on October 5, 1968. Gayle’s
uncle Gil Braud cooked a
jambalaya in a 300 gallon sugar
kettle, which was the largest
jambalaya ever cooked at that
time, and by the end of the day
they had served every bit of it -
1200 plates! - which Gayle took
as a good sign.
SACS Feed and Western Store
managed to adapt its merchan-
dise over the years to the needs
and wishes of its customers; the
family-friendly atmosphere of
the store added to its success,
as did the large number of
people who have worked at the

I’m so happy it’s that time of

But are bugs bad for your

about all the cholesterol and fat
in crawfish, crawfish are actually
good for you.
First of all, crawfish are an
excellent source of protein, 14

In Like
a Lion
March comes in like a lion and
out like a lamb. Ever heard that
expression? Basically the
expression conveys that March
usually begins with cold, rainy
weather and ends with the
newness of spring.
I was having a conversation
with a friend recently, and we
discussed how this is symbolic
of the seasons within our
own lives.
So imagine - a tree physically
and visibly changes as seasons
pass: in the summer a tree is in
full bloom, completely green
and full of foliage, but then the
fall brings cooler weather and
the tree begins to change
colors, then ultimately and
inevitably in the blustery
coldness of winter, the tree loses
its foliage and lays bare. But
then…then…spring brings
forth grateful sunshine and
warm breezes, and the first few
leaves and blooms begin to
emerge. But just because the
tree seemed like it was not
producing during the cold,
dormant months, it was
still alive.
How true when we go through
difficult seasons in life. Just
when it seems like all is lost,
sunlight emerges, and we come
out stronger and full of life.
And if we choose so, the good
Lord uses those times to bless
others.
So, rejoice in the spring…the
Good Lord is about to use you
to be a symbolic light to those
around you!

immediately deleted, marked as
spam, or ignored altogether. As a
marketer, this is usually the first
thought that pops up as soon as
we go hit “send” on another
email newsletter, promotion, etc.
With the ever-expanding realm of
digital media, email marketing
continues to be a vital communi-
cation channel for many. Here are
a few tips to elevate your email
marketing and get into your
customers’ inboxes.
1. Start with the Subject
If you’re wondering how to do
email marketing right, the best
place to start is with the email
subject line.You want to keep it
simple enough to grab their
attention, while at the same time
enticing enough to have viewers
to open the email. Perfecting the
subject line can be the difference
between recipients opening your
email, deleting it or, even worse,
reporting it as spam.
2. Optimize for Mobile
The first thing many people do in
the morning is open their phone
and check their messages In fact,
66% of email opens occur on
smartphones or tablets. If your
emails aren’t optimized for
viewing on these devices, you’re
potentially missing out on a huge
number of clicks. Having a re-
sponsive, design-friendly email can

Analyzing emails goes beyond
reading past reports. As simple as
it sounds, make sure you are
proofing emails thoroughly before
sending them out. Check that all
links are working, graphics are
loading, and content can be easily
viewed on multiple platforms.
Double-check that your messages
look the way you want them to
by sending them to employee
accounts. Ideally, you will view
them on Outlook, Gmail, and on a
variety of mobile devices before
finalizing your drafts.
Going back and following your
email reports might be one of the
biggest tools in creating effective
email marketing campaigns.
Analyzing how many opens, link
clicks, bounce rates, unsubscribes,
etc. can give you a good look at
your customers behaviors. Find
out what times are receiving the
most opens, which links are being
click most, and what content is

trained and certified to
provide IV sedation in the
dental office.
Does the thought of having
your teeth fixed make your entire
body tense with fear? Would you
rather endure the agony of a
toothache than step foot in a
dentist's office? You're not
alone. A lot of people are so pho-
bic about going to the
dentist that they prefer not to
have any treatment.
For people who avoid dentists
like the plague, sedation dentistry
may take away some of their anxi-
ety. Sedation can be used for
everything from invasive proce-
dures to a simple teeth cleaning.
How it's used depends on the
severity of the fear.
What Is Sedation Dentistry?
Sedation dentistry uses
medication to help patients relax
during dental procedures. It's
sometimes referred to as "sleep
dentistry.” The levels of
sedation used include:

