4 cups chicken broth
1 cup water
1 cup half & half - fat free
4 ounces cheddar cheese
1/2 cup all-purpose flour
1 tablespoon onion
1/4 tsp. ground black pepper
4 cups broccoli florets - bite-size

Preparation - Broccoli Cheese


Soup
Combine chicken broth, water, half & half, cheese,
flour, onion and pepper in a large saucepan. Whisk
to break up any lumps of flour; turn heat to
medium/high. Bring soup to a boil; reduce heat to
low.
Add broccoli and simmer for 15-20 minutes until
broccoli is tender, but not soft.
For each serving spoon one cup of soup into a bowl
and garnish with a Tbsp. of shredded cheese and a
pinch of parsley.
Note: Garnish with 1/2 cup shredded cheddar
cheese and 2 tsp. minced fresh parsley if desired.

1 box macaroni cooked
1 pt tomatoes
1 can mushroom soup
1 cup grated cheese
1 salt and pepper to taste

Preparation - Ground Beef


Casserole
Combine all ingredients as listed except cheese.
Mix well and place in casserole topping with cheese.
Bake at 350 for 30 minutes.

24 slices French bread
8 ounces cream cheese
2/3 cup milk
1/2 cup sour cream
1/2 cup fat free plain yogurt
1/3 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 cups egg substitute
2 cups fresh or frozen blueberries
Preparation - Baked Blueberry
French Toast
Place 12 slices of bread in a 13x9 baking dish
coated with nonstick cooking spray. In a blender,
combine cream cheese, milk, sour cream, yogurt,
syrup, vanilla, nutmeg and cinnamon. Add egg
substitute; cover and process until smooth. Pour half
of the egg mixture over bread; sprinkle with
blueberries. Top with remaining bread and egg
mixture. Cover and refrigerate overnight.
Remover from the fregrigerator 30 minutes befor
baking. Cover and bake at 350F for 30 minutes.
Uncover; bake 20-30 minutes longer or until knife
inserted near center comes out clean. Let stand for
10 minutes before serving. Dust with confectioners
sugar.

1 tb Butter
1 c Boiling water
2 ts Salt
1 c Rich milk
1 1/2 c Flour

Preparation - Instant Potato Lefse


Place instant potato flakes, salt and butter in mixing
bowl. Add boilig water to milk and add to potato
mixture. Mix quickly until thick and smooth. Add just
enough flour to be able to handle dough. Knead
lightly. Form into balls and roll very thin on floured
board. Bake on hot electric lefse grill (any griddle will
work), turning to brown both sides. File

Preparation - Vern's Lemon Pie


In a Bowl, Combine together condensed milk, and
egg yolks, once combined, slowly add the lemon
juice, folding it in. Once it's all combined, it should be
fairly thick, just pour into prepared pie crust. "Not
Deep dish" TOPPING:
For Topping, Beat egg whites until thickened, add 2
Teaspoons Sugar per egg white.
Spoon onto top of pie, try to make little peaks with
the egg whites.
Bake in oven at highest Temp, just until light brown...
watch it carefully, it doesn't take long to get browned.

"Although I make this crisp with many different fruits,
peaches are so delicious this summer Im making
this over and over again. This dessert is easy but
dont admit that to anyone." Cut up peaches (leave
peel on.) Place peaches in buttered 8x12" baking
dish. Combine flour with brown sugar, white sugar
and cinnamon. Cut in butter into it until it is in tiny bits
(easiest to do in food processor.) Bake in preheated
350F oven 1 hour or until topping is crisp and
peaches are tender. Serve on its own with vanilla ice
cream, frozen yogurt or sweetened yogurt cheese.

1/4 cup margarine
1 small sweet onions chopped
1 medium green peppers chopped
1 medium red pepper chopped
1 (24 ounce) bags frozen hash brown potatoes
12 eggs, beaten
1/2 pound cubed ham or
1/2 pound thin sliced ham
or 1/2 lb cooked crumbled bacon or
1/2 -1 lb sausage
3 cups cheddar cheese shredded
Preparation - Breakfast Casserole

Directions
Melt margarine and place in the bottom of 9" by 13"
baking pan.
Spread potatoes (still frozen is okay) in bottom of
the pan.
Sprinkle chopped vegetables over potatoes.
Add salt and pepper to taste.
Sprinkle meat over potatoes and vegetables.
Note: At this point you may continue or casserole
may be refrigerated overnight.
Pour beaten eggs over potatoes.
Bake at 350 degrees for 45 minutes.
Remove from oven and sprinkle cheese evenly over
top.
Bake another 5-10 minutes or until cheese is hot
and bubbly.
Remove from oven and let set for approximately 5
minutes.
Cut into 2.5"-3" squares and serve with a spatula.
Enjoy.

