1 cup grated potatoes 1. Combine the cornflour and 1 tbsp of water in
1/4 cup chopped spring onions whites a small bowl, mix well and keep aside.

1 tbsp chopped basil leaves


1 tbsp chopped dry kashmiri red chillies
1/2 cup grated carrot
1/4 cup chopped mushrooms (khumbh)
salt to taste
1 1/2 tsp soy sauce
2 tsp lemon juice
1/4 cup chopped coriander (dhania) 2. Heat the oil in deep non-stick pan, add the
1/4 cup finely chopped spring onion greens spring onions whites, basil and red chillies
and sauté on medium flame for 1 minute.

3. Add the carrot, potatoes and mushrooms and


sauté on medium flame for 2 minutes.

4. Add 4 cups of water and salt, mix well and


cook on medium flame for 5 minutes.

5. Add the cornflour-water mixture and soy


sauce, mix well and cook on medium flame
for 1 minute, while stirring occasionally.

6. Switch off the flame, add the lemon juice,


coriander and spring onion greens and mix
well.

7. Serve hot.
