CREAMY LEMON SQUARES

INGREDIENTS:

FOR THE CRUST


4 tablespoons butter, melted and cooled, plus more for pan
1-1/2 cup digestive biscuits, crumbed
1/4 cup sugar

FOR THE FILLING


2 large egg yolks
1 can (14 ounces) sweetened condensed milk
1/2 cup fresh lemon juice (3 lemons)

DIRECTIONS:
*Preheat oven to 350F / 180C degrees.
*Brush a square baking dish with melted butter.
*Crush biscuits
*Then add in sugar and butter and blend to mix.
*Press mixture into bottom of prepared pan.
*Bake until lightly browned, 8 to 12 minutes.
*Cool crust, 30 minutes.

TO MAKE THE FILLING


*In a large bowl, whisk together egg yolks and condensed milk.
*Add lemon juice; whisk until smooth.
*Pour filling into cooled crust; carefully spread to edges.
*Bake until set, about 15 minutes.
*Cool in pan on rack.
*Chill at least 1 hour before serving.
Serve with whipped cream.
CHEESY BACON BRUSSEL SPROUT CASSEROLE

Ingredients - Serves 8-10

2 pounds/1 kg brussel sprouts, halved (fresh or frozen and thawed)


1/2 pound/250g bacon, crumbled
1 cup sharp cheddar cheese, grated
1 cup fontina cheese, grated
1 cup heavy cream
2 eggs
2 cloves garlic, minced
2 tablespoons extra-virgin olive oil
1/2 teaspoon fresh thyme, minced
kosher salt and freshly ground pepper, to taste

Directions

Preheat oven to 400F/205C.


Toss brussel sprouts in olive oil and season generously with salt and pepper.
Place them in a large baking dish and roast for 15-20 minutes, or until semi-softened.
While brussel sprouts are roasting, cook bacon in a large pan or skillet over medium-high heat
until crispy.
Drain off fat and add garlic. Cook for 1-2 minutes, or until fragrant, and season with fresh thyme.
In a large bowl, whisk together eggs and heavy cream, then stir in cheeses.
Remove brussel sprouts from oven and add 3/4 bacon and garlic to the baking dish.
Pour cheese mixture over the top and stir everything together, then top with remaining bacon.
Reduce oven temperature to 350F/175C, return baking dish to oven and bake for 20-25 minutes,
or until cheese is bubbly and just set.
Remove from oven and let cool 5 minutes before serving
