In a pan, add oil, saunf, 6 red chillies, 2tsp fried gram, half tsp poppy seeds, 4
small onions, 5 Bangalore tomatoes or 3 natty tomatoes, 3tsp grated coconut n salt.
Green chutney:
Grind a handful of coriander , a handful of mint, 1 bit ginger, 1 green chilly n
salt with little water... transfer to a bowl n add 3 tsp if lemon juice to it.
In a pan add oil, jeera, curry leaves, 1 finely chopped onion, salt n smashed
potatoes. Fry for a minute...

Onions( either big or small)
Tomato or tamarind extract
Turmeric powder n salt
Ridge gourd (peeled n cut)
Keep for 2 or 3 whistles
Once d pressure goes away smash it well n serve it with idly or dosa or idiyappam.
Even wit rice it goes well

Veg clear soup
Blanch broccoli like cauliflower...
Add 2 tsp of corn flour to a glass of water...
In a pan add little oil, stir fry 10 minced garlic, 1 cut green chilly, 1 chopped
carrot, few cut cabbage leaves for 2 minutes n add salt... add water to it when
it comes to boil. Then add blanched broccoli.
Now add corn flour mix to it n allow it to boil for 2 -3 minutes.
Finally garnish with coriander leaves n pepper powder...

Cook green peas in boiled water.
In a pan add oil, a bit of ginger, 10 garlic pods, half green chilly, 2 big onions,
3 tomatoes, salt, turmeric pwdr, chilly powder n coriander powder. Roast these
items well. Allow it to cool. Make a fine paste of it in a mixer.
In a pan add oil, 1 tsp of jeera, boiled green peas n ground paste with little
water. Allow it to boil till the raw smell goes off...
Goes well with Chappati n veg pulav

teaspoon,cashew 4 to 5, grind well keep aside.then take a pan pour oil then add
mustard seeds curry leaves fry well then add black channa 1/2 teaspoon turmeric
powder, chilli powder,sambar powder then mix it well then add that paste mix well
for 5 mins then add little tamarind water mix well then pressure cook for 7 to 8
whistle. Thats all

Take ample amount of water in a wide vessel n allow it to boil vry nicely...when it
had boiled add required salt n one or two teaspoon of oil in f water n add d
macoroni..n it ll gt cooked in 7-10mins....but kp stirring occasionally oderwise it
ll bcum clusters.....then strain d water n cool d macoroni wit running water so dat
the heat is let out. ..
Kp it aside..n cut lots of onion tomatoes ginger garlic paste or ginger n garlic
chopped as per ur wish. Then saute all dis..but frst make tadka out of mustard
seeds uriddal n a pinch of saunf...then add veg to b sautéed. ..then put ur usual
masalas...turmeric chilli powder salt sambar powder acc.to ur taste or else if u
hav kolambu powder u can put dat also..I hav home made kolambu masala so I put
dat..lots of oil is needed tp b sauteed...so dat wen u mix d macoroni it doesnt gt
stuck up wit d vessel...anyways let it b a nonstick kadai. Aftr d masalas blend add
d cooled macaroni in it n mix it well till all d masalas is into it n switch off d
gas... u can garnish it wit coriander leaves... don't add dhaniya powder to d
masalas..it wont taste gud.. let d onions not b chopped very finely..so dat it
gives a crunchy tastw

In a cooker add 3 tsp of oil, saunf, fenugreek, curry leaves, 1 bit of crushed

off. Then add 1/2 kg chicken, 4 tsp of kuzhambhu powder, 2 tsp of coriander powder,

Pressure cook 1/4 kg Seppangilangu for a whistle. Peel the skin and slice it.
In a bowl mix sliced Seppangilangu with 1 tsp salt, 1/4 tsp turmeric powder, 2
tsp chilly powder and 1 tsp rice powder(pacharisi Maavu).
In a pan add 6 tsp of oil, mustard, urad dhal, crushed garlic, curry leaves and the
Seppangilangu mix. Fry it for 10 mins. No need of adding water.
It goes with curd rasam n Sambhar rice.
It tastes like dry fish varuval...

Steam them with salt for one or two whistles then grind carrot peas coriander
leaves. Now removes the onions, garlic n green chillies. In the steamed water add
the grinded paste wit required salt n pepper.

water boils, add 1 cup of rice to it... close d pan.. put on weight once it
steams... keep in simmer for 7 minutes...

