THE INFUENCED OF PIROLISIS TEMPERATURE OF KUSAMBI WOOD


TOWARD THE ANTIOXCIDANT ACTIVITY OF LIQUID SMOKE

The research about the influenced of pirolisis temperature of kusambi wood
toward the antioxidant activity of liquid smoke has been done. The aims of this
research are to know the influenced of pirolisis temperature of kusambi wood
toward the antioxidant activity of liquid smoke, to classify the antioxidant
compound in liquid smoke as the result of pirolisis kusambi wood in the different
temperature, and to know the optimum temperature in pirolisis of kusambi wood
to produce the liquid smoke that has highest antioxidant activity. Liquid smoke is
produce with used several pirolisis process of kusambi wood that are in
temperature 300, 350, 400, and 450 0C, then its distillated in temperature 1250C to
produce liquid smoke grade 3. Liquid smoke grade 2 is got through the purifying
process used ZAA. The result shows that, antioxidant compound of liquid smoke
as a result of pirolisis of kusambi wood is phenol compound. Based on the
differences of the temperature, the highest antioxidant activity is found in liquid
smoke in temperature 3000C and the lowest is found in temperature 450 0C. Based
on the liquid smoke specification, the highest antioxidant activity in liquid smoke
in temperature 3000C is 32,198% and the lowest in temperature 4500C. The
highest antioxidant activity in liquid smoke grade 3 in temperature 300 0C is
48,125% and the lowest in temperature 4500 C is 31,562%. The highest
antioxidant activity in liquid smoke grade 2 in temperature 300 0C is 43,437% and
the lowest in temperature 4500 C is 23,75%. As high as the pirolisis temperature,
the antioxidant activity will be less.
