Abstract: The yucca starch is an economically important food for the department of
Cauca. There are more than two hundred factories with the purpose of transforming the
yucca in starch. However the process is still very handmade to be able to export or to
open up to a more competitive market. This is an automatic plant that allows to obtain
the maximum performance of the process and a starch of more quality.