In a mixing bowl, mix sliced n deseeded bitter gourd, salt, turmeric powder, chilly

Deep fry it in a pan of oil.
In a pan add oil, jeera, urad dhal, curry leaves, mushroom, salt, turmeric powder,
ground paste, little water to it. Allow it to boil till oil separates out...
Garnish with coriander leaves...
It goes well with Chappati idly n dosa

mint 1bowl,green chillies 3 to 4 cashew few,giner n garlic grind these all n add

Muttai udaithu ootria kuzhambhu..../broken egg gravy
Grind 4 tsp grated coconut, 1 tsp fried gram, 1/2 tsp kasa kasa, 2 cashews, 1 tsp
saunf, 5 red chilly, 1 tomato, 1/2 tsp Sambhar powder in a mixie...
In a pan add oil, clove, cinnamon, bay leaf, saunf, curry leaves, 1 chopped onion,
1 chopped tomato, salt, turmeric powder, ground paste, water....
When the gravy boils, simmer the stove, broke and pour the eggs one by one so that
they don't mix together. Close d pan n allow it to get cooked for 10 minutes...
test the egg with a fork... once cooked switch it off.
Peel the skin and cut the raw banana cross wise. Boil water along with turmeric
powder and salt. Put the raw banana into the boiled water and close it with a lid.
Switch off d stove.. strain d water completely after 10 mins.
Now in a bowl mix this fried raw banana along with salt n chilly powder.
In the remaining oil add saunf, mustard, urad dhal, curry leaves, crushed garlic,
chilly powder coated rawbanana. Fry it well...
Grind 4 tsp grated coconut, 1 tsp kasakasa, 1 piece of ginger, 1 tsp of fried gram
with little water and keep it aside.
Now in a pan add oil, cloves, cinnamon ,bayleaf , ground paste 1 n 2 and cooked
mutton.... boil well... garnish with coriander....
In a pan add oil, curry leaves, (cooked mutton along with salt, turmeric powder,
chilly powder), 2 tsp of ground pepper..
In a pan roast 1/2 cup of rava in 1 tablespoon of oil simultaneously ... when rava
turns golden brown add boiling water into it... allow It to get cooked for 5 to 10
minutes...
Switch off d stove an d add 1 cup of sugar to the cooked rava without lumps...
Place d pan on the stove and add( Kesari colour dissolved in water) , cook for 10
minutes...
Add roasted cashew n raisins in ghee to it...

Kodhumai ravai payasam
In a pan roast ground wheat rava in 2 tsp of ghee. Add 4 glasses of boiled milk
when the wheat rava turns golden brown... allow it to get cooked for 10 mins... add
1/2 cup of sugar to it... allow it to boil for 5 mins...
peel the skin, cut 2 carrots and pressure cook for 4 whistles with little water...
grind it into a fine paste once it gets cooled...
now in a sauce pan boil 3 cups of milk along with 1/2 cup of sugar... add this
carrot paste and allow it to boil till the raw smell goes off... add cardamom
powder ,ghee roasted cashews n raisins to it...
In a pan add oil, 2 tsp pepper, 2 tsp jeera, 1/2 tsp saunf, 6 red chillies, 5 small
onions, 1 finely chopped tomato.. roast well, cool n grind it into a fine paste.
Clean 3/4kg of chicken and marinate with curd, turmeric powder n red chilly powder
for half an hour... pressure cook this for 3 whistles...
In a pan add oil, saunf, cinnamon, curry leaves, 1 chopped big onion, 1 chopped
tomato, ggp, salt, ground paste, 2 tsp of coriander powder.. cook until raw smell
goes off..
Now add this cooked chicken along with the water... allow it to boil for 10 mins...
Grind 2 small onions, 1 tomato, 1 tsp jeera, 1 tsp saunf, 2 tsp coconut to a fine
paste.
In a pan add oil, saunf, fenugreek, curry leaves, 7 small onions, 15 garlic pods, 1
tomato, tamarind pulp, 2tsp Sambhar powder, 2 tsp coriander powder, salt... add
water and allow it to boil till oil separates

In a pan add oil, mustard, urad dhal, Channa dhal, curry leaves, 1 green chilly, 1
chopped big onion, ginger garlic paste, 1 chopped tomato, 1/2 tsp Sambhar powder,
salt, little water... fry well till raw smell goes off... add bread cubes to it and
fry for a minute...
Preparing Sambhar:
In a pan add oil, mustard, fenugreek, curry leaves, carrot, drumstick, chow chow,
radish, beans, salt, 1 tsp of Sambhar powder n tamarind extract... add cooked dal n
water and allow it to boil...
Dry roast 3 tsp dry coriander, 5 red chillies, 1 tsp asafoetida, 2 tsp urad dal, 2
tsp Bengal gram, 1 tsp methi n salt. Grind coarsely...
Pressure cook 1/2 cup of rice with 2 cups of water. Once pressure is released add 4
tsp of gingelly oil to the cooked rice and smash well when it's hot... now add
prepared Sambhar generously to the cooked rice...
Bisibellabath ready...
Note.. prepare Sambhar first and smash the rice when it's hot and mix the Sambhar
immediately after smashing... otherwise u will get lumps... rice qty should be
lesser than Sambhar

