1 teaspoon turmeric powder
15. Salt to taste
16. 1 tablespoon condensed milk
17. 2 tablespoon cream (optional)
18. 3-4 tablespoon butter

Method : -
Step 1. At first add some butter on hot pan. After that give onion and ginger ,garlic on hot oil
and saute for 2 minutes. Then add red chilies,cashew nuts and whole garam masala in it and cook it for
another 3-4 minutes on medium flame. Cover it with a lid.

Step 2. Open the lid and add tomatoes in it and cook it for another 4-5 minutes.Now pour the
paste with little water into a mixture container to make a fine sauce.Make sure it should be very fine
sauce. Now take the pan and add remaining butter to heat it. Give cumin seeds,red chilli powder in the
hot butter . Stir it then add the sauce in it. Now give turmeric, coriander, cumin powder, salt to taste
and mix it properly. Cover the lid and cook it for 3-4 minutes on medium flame.
Step 3. After opening the lid add kasuri methi & stir it. Give fresh cream and condensed milk
and mix it well. Now add paneer pieces and sugar. Stir it very carefully, cover the lid for 2 minutes on
medium flame. After opening the lid you will see that your beautiful dish is absolutely ready to be
served hot..

South Indian Sambar Recipe
Ingredients
 3/4 cup toovar (arhar) dal  8 small shallots (madras onions)
 2 drumsticks , cut into 3” pieces  2 1/2 tbsp tamarind (imli) pulp
 1/2 cup bottle gourd (doodhi / lauki) cubes  3 tbsp sambhar powder
 2 tbsp oil  2 tsp chilli powder
 1 tsp mustard seeds ( rai / sarson)  of turmeric powder (haldi)
 6 to 7 curry leaves (kadi patta)  salt to taste

 2 pinches of asafoetida (hing)  2 tbsp finely chopped coriander (dhania)


 1/2 cup chopped tomatoes

Method

1. Wash the toovar dal thoroughly and drain.

2. Combine the washed dal and 2 cups of water in a pressure cooker and pressure cook for 3
whistles.

3. Allow the steam to escape before opening the lid.

4. Blend the dal using a hand blender till it is smooth and keep aside.

5. Combine the drumsticks and bottle gourd with 1 cup of water in a deep non-stick pan and
cook on a medium flame for 4 to 5 minutes or till the vegetables are soft. Keep aside.

6. Heat the oil in a deep non-stick pan and add the mustard seeds, curry leaves and asafoetida
and sauté on a medium flame for a few seconds.

7. Add the tomatoes, mix well and cook on a medium flame for 1 to 2 minutes, while stirring
occasionally.

8. Add the cooked bottle gourd and drumstick, shallots, tamarind pulp, cooked dal, , salt,
sambhar masala, chilli powder, turmeric powder, salt and ¾ cup of water, mix well and
bring to boil and allow to cook on a medium flame for 2 to 3 minutes, while stirring
occasionally.

9. Cook on a medium flame for 2 to 3 minutes, while stirring occasionally.

10. Add the coriander, mix well and cook on a medium flame for 1 minute.
11. Serve hot.
