To determine proximate composition (moisture content, crude protein, crude fat,
carbohydrate, ash content) of fresh and dehydrated wild edible mushrooms.
To determine phytochemical composition of fresh and dehydrated wild edible
mushrooms.
To determine shelf life of fresh and dehydrated wild edible mushrooms.
Hypothesis
Edible wild mushrooms in Kenya do not contain nutrients and phytochemicals
compounds that are useful to the body.