Paneer tikka
Cut 1 big onion, 1 tomato, 1 green capsicum and paneer into cubes...
In a bowl add these cubes, 1 tsp chilly powder, 1 tsp garam masala, half tsp
turmeric powder, 1 tsp pepper powder , 1 tsp jeera powder, ginger garlic paste, 4
tsp of curd and mix well... marinate for an hour...
Arrange these cubes in a toothpick..
In a tawa... apply butter or oil and place these tikkas... turn them to get cooked
on all sides...
Serve hot...�

In a pan fry red chillies, jeera, peppercorns, garlic and grind them.
In cooker add oil , mustard, urud dal, perungayam, curry leaves, onion, tomato,
turmeric powder, salt once it gets mashy add rice n toor dal. For one cup rice u
can add 1/2 cup dal or even lesser. Pour a little more water than the usual. Now
add the grinded powder n cook for 3 whistles. Finally garnish it with coriander.

Mix all the below ingredients:
2 boiled potato.
1 cup of course grounded corn which has been boiled.
1 tspoon pepper powder.
1/2 tspoon gram masala.
2 tspoon a of cornflour.
2-3 tspoon of bread crumbs.
1/4 tspoon ginger garlic paste.
2 chillies finely grounded.
2 tspoon of lime juice.
1 cup of grated cheese.
Finely chopped coriander.
And add salt to taste.
You can add oregano for taste.
Make small round shape patties. Dip the patties in rava so that it acts like a
covering.
Grind these dals along with 6 red chillies and 1 tsp of saunf coarsely....
In a thick bottomed pan add 1 Tbsp of oil, saunf, urad dhal, curry leaves, 1
chopped onion, 1 cup of finely chopped vazhaipoo, salt, turmeric powder... fry for
2 minutes... then add ground dal mixture... add oil to the sides of the mixture if
required.. cook it for 20 minutes covering with a lid... stir occasionally
simmering the flame... once done switch off d stove n allow it to cool... mince the
kola with laddle to make it separate...
Note: always keep d flame low... else it will be burnt... add oil inbetween to get
d correct texture...

Cinnamon tea cake
65g cooking butter unsalted,
half cup sugar,
1 egg ,
1 cup plain flour,
little baking soda,
little ground cinnamon,
1/3 milk
In a bowl mix butter ,sugar, egg and beat well. First add little milk and flour to
the mixture and stir we'll without any lumps and add the remaining flour n milk
with the bakin soda n mix well. Finally add the ground cinnamon. Take a round bowl
coat them with butter and pour the mixture in it. If its a conventional oven
preheat it to 180 degree and bake the cake for 20 - 25 mins. Or u can try making it
with cooker (steaming).

completely in water... filter it for impurities... add this syrup to the boiling
milk... keep the stove in low flame and allow it to boil till the milk thickens
into kova texture..

Once the pressure gets released, smash it well adding salt and coconut milk to

Meen kuzhambu or fish curry
In a pan add gingelly oil, mustard, fenugreek, curry leaves, 2 green chillies, 15

powder, half Tablespoon of chilly powder, 1 amla sized tamarind extract, water...
Allow it to boil for 20 minutes. Add fish pieces to it... Allow it to boil for 10
more minutes...
Boil 1 cup of soya chunks in water with 2 tsp milk.. Drain it, wash it with running
cold water n squeeze it..
Grind half tsp jeera, half tsp saunf, 1 tsp pepper, 2 red chillies, a bit of
ginger, 5 garlic pods, 4 small onions and 1 tomato.
In a pan add oil, mustard, urad dhal, curry leaves, garlic, chopped onion, chopped
tomato, 1/2 cup green peas, salt, turmeric powder, ground paste, soya chunks and
water... Boil it until it becomes dry...