awake but relaxed.
• Moderate sedation (formerly
called "conscious sedation") --

speaking and not remember
much of the procedure.
• Deep sedation -- you are on

completely unconscious.
What Types of Sedation Are
Used in Dentistry?
The following types of sedation
are used in dentistry:
Inhaled minimal sedation.
You breathe nitrous oxide --
otherwise known as "laughing
gas" -- combined with oxygen
through a mask that's placed over
your nose. The gas helps you
relax. Your dentist can
control the amount of sedation
you receive, and the gas tends to
wear off quickly. This is the only
form of sedation where you may
be able to drive yourself home
after the procedure.
Oral sedation. Depending on the
total dose given, oral sedation
can range from minimal to
moderate. For minimal sedation,
you take a pill. Typically, the pill
is Halcion, which is a member of
the same drug family as Valium,
and it's usually taken about an

hour before the procedure. The
pill will make you drowsy, al-
though you'll still be awake. A
larger dose may be given to pro-
duce moderate sedation. Some
people become groggy enough
from moderate oral sedation to
actually fall asleep during the pro-
cedure but this is rare.
IV moderate sedation.
You receive the sedative drug
through a vein, so it goes to work
more quickly. This method allows
the dentist to “titrate” the drugs,
which means he can
continually adjust the level of se-
dation until it is ideal for the in-
dividual patient. You cannot do
this with oral sedation. Iv seda-
tion also makes it possible to give
multiple combination of drugs to
suit the patient, as all people have
different tolerances to different
types of drugs.
Regardless of which type of
sedation you receive, you'll also
typically need a local anesthetic --
numbing medication at the site
where the dentist is working in
the mouth -- to relieve pain if the
procedure causes any
discomfort.
Who Can Have Sedation at
the Dentist's?
Sedation is most appropriate for
people with a real fear or anxiety
that is preventing them from
going to the dentist.

Sedation dentistry may also be
appropriate for people who:
• have a low pain threshold
• can't sit still in the dentist's
chair
• have very sensitive teeth
• have a bad gag reflex
• need a large amount of dental
work completed
Sometimes, children are given se-
dation if they are terrified of
going to the dentist or refuse to
cooperate during the visit. Ni-
trous oxide tends to be safe in
children, and just about any den-
tist can administer it.
Can Any Dentist
Perform Sedation?
All states require dentists to
provide proof of advanced
training and a certain number of
sedation cases completed under
supervision in order to obtain a
license for IV sedation. It's im-
portant to make sure that your
dentist is trained and qualified to
administer the type and level of
sedation you will be receiving.
The dentist should monitor your
vital signs during the procedure
following the American Dental
Association's guidelines. The
dentist should also have oxygen -

Spring Cleaning?
Don’t Throw Out
Your Will!
The days are getting warmer and
longer and Spring is surely well on its
way to arriving. Along with Spring,
comes Spring cleaning and tax
preparation. Between the throwing
out and organizing associated with
both of those things, it is a great time
to get your financial and other
important records in order and stored
in a safe place. However, it can be very
confusing to know which records to
keep and for how long. This article
will examine that question as well as
provide tips on updating important
documents.
In a recent article in Consumer
Reports, the author suggests dividing
your important records into four
categories: (1) records you should
keep for a year or less; (2) records you
should keep for as long as you own the
thing for which the records apply; (3)
tax records that you should keep until
the time for audit and amending your
return has passed; and, (4) records you
should keep indefinitely.
The records you should keep for a year
or less include your ATM slips, bank
and credit card slips and receipts. Once
you’ve received your monthly state-
ments and found no discrepancies, you
can destroy these records except for
the ones needed to support tax
deductions. As with destroying any
records containing personal
information, you should shred the
paper records and delete the
corresponding electronic ones.
You should retain records for major
purchases, including evidence of
payment for the item, for as long as
you own the item. You will also want
to keep loan papers until the loan is
paid off and vehicle records until the
vehicle is sold. You will also want to
keep investment statements until the
investment is sold so you have the
information needed to track income
tax cost basis.
Tax records should generally be kept
for seven years. This is the maximum
amount of time the government has to
collect the tax or start legal
proceedings against you so keeping
all tax records for this long should
keep you safe.
There are other documents you should
keep forever. These include your social
security card, military discharge papers,
estate planning documents and life
insurance policies. Make sure you store
these documents in a safe place, like a
fire-proof box in your home. Also,
make sure you inform your fiduciaries
where they can locate these papers.
They will usually need the originals to
carry out their duties. Recently, a
client contacted my office to say her
daughter-in-law had thrown away her
power of attorney while doing some
cleaning. A good way to avoid a
mishap such as this is to keep your
very important papers in a separate
envelope or file clearly marked as
something that should not be de-
stroyed.
While organizing your estate planning
documents, it’s also a good time to
consider whether they should be
updated. I recommend reviewing your
documents at least every three years to
insure changes in circumstances
and/or the laws have not changed in a
way to negatively affect your docu-
ments. You should also review your
estate planning documents whenever
you know there has been a change in
your life, such as the birth of a new
child or grandchild, the death or
disability of someone you have
appointed to act in a fiduciary role for
you, or a move to a new state.
As we approach Spring and tax
deadlines, it’s a great time to organize
your important papers and to toss the
ones you no longer need. Dividing
those papers into four categories based
on how long they should be kept is
one good way to streamline the task
and make it more manageable. As you
do this, however, remember there are
some documents that should be kept
forever, like your will and your powers
of attorney. Not having or being able
to locate the original of these
documents might result in unintended
consequences to your family and loved
ones. While you are getting these
documents organized and in a safe
place, it is also a good time to review
them with your attorney to make sure
they are up to date.

