Who are you going to plan the training for (the learners)? What are their characteristics?
SBC’s bariatric patients who need to lose weight, pre- and post-surgery, as prescribed by a doctor. The patients
are morbidly obese with many comorbidity diseases. Many do not have any prior knowledge of the ketogenic diet,
how to incorporate the diet into their life, or where they can obtain additional information and resources to help
them to maintain compliance with the diet and ultimately lose weight. The patients’ families and friends also wish
to gain knowledge and understanding of the ketogenic diet in order to provide support to the patients as they
undergo this life transformation.

What will the learners learn?


Learners will start by learning the cause of insulin production and how the body uses glucose as the main source
of energy when eating high amounts of carbohydrates and processed foods. They will learn about the benefits of
ketones being produced in the body and the effects of allowing your body to go into ketosis. Finally, learners will
learn the different types of food and their effects on the production of glycogen, insulin, and ketones.

When will the training be delivered? Where will the training be implemented?
The training will be delivered at the 21st Annual Southwest Bariatric Clinic Health and Wellness Fair. The
instructor led sessions will be held in a conference space at a large convention center.

Why is your training the solution?


SBC is recommending their patients follow the ketogenic diet. These patients do not have any prior knowledge of
this diet plan or an understanding of the body’s process to burn fat. This training will provide the knowledge
needed to understand and implement the ketogenic diet in a fun, interactive, easy-to-understand format.

What is the current state and the desired state? What are the benefits of your training solution?
Current State:
SBC’s bariatric patients, their families, and friends currently have no knowledge of the ketogenic diet and its
benefits, how to incorporate the diet into their life, or where they can obtain additional information and resources
to help them to maintain compliance with the diet.

Desired State:
SBC’s bariatric patients, their families, and friends would have a full understanding of the ketogenic diet, its
benefits, how to incorporate the diet into their life, and where they can obtain additional information and resources
to help them to maintain compliance with the diet.

Benefits of Training Solution:


This short, thirty-minute training session delivers high-level information in an easily digestible manner. The
training includes entertaining videos, fun interactive games, and engaging knowledge checks all with the goal of
maximum retention of information. By the end of the training session, learners will have a thorough understanding
of the ketogenic diet, its benefits, how to incorporate the diet into their life, and how to obtain additional
information and resources to help them maintain compliance with the diet.

How will your training plan best be delivered?


This will be an instructor led training. The training will include video presentations and audience activities for
maximum audience engagement and to facilitate maximum retention of information.

Performance Analysis
SBC has found that many of its patients require losing a significant amount of weight prior to being eligible to
safely undergo bariatric surgery. SBC has also found that many of its patients have not been losing a consistent
amount of weight post-surgery. SBC has received feedback about the lack of education patients receives about
diet and nutrition both pre- and post-surgery. SBC would like its patients to follow the ketogenic diet but are
unsure how to quickly disseminate the information about this eating plan. SBC will be holding their annual Health
& Wellness Fair and would like a means of providing attendees with information on the ketogenic diet.

Current State:
SBC’s bariatric patients, their families, and friends currently have no knowledge of the ketogenic diet and its
benefits, how to incorporate the diet into their life, or where they can obtain additional information and resources
to help them to maintain compliance with the diet.

Desired State:
SBC’s bariatric patients, their families, and friends would have a full understanding of the ketogenic diet, its
benefits, how to incorporate the diet into their life, and where they can obtain additional information and resources
to help them to maintain compliance with the diet.

The Problem:
SBC’s bariatric patients need to lose, pre- and post-surgery, as prescribed by a doctor. The patients are morbidly
obese with many comorbidity diseases. Many do not have any prior knowledge of the ketogenic diet, how to
incorporate the diet into their life, or where they can obtain additional information and resources to help them to
maintain compliance with the diet and ultimately lose weight. The patients’ families and friends also wish to gain
knowledge and understanding of the ketogenic diet in order to provide support to the patients as they undergo this
life transformation.

Recommendation:
We recommend a 30-minute training session that offers learners high level, easily retainable information to
include what happens when the body goes into ketosis, foods that cause ketosis, foods that can take the body out
of ketosis, meal planning, and tips to be successful on the diet.

