Course Description
Welcome to NUTR313 ‘Contemporary Nutrition.’ This is a three-unit, online class that introduces nutrition and food science disciplines. The purpose of this
course is to foster an intellectually curious student that is capable of continued learning in the nutritional sciences.
Contemporary Nutrition fulfills 3 of your 9 required units for GE Explorations and builds upon the goals and skills of your GE Foundation courses. The course
will provide students with an awareness and natural science foundation to understand diet and nutrition issues from individual and global perspectives,
and help students learn to accomplish the following with greater depth:
• Explain basic concepts and theories of the natural sciences
• Use logic and scientific methods to analyze the natural world and solve problems
• Argue from multiple perspectives about issues in natural science with personal and global relevance
• Use technology in laboratory and field situations to connect concepts and theories with real-world phenomenon.
NUTR 313 is a fully online course. Lecture material, readings, activities, assignments and exams are submitted via the course Blackboard Learn site. There
are no on campus, or real-time requirements for this class.

Course Prerequisites
Completion of a General Education requirement in Foundations of Learning II.A, Natural Sciences, and Quantitative Reasoning and upper division
standing.

Course Objectives
This course will:
1. Provide a conceptual platform for continued learning.
2. Systematically explain each nutrient’s dietary source and structure, processing and bodily function.
3. Translate research-based dietary practices into simple recommendations for performance, health and life stages.

Course Format
This course consists of three distinct parts that are aimed at the three objectives written above. The primary teaching modalities for the course topics
includes text readings, audio lectures and downloadable notes with the student learning outcomes. These materials are available for students to review
and complete anytime during the period that each part is available, which is 3, 7 and 6 weeks for Parts 1-3, respectively.

There are 3 non-cumulative exams in this course. Each exam contains 40-50 multiple- Part 1 Exam 100 FEB 7
choice and true-false questions that will measure understanding of lectures and text
readings. Exams will be administered through Blackboard from 7 am to 11:59 pm PST on a Part 2 Exam 100 MARCH 28
scheduled date, and once accessed, must be completed in 60 minutes. Missed and
incomplete exams will not be re-scheduled for any other than documented extraneous

Homework
There are reading comprehension questions embedded at the end of each section, 1-5 Part 1 Homework 25 FEB 7
in chapters 1-12 of the digital text. The points are weighted by a factor of 25% for