Shaheen. Glenn and his wife Glenda
are natives of Donaldsonville. They
met while attending high school,

problems the event has held
last week. Needless to say a
lot of fun and comradarie is
held during the event.
The rivaly between these two
teams and the fans is a unique
one. Almost all the families
have close friends, family and
relatives on the opposing
team; consequently, there is a
lot of fun and sharing between
the two teams – except the day
of the game at which time the
rivalry becomes more intense.

the police at the Democratic
Convention in Chicago. The
whole country was in total
turmoil,” I understated.
The Great One’s face took on
a grim demeanor.
“Do you remember where
you were when Dr. King
was shot?”
“Of course,” I answered.
“I was at USL and the campus
was about to explode. So they
let us out a day early for spring
break to avoid any riots.
Naturally we just headed for
LSU and got into more
trouble there.”
“Do you remember where
you were when Bobby Kennedy
was assassinated?”
“I was working for the
highway department on a
summer job. We didn’t get the
news until the following
morning,” I recalled.
“Randall and I were the
youngest ones in the crew and
the older guys didn’t care much
for the Kennedys because of
their views on civil rights. So
we had to bear some fairly
brutal comments that day.”
Paul McCartney was now
screaming “Helter Skelter” at a
startled fisherman.
“Was that your worst day that
summer?” Ninja persisted.
“Believe it or not, it wasn’t,”
I replied. “Now I’m not trying
to compare my personal
hardships with a national
tragedy, but as a 19-year old,
that July 5 was one of the
toughest days of my life-from a
physical standpoint.”
“You see, July 4 was on a
Thursday that year and all the
regular hands used their comp
time to take off the following
Friday for a 4-day weekend.
Randall and I were assigned to

Naturally, we drank a couple of
fifths on the Fourth, arrived at
work badly hungover and set up
makeshift beds on the couches

turned the air on high.
“All went well until mid-
morning when the only
supervisor that was working that
day burst into the office to
interrupt our golden slumber.”
“No good can come of this,”
said Ninja in a rare show of
sympathy.
“Again, you are correct, sir,”
I conceded. “To really show my
age, Randall and I were working
on the ‘new’ Highway 30 at the
time and we ran a drilling truck
to dig holes and take samples of

soil cement. The supervisor
needed us to drill a few holes
for him and we’d be done for
the day.
“No problem, right? Until
the truck broke down.”
I paused for a moment
remembering how hot it was on
July 5, 1968, on a dusty,
half-built road for two 19-year
olds sweating out Boone’s Farm
wine and using…
“Post-hole diggers,” said our
boss. “Use these to get those
samples from 12 inches down.
I need them by three o’clock.”
“That ranks right up there as
one of the worst days of my first
two decades,” I confirmed.
“Bouncing those digger blades
off that road, barely making a
dent, onto a surface as hard
as-well-concrete.”
“Hard as picking winners in a
basketball pool?” grinned Ninja.
“I was wondering when we
were going to get around to
that,” I admitted.
“You described ’68 as a
troubled and tumultuous
period, “he stated. “Even your
beloved Kentucky Derby that
year had its first and only
disqualification when Dancer’s
Image came flying down the
stretch to win until the stewards
determined he was flying a little
too high and took him down.
“So on the 50th anniversary
of that volatile year, why not
pick your Final Four teams that
reflect the chaotic times of then
and now,” Ninja reasoned.
“Tell me one thing that you’ve
learned from me in the past,

