 Pektinase adalah kelompok enzim yang mendegradasi substansi yang mengandung
pektin menjadi fraksi yang lebih kecil sehingga mengakibatkan pengurangan viskositas,
mengurangi pembentukan gel dan meningkatkan konsentrasi jus (Screenath et al.,
1987).
 Pektinase terdapat secara alami pada organisme dan telah banyak diisolasi dari fungi
seperti Aspergillus indicus, A. flavus, A. niveus (Angayarkanni et al. 2002), dan juga dari
bakteri seperti Erwinia carotovora, E. crysanthemi (Sittidilokratna et al. 2007), Bacillus
sphaericus (Jayani et al., 2010)

 Pectinases are able to hydrolyse the glycosidic linkages of polygalacturnic acid into
galacturonic acid monomers, which should allow them to be used to remove the
polygalacturonic acid backbone and with it the rest of the pectic substance and other
components of the primary wall. Pioneering work by Hardin and co-workers' on the
cotton wall structure and use of pectinase in the bioscouring of cotton has confirmed that