In a pan add oil, asafeotida, mustard, urad dhal, curry leaves, small onions, 1
chopped tomato, 1 cup of chopped spring onions, salt, turmeric powder, 1/2 tsp
sambhar powder, 1/4 tsp chilly powder, 2 tsp of Tamarind extract. Allow it to get
cooked. Then add cooked dhal and keep in simmer for 5 mins...
Pressure cook 4 potatoes for 2 whistles. Peel the skin and slice into cubes.
In a pan add oil, 2 tsp of jeera, curry leaves, 1 chopped green chilly, 15 chopped
garlic, 1 chopped onion, salt, turmeric powder, 1 tsp chilly powder, 1/2 tsp
coriander powder...
Add little water to get cooked. Then add boiled potatoes and stir fry for 2 to 3
minutes to get the masala coated on the potatoes...

or grated raw mango, salt, turmeric powder, 1/4 cup of crushed jaggery.. Add little
water for the jaggery to get dissolved... Once the jaggery thickens add the cooked
dal to it...
Pressure cook 1 cup of 2 whistles... Smash it well add 3 glasses of water... Drain
the cooked dal water alone...
U could use d dal for some other dish...
In a pressure cooker add oil, saunf, curry leaves, 1 slit green chilly, 1 chopped
onion, 1 chopped tomato, salt, turmeric powder, 1 tsp of dhaniya powder, mutton
bones... Saute for 5 minutes... Then add the drained dal water to it...
.Serve hot...

Vendakkai mor kuzhambu
Soak 1 tsp of jeera, 1 tsp of toor dal, 1 tsp of raw rice, 3 peppercorns, 2 tsp of
coriander seeds in a cup of water for half an hour... Grind these along with 1
green chilly and 5 tsp of grated coconut into a paste...
In a pan add oil, asafeotida, mustard, curry leaves, 1 split red chilly, 2 cups of
butter milk, salt, turmeric powder, ground paste... Add cooked lady's finger to
it... Allow it to boil for 5 mins...
Cut cauliflower into tiny florets... Blanch 1/4 cup of cauliflower and 1/4 cup of
green peas in warm water for 10 minutes...
Now in a bowl add these cauliflower , peas, 1/4 cup of finely chopped carrot, 15
finely chopped garlic, salt, chilly powder, juice of 1 lemon... Mix well n keep it
in sunlight for a day if possible... Or else keep it in fridge...
Next day saute asafeotida n mustard in gingelly oil and add to this pickle... Mix
well n keep it in sunlight for a day..
In a bowl add raosted rava, sauted items, finely chopped coriander leaves, 1
finely chopped carrot, salt, 2 cups of curd... Mix well and keep it aside for an
hour..
After an hour, add 1/4 tsp of baking soda and little water to make a batter...
Grease idli plates with oil, pour these batter into it and steam it for 10
minutes...
Blanch 1 cup of cauliflower florets in warm water for 10 minutes with salt.
In a bowl add
4 tsp of corn flour
3 tsp of maida
1 tsp of rice flour
1 tsp of ginger garlic paste
1 tsp of salt
3 tsp of chilly powder
1 tsp of garam masala powder
2 tsp of lemon juice
1/4 tsp of turmeric powder

1/4 piece of nutmeg

U could add 2 pinch of this masala powder while 2 cups of tea gets boiled...

In water add jeera, bay leaf, cinnamon, cloves, cardamom, star anise and basmati
rice with salt n oil. Once the rice is 90% cooked drain it.
Briyani masala:

Bayleaf,cardamom,cinnamon,clove, staranise
Sum fried onion

Chicken
Red chilli powder
Coriander powder
Dried prunes or kismis
Mint n coriander leaves

Once all starts boiling n there is enough gravy then switch off the flame.
Dum process:
In a heavy bottem pan sprinkle some water n lil jeera n lay some cooked rice then
sum gravy then sum rice then gravy then rice. Sum turmeric powder or red colour for
food colouring. N close the pan n leave for 15 mins . yumm dum briyani ready

make it crisp n golden brown by heating it both the sides on a tawa fr a long tym.
Now d pizza base s rdy..
Boil corn, peas n potatoes n smash it...make it lyk a paste n apply either tomato
ketchup or a layer of processed cheese on top of d base.....then spread the filling
on it n shred the cheese generously again n sprinkle some chilly flakes n bread
crumbs....if u want u can saute crunches of onion n capsicum n add to the topping.
Appam
Soak 1.5 cup of idli rice, 1 cup of raw rice, 1/4 cup of urad dhal, 10 fenugreek
for 2 hours... Grind it to idli batter consistency... U could add 1 cup of cooked
rice to it while grinding(optional)
Allow it to ferment for 6 hours
Add little salt, 2 tsp of sugar and 1/4 tsp of baking soda or Eno plain to it...
Mix well with little water to dosa consistency...
Pour it in appam pan and swirl it around... Cover it with lid... Cook only one
side...
Soft spongy appam ready

