1. 1. What is restaurant?
A restaurant is a business establishment which prepares and serves food and drink to customers in
return for money. And applies one kind of service. Either English Service, American Service, Buffet
Service or Russian Service.
2. 2. What’s the difference between Table d’hote and A’la carte menu?
Table d’hote menu is a menu where multi-course meals with only a few choices are charged at a fixed
total price. From appetizer to dessert are included. A’la carte menu is a menu with a separate price for
each item. You’ll charged for what you ordered.
3. 3. What is service?
Service in a restaurant is the way how you treat your customers with a standard procedure.
4. 4. What kinds of service do you know?
I know 4 (four) kinds of service. They are English Service, American Service, Buffet Service/ Self
Service and Russian Service.
5. 5. What is the difference between American Service and Russian Service?
American Service — the food is ready on the plate. And present the food from the right side. Russian
service — the food is served from the plate to the plate. And present the food from the left side.

Pada intinya American Service itu makanan yang akan disajikan sudah ada di piring yang
sudah disiapkan oleh chef. Sedangkan Russian Service itu makanan ada di service plate dan
para server harus menyajikan makanan itu dari service plate ke dalam piring yang sudah ada
di atas meja tamu. Dan ketika menyajikan makanan itu harus dari sebelah kiri tamu. Sudah
ada bayangan?

6. 6. What are fried eggs?


They are sunny side up, over easy/ over light, over medium, over well, over hard, omelette, scrambled
eggs.
7. 7. What is poach egg?
An egg has been cooked by poaching, in simmering liquid (water with vinegar).

There are three kinds of soup;
Cream soup: Ex – Bisque Cream Soup, Tomato Cream Soup
Clear/ Consomme soup : Ex – Chicken Noodle Soup, Sayur Asem
Cold soup : Gazpacho
11. 10. What is guacamole?
Guacamole is an avocado-based sauce that originated with the Aztecs in Mexico.
12. 11. Tell me some kind of salad dressing?
Italian Dressing, Caesar Salad Dressing, Thousand Island Dressing, Vinaigrette, Creamy Italian
Dressing, Lemon Balsamic, etc.
13. 12. What do you know about cooking meats grades?
Cooking meat grades are;
Blue – Rare – Medium Rare – Medium – Medium Well – Well Done.
14. 13. Can you tell me some kind of pasta?
Spaghetti, Spaghettini, Penne, Farfalle, Fettuccine, Lasagna, Fusilli, Pappardelle, Tagliatelle,
Cannelloni, Rigatoni, etc.
15. 14. What is the difference between tenderloin steak and sirloin steak?
Tenderloin Steak — without fat, Sirloin Steak — with fat
