I would like to thank you for the opportunity to respond to the health inspector’s report from

Friday, May 3, 2019.

The attached report does not reflect the standard of cleanliness, safety and quality that is
expected from Cheval Golf & Country Club.

Prior to the inspection, we noticed a decline in the current management of the restaurant and
terminated said employee on Tuesday, April 30. It should be noted that all of our health
inspections over the past four years have been excellent with all standards met or minor
corrections. After terminating our former manager, he apparently responded by calling the state
for an immediate inspection in which many violations were found which were previously non-
existant. When alerted to the current state of our kitchen and restaurant during the health
inspector's visit, we worked quickly and diligently to get our restaurant back up to par. Pest
control was there within twenty minutes and the rest of our team worked together to ensure
each problem mention was corrected promptly and efficiently. After one hour, we were able to
resume business.

Working directly with the health inspector, we have established a plan for long term
improvements consistent with our customers expectations. We have met with all of our current
vendors and hired some new companies to assist in pest control. We are making capital
improvements that include new cooler units and shutter doors to help in this endeavor.

While we are still assessing the full damage caused by our previous management including
missing items and a few other matters that are requiring us to move forward with legal action,
we have since hired a new Food & Beverage Director who has a tremendous reputation in our
community and is ensuring we go beyond the highest level of quality in all that we do moving
forward.
