Concept Refinement

After consulting with business professor Dr. Tu in RIT, I decided to choose the concept of a quick-service restaurant that

focuses on fast dine-in and take-out experience. In the fast-pacing lifestyle that is adopted by the majority of working

generations in China. People are prone to eat out with a group of workers as I mentioned in the research “Customer

Service.” Starting with something small and manageable is an ideal business model for a busy city like Nanjing.

For a quick-service restaurant, it is important to attract customers with a great first impression. I decided to make the open-

box experience caring and enjoyable.

02 SPIN ISLAND
A Barrier Free Kitchen Island

Design Background
Kitchens are the heart of the entire house. It is where family members gather together for Thanksgiving dinners to share

their freshly cooked cuisines and delicious homemade desserts. It is also a place for parents and children to collaborate on

gingerbread men cookies. The kitchen is the most visited and busiest room in the house that is full of laughter and smell.

However, the kitchen can turn into a nightmare experience for people with disabilities, especially for wheelchair users. The

nature of the kitchen is a busy, crowded, and intense place. It is a small space that is compact of the refrigerator, oven,

stove, sink, closets and the working station. When wheelchair users enter a normal household kitchen, they immediately

discover two problems. There is limited space for their bulky chairs to operate, and there is no place for their seating

positions.

Designing a working station that allows wheelchair users to do different tasks comfortably in the kitchen is the primary goal
for this project. From washing, food preparing, cooking, and cleaning, the working station lets wheelchair users complete

all tasks without the effort to move around in the narrow walkway. It provides comfort, ease, and convenience to the

customers.
Project Statement
To design a kitchen workstation for wheelchair users who

want to be more involved in the preparation process. The

workstation will allow the user to easily navigate an apparatus

of fundamental, kitchen tools without having to move.

Ergonomics Efficiency Minimalism


Design Research
The first step in design research is to sit in people with disability’s chair and experience their day in the kitchen. I discovered four factors to consider for the design of the design of the workstation.

We also had the opportunity to visit two non-profit organizations dedicated for people with disabilities to hear about their needs.

Hygiene
Wheelchair users constantly touch food, utensils,

and wheelchair handles, bring a hygiene issue to the

design.

Ergonomics
The table should be designed at the right level for the

comfort of both wheelchair users and their families.

Multi-Tasking
Due to low-mobility, it is important to consider multi-

tasking for wheelchair users.

Leg Space
Leg spaces are essential in workstation design as

lacks of leg space for wheelchair users may cause

dangers and inability to perform tasks.