In a pan roast 2 red chillies, 2 tsp of coriander seeds, 2 cloves, 2 cardamom, 1/4
cinnamon stick, 1 tsp of fennel seeds and 1/4 cup of grated coconut in 2 tsp of
oil...
Soak 1 cup of black channa overnight and pressure cook for 3 whistles...
Grind the roasted items along with 1/2 cup of cooked channa into fine paste...
In a pan add oil, mustard, curry leaves, chopped garlic, chopped onion, chopped
tomato, salt, turmeric powder, chilly powder, coriander powder, ground paste and
water... Bring to boil...
Toast one side of bread and on the other side apply mayonnaise sauce or butter...
Grate cheese on top of it... Spread some finely finely chopped garlic...
Place this on tawa and cook for 2 minutes covering with lid...
Then garnish with herbs and coriander...
Cut breads into triangular pieces. apply honey on one side... Top one slice with
finely chopped nuts like post almonds and cashew... Next with finely cut raisins
and dates... Cover it with another bread slice...
Pin them together with toothpick garnished with mint and cherries...

Cut 2 medium sized potatoes... In a bowl add cut potatoes, 2 tsp of corn
flour/maid, salt... Sprinkle water on it and mix well...
In a pressure cooker add oil, cinnamon, saunf, 1 chopped onion, 1/2 chopped tomato,
1 cup of peas, 2 chopped potatoes(cubic shape), salt, ground paste and water.
Pressure cook for 2 whistles...

Pressure cook a potato for one whistle and cut into cubes...
Green chutney
Grind few coriander leaves, few mint leaves, salt, bit of ginger, bit of green
chilly, jeera into a paste...
Squeeze half lemon into it.
Sweet chutney
Add powdered jaggery and jeera powder to tamarind pulp.
In a bowl mix 1 cup of grated paneer, 2 tsp of finely chopped ginger, 1 finely
chopped onion, few finely chopped coriander leaves, 2 finely chopped green
chillies, pinch of turmeric powder, 1 tsp of red chilly powder, 1/2 tsp coriander
powder, 1 tsp cumin powder and 1/2 tsp garam masala.
Make 8 equal sized balls of atta dough... Roll a ball of dough, keep the paneer
stuffing at the center, cover the edges... Again roll using rolling pin sprinkling
atta flour...
In a pan dry roast 2 tsp of peanuts, 2 tsp of white sesame seeds, 1/4 cup of grated
coconut, ginger, garlic and 1 green chilly... Cool it and grind to a fine paste..
In a pan add oil and stir fry 1 cup of cut lady's finger... Keep it aside...
In the same pan add oil, curry leaves, 2 chopped onions, ground paste, salt, 3 tsp
of chilly powder, 1 tsp of coriander powder,1/4 tsp of turmeric powder, 1/4 cup of
tamarind juice... Bring it to boil... Add fried lady's finger... Cook for 5
minutes...
Soak 1 cup of raw rice, 3/4 cup of urad dhal for 2 hours...
Grind it to idly batter consistency adding little salt and little water.
Boil 3 Glasses of milk adding desired sugar and powdered cardamom... Allow it to
cool...
In a pan, add oil. Pour this batter into small balls... Fry till slight golden
brown...
Immerse fried paniyarams into water for a minute and then add it to prepared
milk...
For marination- raw banana cut into finger shapes, turmeric powder n salt
Cook palak leaves in boiling water for 2 minutes... Drain and keep it aside..
In a pan add oil, cumin, 2 green chilly, a piece of ginger, 10 garlic pods, 2
chopped onions, 1 chopped tomato... Stir fry for 3 minutes... Cool and grind it to
a fine paste..
In a pan add oil, jeera, ground paste,1/4 tsp turmeric powder, 1 tsp chilly powder,
1 tsp coriander powder... Allow it to boil for 10 minutes...
Add salt, paneer cubes, 1/2 tsp garam masala, 1/4 tsp chat masala... Cook for 2
minutes... Switch off..
Lemon poha:
Wash 2 cups of poha or parched rice or aval in water twice and drain the water
completely... Set it aside by pressing it gently.
Mix 1 and half lemon juice and 1/2 tsp lemon juice in a bowl..
In a pan add oil, urad dhal, curry leaves, channa dal, 1 slit green chilly, 2
chopped onions, salt... Cook for 2 minutes... Now add poha and cook for a minute..
Switch off the stove and add this lemon juice mixture and stir well.
Garnish with coriander leaves
