For the recipes that you are handed, carefully look through the ingredients. Pick out quantities or
types and modify the recipe according to the following needs;
(A) Low fat diet, low in saturated fat and higher in polyunsaturated and monounsaturated
fats.
(B) Higher fibre diet with the aim of reducing cholesterol levels.
Remember the aim is to keep the same texture, flavour, smell and appearance of the food and
leaving ingredients out without substitution may affect the final product. In baked goods
ingredients like eggs, baking soda and milk are needed for chemical reactions to help the food
rise/cook properly and hence removing them will most likely result in a failed food.
