学习内容渔业文凭课程主要学习的是关于渔业的理论与实践，如：生产、
加工处理以及资源管理。此课程也会学习到渔业对经济、环境和
社会文化的影响。
学生将学习到鱼类和无脊椎动物的生物学 (biology) 、生态
(ecology)以及进化过程(evolution)。此外，学生也将学习关于水
生环境微生物(microorganism)的知识，如：与水生生物之间的关
系、所造成的疾病以及控制这些微生物的方法。此科系学生不止
学习如何管理渔业的生态系统(ecosystem)和相关的政策(policy)及
法律条文，也须学习市场行销(marketing)和渔业产品的加工处理
(processing)，如：防腐技术。
学生也将学习到一些关于水产养殖的知识，如：各种鱼类的饮食
习惯和所需的营养成分、鱼类的健康管理、水质及土质管理，还
有水产养殖的系统设计。
除此之外，学生也会接触到航海与导航的知识，如：计算用来捆
绑货物的系绳强度、辨别船只的种类、引擎、设计及功能、港口
停泊过程，还有用来进行沟通的摩斯密码(Morse code)。

学习内容会计学主要是学习管理一家公司、团体或政府部门的财务及帐务报
告 (financial accounting & reporting) ，与管理会计 (management
accounting)等的科系。学生将学习各种会计的理论与制度(accounting
theory and financial statement)来分析财务及帐务报告和计算商业盈亏
(profit or loss)。因此，学生须学习管理会计活动的各种方法，如：
收集(collection)商业交易记录，过后进行分类(classification)，如：成
本(costing)或开支(expenses)等，最后，再综合(integrate)所有资金活
动的资料来制备财务及帐务报告。
而在管理会计(management accounting)里，学生将会学习到研究成
本，如：成本分类的方法 (cost allocation methods) 以帮助决策
(decision making)帮公司带来盈利。
此外，学生也将会接触到商业法律(commercial law)、查帐(audit)、内
部审计与操作等；与税务(taxation)处理，减少纳税人的费用(relief
and rebate)等知识。通过此科系，学生不仅学习有关会计管理上的知
识，也被灌输关于商业道德(business ethics & corporate governance)、

讨。
学生将学习食品品质管理(Food Quality Management)，以进行食品

抽样检验；食品管理(Food Management)以确保食品安全食用和拥
有卫生的处理方式；食品服务(Food Service)则学习餐馆管理等知
识；而食品行销(Food Marketing)可学习如何保持客户之间的良好
关系。
此外，学生也将学习如何预防和治疗某些营养缺乏与营养不良症
状，以及学习如何应用有关食物营养的知识以及考量周遭的因
素，如：环境、顾客群的口味等等于设计菜单。此科系也会探讨
饮食习惯对健康的影响，以及正确饮食习惯的重要性。
不仅于此，第二年生须接触厨房用具，学习烹饪一些简单的食
谱，如：主食、蛋糕及甜品等。他们将在第五个学期经营一些食
品销售，从准备食材、设计菜单、烹煮食物、服务顾客到管理资
金的流动性，都是由该科系的学生们一手包办。通过此活动，他
们能够学以致用，并更了解到团队合作的重要性。

(analyst)，最后再做成数据(data)呈现出来。
通过此科系，学生不仅会学习有关海洋上的知识，也会被灌输关
于各种研究器材的用法，及具备研究员所需的技能等以迎合市场

学习内容水产养殖学主要是一门更深入研究及了解水生系统及水里生物的
构造以及习性等。学生需学习各种渔业科学与技术方面的基本理
论以及知识。
通过此科系，学生不仅会学习如何将水产商业化，如：水产养殖
经济学(Aquaculture Economics)，也将学习如何提高水产的品质
研究。学生将会学习有关各种水产养殖的科学知识，如：水的
pH 值，鱼的饲料，水的咸度(Water Salinity)和水生环境保护条例
(Aquatic Environmental Protection Regulations)等等。学生也会接
触一些渔业与水产业的管理知识、水产品的加工、销售等课题。
此外，学生也会多方面的学习到养殖生态(Breeding Ecology)与管
理水产养殖场。学生会通过实验(lab)来更加了解鱼类的内部构造
等等。不止如此，学生也将会通过校外教学(field trip)来抽取水样
品之类的以便进行研究水质的工作。养殖场水质管理 (water
quality management for aquaculture)是必修科目之一，用以研究水
质与鱼类之间的关系以及如何平衡它们。

学习内容航海科学与海运主要学习有关航海技术、国际海洋沟通、国际航海
规则。
学生将会学习导航技术(navigation)，控制及管理船只。此外，学生
也学习如何使用天体及地面标记导航并利用六分仪(sextant)来计算
船只的地理位置以及学习制作海图(chart work)以计算出航海的路
线、海流深度、海域交通和危险地带等等。学生也学习如何控制与
保养船只，也就是航海技术 (seamanship) 。海上通讯 (maritime
communication)也是此科必修科。学生将学会海事与航海的国际通
用策略性通讯，如：船只对飞机、飞机对船、岸对船或船队岸的联
络方式用以沟通或求救。
学生也极力推荐参加海军制服团体(PALAPES-laut)以训练纪律、体
能和提高本身的市场价值。

以平衡人类发展对环境所带来的影响之科系。
此科系是环境科学与环境工程的结合，所涉及的范围非常广泛。因
此，这科系的学生必须学习各种环境管理及自然科学的知识，以便
深入探讨及解决人类快速发展对环境造成的破坏问题，例如水和空
气污染、工业废料的排放、垃圾处理、天然资源短缺等。
此科系的课程内容包括了环境卫生、环境生物学 (environmental
biology)学习生态系统结构与功能等知识、水文学(hydrology and
water resources)学习水域管理等，防止洪水、饮用水处理、气象
学、空气和噪音污染、水质学、环境管理体系、城市废物管理、环
境影响评估、再生能源科技等等。
除此之外，此科也需修读政府拟定的相关法律。学生也会学习到关
于工业的运作等知识以及如何运用当今现有的科技来控制或解决环