Learner Analysis

Primary audience: Attendees of the SBC Health & Wellness Fair: SBC patients, families, and friends.

 Age: 18+
 Gender: Male, Female
 Patients who are required to lose weight pre- and post-bariatric surgery
 Family and friends who are interested in supporting the patients in their weight
loss journey

Audience specifics:
We are expecting approximately 30-50 learners in each session which will be held in a conference space at a
large convention center. At the completion of the training, nutrition experts will be available outside of the
conference space to answer questions and offer more information about the diet and how to gain one-on-one
consultation prior to the start of the diet.

Learning application setting:


The learners will transfer the information from training into their individual lifestyles. The information will be used
in their day-to-day life at home, work, and all other social settings.

Scope: Training Session Focus


Needs Assessment:
SBC has found that many of its patients have not been losing an adequate amount of weight pre- and post-
surgery and has received feedback about the lack of education a patient receives about diet. In response, we are
developing a 30-minute information session to be delivered at quarterly SBC Health & Wellness Fairs regarding
the ketogenic diet so that patients are knowledgeable of and can begin to follow the ketogenic diet to lose weight.

Training Recommendations:
We recommend a training that offers learners high level information to include what happens when the body goes
into ketosis, foods that cause ketosis, foods that can take the body out of ketosis, and tips to be successful on the
diet.

Training Goals:
Upon completion of this training program learners will understand the following:
 The benefits of the ketogenic diet

 How to follow the ketogenic diet


 How to identify the macronutrients: carbohydrates, fats, and proteins in foods
 Which foods to incorporate into the diet

 Which foods to eliminate from the diet

Audience:
SBC patients, male and female, age 18+, who seek to lose weight pre- and post-bariatric surgery. Also, family
members of SBC patients seeking to offer support. Each session would have approximately 30-50 people
attending.

Delivery
Content Description:
The Ketogenic Diet Information Session will offer attendees of the SBC Health & Wellness Fair education about
how the body produces ketones, how the state of ketosis can help with weight loss, and information about the
Ketogenic Diet that promotes the production of ketones that leads to fat loss.

Method/Platform:
The information session will be facilitated by registered dietician, Cinnamon Fine, and by registered nurse, Flo
Nightingale. The facilitators will help guide the audience by using PowerPoint slides, videos, activities, and a
knowledge check at the end.

My name is __________________. Today, I will guide you


through the foundations of the Ketogenic Diet, it’s benefits, and
how to follow the diet.

Before we begin, I want to remind you that everyone is different
and this diet may not be the best diet for you. Be sure to consult
your physician first before starting any diet plan.

Slide 4 – What is Ketosis?

If you’ve heard about it before, then you may know that it is an


incredible fat loss option. The ketogenic diet is a fat burning diet
and we will get into the details of the diet in a few minutes.

But first, I want to teach you a little bit about the metabolic
process called Ketosis; which is what the Ketogenic Diet is based
off.

Normally, the body uses glucose that has been stored in the
body’s cells as its primary form of energy.

Typically, glucose comes from dietary carbohydrates like sugar


and starchy foods. This includes carrots, potatoes, corn, fruits, milk,
yogurt. Grains like cereal, bread, and pasta.

When the body does not have enough glucose to meet energy
demands, the body will begin to burn fat instead.

Acids build up within the body because of this process. Those acids
are called Ketones. Their purpose is to tell the body to start
breaking down fat.

Now that you’ve seen how the process works in the body, let’s talk
about how you can get your body into a state of ketosis.

FOODS THAT KEEP THE BODY IN KETOSIS


Slide 6 – Foods that Keep the Body in Ketosis: Protein
Remember that the focus should be on making the body use fat for
energy. That’s why it’s critical that you don’t eat foods that the
body will use for energy instead of fat.

Protein is essential to help the body in repairing tissue, improve


the function of the immune system, preserving lean muscle,
encourage growth, and in producing needed hormones and
enzymes.

To do this, your diet will focus primarily on eating fatty sources of


protein.

Keep this in your mind. “Fat-Burns-Fat.”

You will eat a lot of meat like fish, beef, lamb, poultry, and eggs.

