Main Objective

 To determine the nutritional and phytochemical composition of wild edible mushrooms.

Specific Objectives
 To determine proximate composition (moisture content, crude protein, crude fat,
carbohydrate, ash content) of fresh and dehydrated wild edible mushrooms.
 To determine phytochemical composition of fresh and dehydrated wild edible
mushrooms.
 To determine shelf life of fresh and dehydrated wild edible mushrooms.
Hypothesis
 Edible wild mushrooms in Kenya do not contain nutrients and phytochemicals
compounds that are useful to the body.
