5. The recipe used by a house-wife for tarhana preparation contains 3 kg flour, 0.5 kg

semolina, 0.5 kg bread dough, 2 kg yogurt, 2 kg tomatoes, 0.5 kg red pepper, 0.5 kg onion,

and 0.250 kg margarine. Calculate the mass fraction of the ingredients to have a more general

raw-mix recipe for tarhana.

6. A fermenter is charged with 2 liters of water and 500 g sucrose, calculate;

a) Moles of water and sucrose in the fermenter charge.

9. A solution of common salt in water is prepared by adding 20 kg of salt to 100 kg of water,
to make a liquid of density 1323 kg/m3. Calculate the concentration of salt in this solution as;

10. Wine making involves a series of very complex reactions most of which are performed by
microorganisms. The starting concentration of sugars determines the final alcohol content and
sweetness of the wine. The specific gravity of the starting stock is therefore adjusted to
achieve desired quality of wine.
A starting stock solution has a specific gravity of 1.075 and contains 12.7 wt% sugar. If all the

b. the volume (in gallons) of this solution which would contain 1 g mol H3PO4.