Slide 7 – Foods that Keep the Body in Ketosis: Healthy Fats

You will eat high fat dairy products like butter, high fat cream,
and hard cheeses.

You can eat nuts and seeds, but not in excess as nuts contain
carbohydrates.

Slide 8 – Foods that Keep the Body in Ketosis: Carbs

Eliminate foods that contain carbs and sugars that produce glucose
in your body like grains, sugars (sweeteners included), alcohol,
beans, breads, and candy.

You can have leafy greens and non-starchy veggies so you can
get a low-carb source of fiber and other nutrients.

Slide 9 – Basic Rules of Keto

The great thing about this diet is that you don’t have to cut carbs
completely as long as you keep it under 20 grams of carbs per
day.

Remember that the sources of your fat should primarily come from
protein found in meats.

We recommend that you eat only when you’re hungry. When you
start feeling full stop eating. This will also help you get into the
habit of being aware of your fullness which will be a major help
after your surgery.

ACTIVITY
Slide 10: Activity: Eat These Not Those
It’s time to play an activity. Can I have two volunteers?

In this activity, you will have the opportunity to practice identifying


which foods you SHOULD eat and which foods you should
ELIMINATE.

Activity Instructions:

1. Each player will use a poster which has a section for “Eat
These” and a section for “Not Those.”
2. Both players will be given a stack of cards with images of
foods that ketogenic dieters should eat or eliminate in
their diet.
3. Players will be given 60 seconds to place the image in
the “Eat These” or “Not Those” part of the poster.
4. The player with the most correct cards wins an SBC Heath
& Wellness sports bottle.

At the end of the 60 seconds review the number of correct cards


placed under each section for each player. Tally them up and
announce the winner.

If both players win, provide them both with an SBC Health &
Wellness sports bottle.

BASIC MEAL PLANNING

Slide 11: Basic Meal Planning

Remember, in the ketogenic diet to choose a fatty source of


protein.

You can enhance your meal with delicious and satiating fat.

You don’t have to eliminate all of your carbs, just stick to below
20g of carbs a day. But when selecting, choose leafy greens and
non-starchy veggies.

Slide 12: Ingredients on Nutrition Labels

To be successful on this diet you will need to make it a habit to


check not only the nutrition label to keep track of your daily carb
intake, but also the ingredients on the back of packaged foods.

Let’s look at an example.

Slide 13: Dry Cured Maple Bacon

Here we see a package for Dry Cured Maple Bacon. As you can
see the total fat is 7g and total carbs is 0g. At first, we may think
that this is a perfect product. Now let’s take a look at the
ingredients.

As you can see this product is full of brown sugar, maple, sugar,
and white sugar. Don’t buy this product, instead look for bacon
that doesn’t have added sugar.

Here’s another example, this time packaged cheese. As you can


see in the ingredients it’s loaded with corn syrup and corn syrup is
sugar. Instead buy sliced whole or real cheese.

Slide 15: Ingredient Names of Sugars

There are over 60 names for sugar that can be used in a food
ingredient list label. Here are some examples.

You also need to be mindful of peanut butter, processed cheese


slices, salad dressings, ketchup, and canned vegetables. We must
be vigilant to read ingredient labels in an effort to avoid too much
sugar sneaking in.
This list is available on the handout we provided when you came
in.

We’re now going to watch a quick video about meal planning.

You have now seen how ketosis works in your body, the foods to
eliminate in your diet and foods to introduce.

You have also learned about the importance of reviewing the


nutrition label, and especially the ingredients label.
Let’s take a look at some ways you can stay on track with the keto
diet and also have a social life.

INCORPORATING THE KETOGENIC DIET INTO YOUR LIFESTYLE

Slide 17: Tips to Stay on Track

Read bullets on the slide. Try to memorize some of these as to


ensure eye contact with the audience.

 DRAFT: Think about what you eat and draft your own Keto
meal plan.
 CHECK: Check to make sure you are including fatty sources
of protein in each meal and are limiting carbs to 20g or less
per day.
 RESEARCH: Research other ketogenic information sources for
tips and ideas such as websites, YouTube videos, and books.
