Importance of operations research in production:

a) Operations research solves the production dilemma with a technique known as linear
programming. After setting up the formulas for the production and labor constraints, the
supervisor finds out the optimal production schedule.
b) OR techniques give managers the tools that provide better direction and control over
subordinates. A manager can use OR methods to set up performance standards for
employees and identify areas that need improvement.
c) A significant use of OR is the ability to identify optimal solutions. A few examples are
finding the best inventory mix, optimal utilization of manpower, most desirable use of
plant machinery and highest-producing marketing campaigns.
d) When the optimal results from OR analysis are shared with all departments, everyone
works together toward the same goal. For example, the marketing department might
coordinate their efforts with the schedules laid out by the production supervisor.
e) In business, very few things are certain, and managers must often make decisions based
on their instincts instead of being able to use reliable data. Operations research techniques
fill this void with methods that quantify issues and give business managers a better basis
for making decisions

Process

1. Fresh tomatoes would be washed in washing section to remove outer dirt and
foreign matter from the fruit skin. Unwanted, damaged tomatoes would be
separated out manually.
2. From fresh tomatoes the juice will be extracted out in juice extraction system. The
outer skin, seed and fiber of fruits would be separated out from extraction
machine and then disposed manually.
3. Extracted juice is passed to the heat treatment to avoid the quality degradation.
4. It is fine pulped in Pulper/ finisher to get finished juice. This juice will go for
further processing to juice concentrate to concentrate it to for tomato puree.
5. The puree is stored in large containers before it is processed further.
6. Once it has been stored the sugar and spices are added into this concentration for
taste and smell.
7. Once the spices have been added the formulation and blending takes place to mix
it all together and turn it into a uniform paste.
8. Once again the pasteurization process takes place where the ketchup is heated to
its boiling temperature and it is allowed to cool down.
9. After it has cooled down the packing process begins which involves packing the
ketchup in variety of containers for distribution.