“Always move Tom Izzo’s
teams up one place higher than
you have them in the brackets
based on his coaching,”
I responded.
“And with this sexual abuse
scandal involving Olympic
athletes and the perp being
based at Michigan State, I’d say
they qualify as troubled and
tumultuous. Wouldn’t you
agree?” He was on a Ninja
roll now so I joined in
the momentum.
“I’d throw Arizona in there.
Their coach was caught on tape
offering 100,000 dollars to a
prize recruit.”
“That’s the spirit,” Ninja
seemed pleased. “And with this
dirty agent steering recruits to
the top schools, you have to
include the bluebloods-Kansas
and Kentucky. You can take
whichever one you want but
you can bet they were
both involved.”
“O.K.-you take the ‘K’s’, I’ll
take the ‘O’,” I countered.
“As in Oklahoma who has the
best guard in the country in
Trae Young and still can’t figure
out how to win games. I would
say that’s a troubled team.”
“Excellent,” applauded the
Great One. “And look what
acronym this gives us. K for
Kentucky or Kansas, A for
Arizona, O for Oklahoma and
S for State-K.A.O.S.-a
phonetical pronunciation of
chaos and also the evil
organization Maxwell Smart was
trying to subdue in 1968. And

The Sports Ninja climbed into

As I write this article it is
early summer, and although
there's a whole lot of great fish-
ing ahead, my thoughts are al-
ready beginning to turn to this
coming hunting season. As the
seasons begin to open I will
start my annual routine of har-
vesting my food for the coming
year. I'll wake up early on days
off after an exhausting week of
work. I'll go by myself if neces-

that I know my limitations and
try to avoid some of the stupid

in the past.
Not all hunters have the same
desires. Some enjoy the woods
and water when conditions are
comfortable. Some enjoy the
camp life with family and
friends. Some folks don't hunt
at all. The latter is the largest
group of people and they are
the population which we need
to help understand why we do

 Ingredients:
Cooking Gourmet at Home
with SNO’S SEAFOOD & STEAKS
1 lb Louisiana Crawfish tails (peeled) ¼ cup Mayonnaise
1 cup diced onion 1 tablespoon Creole Mustard
¼ cup diced celery 1 tablespoon Ketchup
¼ cup diced bell pepper 2 teaspoons Horseradish
2 teaspoons minced garlic 1 tablespoon Worcestershire sauce
1 tablespoon chopped green onions 4 eggs
½ cup extra virgin olive oil 2 cups panko bread crumbs
1 lemon (juiced) 1 cup bread crumbs
½ cups fresh shredded smoked Gouda
(any cheese you like)
Kosher salt & fresh ground black pepper to taste

Method:
In a large skillet, heat 2 tablespoons of the extra virgin olive oil over medium high heat. When the
oil is hot, add your onions, celery, bell pepper, and minced garlic and cook for 1 minute. Add the
crawfish tails, Worcestershire. Cook for about 3 minutes, stirring occasionally, then remove from the
heat and pour into a large mixing bowl.

Now, add your shredded cheese to the crawfish mixture and season to taste with salt & pepper. Add
Crawfish Cakes with the green onions, 2 eggs, and the regular bread crumbs to the crawfish and mix well. At this point
your mixture should be able to hold its shape. (add a little more bread crumbs if not)

Remoulade sauce Form mixture into cakes

In a mixing bowl add the 2 remaining eggs, salt & pepper then whisk. In another small bowl add
the panko bread crumbs
Yield: 8 cakes
In a large skillet, heat the remaining olive oil over medium high heat. While the oil is heating, dip

and fry them for about 2-3 minutes on each side. (You can also bake these cakes for a healthier
option- 350 for 10 minutes) Remove the cakes from the hot oil and set them on a plate with
