These are the bread making process in gardenia:

Step 1: SPONGE MIXING

Sponge mixing is the initial process of breadmaking wherein 50% of the ingredients are
mixed to form the base dough, known as the sponge
Step 2: FERMENTATION
Fermentation is an important process that greatly affects the aroma, flavor and texture
of the bread produced. The sponge is fermentated for several hours in a cold room to allow
expansion of the whole mass of sponge.
Step 3:DOUGH MIXING
The fermented sponge is mixed together with the remaining half of flour and other
ingredients, to form the dough.
Step 4:MAKE-UP LINE
The make-up line is composed of four major computer-controlled operations, namely
dividing, rounding, intermediate proofing and moulding.
Step 5:FINAL PROOFING
Baking pans containing moulded dough are conveyed into a temperature-and-himidity-
controlled room, allowing the dough to rise inside the pan.
Step 6 : BAKING
After the dough, baking pans are covered with lids and baked inside a tunnel oven.
Step 7:DEPANNING
From the tunnel oven, lids are removed using a magnetic conveyor while suctions are
used to lift the baked breads from the hot pans into the transfer conveyor.
Step 8: COOLING
Lifted from the pans, baked breads are transferred to the conveyor to lower its
temperature into the required level prior to slicing and bagging.
Step 9: PACKAGING
Once breads are sliced by the band slicers, the breads are packed in a high speed
automatic bagger.
Step 10: DISPATCH
Straight from the production floor, the breads in the trays are processed for loading
onto trucks for delivery to retail outlets in Cebu, Bohol and as well the Northern part of
Mindanao.
