Design and Development of an Eco-Innovative Noughat

A product is considered to be innovative if it appears for the first time on the market and
it has other aspect and different composition compared to similar products. The new variety of
Nougat that we want to introduce to the market is made of egg whites, glucose syrup and
hazelnuts. We have added also chicory and rose petals and the waffles sheets were improved
with pea fibers for a better nutritional value.
The purpose of this study was to determine the sensory profile of the new product by
performing a sensory evaluation and to analyze the opportunity to introduce this new variety
of Nougat on the market.
Before being tasted on the market, we have determined the nutritional value of the
product. The results showed that it contains a higher amount of sugars and fibers, followed by
fats, proteins, vitamins and minerals. Regarding the sensory profile of the new Nougat, the
results revealed that the most appreciated attribute was the taste and the general appearance
had also a good mark. The results of the market study realized using the questionnaire showed
that the consumption frequency of Nougat products is weekly. The consumers were mostly
women who live in urban areas, aged between 18 and 70 years. The most important factor that
influences the decision to purchase the product is the taste, followed by the label that contains
detailed nutritional information. This study revealed the consumer’s profile and it showed his
heightened interest for the new ”Nougat with chicory and rose petals” − a product with high
nutritional value that will be launched on the market.

1. Product description
1.1 Recipe
Rose ChicoNoughat is an innovative and eco-sustainable healthy noughat designed to be
environmental friendly in all respects. Its recipe is made of the following ingredients: ... %
eggs (whites), ... % gucose, ... % fructose, ... % water, ... % chicory powder, ... % rose petals,
... % raw Hazelnuts, ... % waffles . This composition results in the nutritional assessments
(Table 1) which makes it possible to highlight to the consumer the high fiber content, as well
as a calorie intake of 366 KJ/ 87,145 Kcal per bar only (17.43 % of Reference Intake of an
average adult calculated on the basis of a daily intake of 8400 kJ/2000 kcal), according to the
European Legislation (Parliament and Council Regulation 1169/2011).

1.2 Innovative raw materials
Rose ChicoNougat is a sweet product based on egg white foam with glucose syrup and
some ingredients that make it a functional food. The innovative elements are: chicory powder,
rose petals, hazelnuts and pea fiber. We have also created a special design for the package and
for the product.
Chicory was introduced for three reasons: it is rich in inulin, it provides a slightly bitter
taste and gives a special color to our nougat cream. Inulin is a fiber that helps the digestion.
Rose petals (Rosa damascena) gives to our nougat a special flavor because of their high
content in volatile oils. It is known that rose petals contain some bioactive compounds with
antioxidant, antiinflamatory and antibacterial effects.
Hazelnuts are rich in minerals, vitamins and monounsatured and polyunsatured fatty
acids that helps brain activity. They are also a good source of fibers and proteins.
Pea fiber is an important source of soluble fiber. We have chose it because it doesn‘t
influence the color of the waffles.
Sugar was replaced by glucose and fructose.

2. Process description
Waffles manufacture consisted of: materials reception, storage and preparation; batter
mixing; batter filtering; batter baking ; waffles cooling and pressing.
Nougat manufacture consisted of: materials reception, storage and preparation; syrup
preparation; cream mixing (denaturation of proteins and cream aeration); incorporation of
final ingregients; assembling, refrigeration and portioning; packing an labeling of the
product.

3. Package
Considering the characteristics of the product and ingredients used, Rose ChicoNougat
packaging is done in cellophane wrap which were placed into a carton box which gives to
product a distinctive character.
Cellophane was chosen because of its properties and compatibility with the packaged
product. It is odorless, tasteless and impermeable for water, fat and gases.
Rose ChicoNougat pack is made from recyclable and ecologically materials that
performs all their functions according to the legislative restrictions.The identification label
contains all the informations required by the labeling law no. 106/2002.
The Rose ChicoNougat box contains two pieces of nougat of 25 g each.

4. Materials and methods


Sensory analysis: For the sensory analysis we have used the hedonic test. The participants
were aged between 20 and 55 years.

Marcket research: The market study revealed the consumer’s profile and it showed his
heightened interest for the new product Rose ChicoNougat. The questionnaire was applied on
a sample of 63 persons aged between 18 and 70 years.
5. Results and discussion
Sensory analysis: The overall acceptance of the product and of each attribute are presented in
the table 2.The normal color of Rose ChicoNougat is beige, the taste is sweet and slightly
bitter, the flavor is given by the rose petals and the consistency is strong.

Marcket research: The results of this marcket research offered informations about the
frequency of nougat consumption, factors that influence the purchase decision, favorite
ingredients and form. We have also obtained some information about the influence of label
content on the consumer.

The influence of label information on the purchase decision: We have proposed to the
respondents two types of labels: the first one contained brief nutritional informations and the
second one contained more detailed informations.
The majority of respondents have said that the detailed nutritional informations about

the product had a greater influence on their purchase decision. According to the image,
65,1% of the respondents prefered the second type of label and 34,9% have chosen the first
one. The total number of respondents was 63.

6. Conclusions
The unique combination of ingredients and the environement-friendly package makes
Rose ChicoNougat an eco-innovative product.
Rose ChicoNougat was appreciated by the consumers as beeing tasty and flavored. It is
also a product that can be launched on the market because the consumers manifested a high
interest in it.