For the lemon yogurt sauce:
1 pint plain Greek-style yogurt preferably full-fat
1/2 lemon, zested and juiced
Kosher salt
1 loaf brioche bread
For the mini burgers:
2 pounds ground lamb (preferably shoulder meat)
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1 teaspoon salt
About 20 grinds fresh black pepper
2 cloves garlic pressed
1 small head red leaf lettuce torn into small pieces
4 ripe plum tomatoes cut into 1/4-inch thick rounds

Burgers On Brioche Rounds with
Lemon Yogurt Sauce
Directions
Make the sauce:
In a medium mixing bowl, stir together the yogurt and
lemon zest and juice. Season, to taste, with a couple
pinches of salt. Sauce can be made ahead of time
and refrigerated until ready to use. Bring to room
temperature before using.
Cut the brioche into about 1/3 to 1/2-inch thick slices
and then use a small glass to cut out as many circles
as possible, about 3 inches in diameter, from each
slice. Place the bread "buns" in an airtight container
until ready to use so that they stay moist and soft.
Make the burgers:
Preheat the grill.
Combine all ingredients in a mixing bowl and work
together until they are fully incorporated. Using a
small ice cream scoop, scoop the mixture into little
balls about 1 to 1 1/2 inches big and place them on
a parchment paper-lined baking pan. Using your
hands, flatten burgers to about 1/2-inch thick and just
a couple inches in diameter.
Once the grill is hot, place them on the grill and cook,
about 2 to 3 minutes per side or until fully cooked
through; cook time varies based on how hot your grill
is.

8 ounces Raw Brazil nuts
1 tablespoon Low-sodium soy sauce

1/2 teaspoon Freshly cracked black pepper
1/4 teaspoon Wasabi powder

garlic. When garlic turns golden, stir in nuts; reduce
heat to medium. Stir nuts until lightly toasted, about 8
minutes. Remove pan from heat. Drizzle soy sauce
over nuts. Sprinkle sugar, black pepper and wasabi
over nuts; stir to coat. Spread nuts in single layer on
waxed paper to dry. Makes 3 cups of nuts. 13 grams
of fat per 1/8 cup serving.

1 pound (3 cups) whole natural almonds, peanuts, or
nut of choice
2 tablespoons wasabi powder
2 teaspoons coarse salt
2 teaspoons cornstarch

Preparation - Wasabi Nuts

Preheat oven to 275?F. Line a sided baking sheet
with greased foil or parchment paper. Whisk egg
white and water together until foamy. Add almonds
and toss to coat. Transfer to a sieve; toss gently and
let drain.
Stir together wasabi powder, salt and cornstarch in
a large bowl. Add almonds and toss to coat. Spread
almonds on baking sheet in a single layer, and bake
30 minutes. Gently stir, reduce temperature to 200?
F and continue baking 20 more minutes. Let cool
completely before serving. Serve, or store airtight for
up to a week.

and it's delicious! The ingredients are very basic
and low cost if you don't already have in your kitchen.
I made this for Christmas Eve dinner this year and
just might make it a tradition.

2 tbsp olive oil
1 tbsp butter
1 lb boneless skinless chicken breasts, diced
2 cloves Garlic minced
1 medium Onion chopped
1 package frozen mixed vegetables 10 oz
1/3 cup whole wheat flour (or regular flour)
2 cups fat free chicken broth
2/3 cup 1% milk
1 Salt & pepper to taste
2 Pillsbury 9” pie crusts

Preparation - Chicken Pot Pie


In a large pan, sauté chicken, garlic and onion in
olive oil and butter until chicken is no longer pink and
onion is clear. Add mixed vegetables. Cook and stir
until blended. Stir in flour and cook 2 min. until
“pasty”. Add chicken broth, milk, salt and pepper.
Bring to a boil over medium-hi heat, stirring every
few minutes, until “cooked down” and is thickened,
about 15 min. While chicken mixture is cooking,
remove Pillsbury pie crusts from refrigerator, let
stand 15 minutes on counter. Remove pan from
heat. Place one pie crust in pie plate. Add chicken
and vegetable mixture. Place second pie crust over
pie, fold over edges and pinch with fork. Cut top
crust to vent. Bake at 350 degrees for 30-35
minutes, or until crust is golden. Cool for 10 minutes
before cutting.

1 (4 tablespoon) envelopes onion soup mix
1 eggs
1/2 teaspoon pepper
2 tablespoons water
1/3 cup breadcrumbs
24 small square dinner rolls
American cheese
pickles
Sauce
1/2 cup mustard
1/2 cup ketchup

Preparation - Almost White Castle

Preheat oven to 400?F.
Hamburgers: Mix first 6 ingredients and press into
an ungreased 10 by 15 inch jelly roll pan.
Prick with a fork.
Bake for 10 minutes.
Drain off juices (if there's a lot of excess).
Cool.
Cut into 24 squares.
Place squares on dinner rolls.
Combine mustard and ketchup and spread on rolls.
Top with pickles and cheese, if desired.
This makes 12 servings of 2 hamburgers each.

hour.

1/3 cup dry breadcrumbs
2 garlic cloves crushed
1/2 teaspoon thyme
1/4 teaspoon pepper
1/4 cup Dijon mustard
4 shoulder lamb chops trim off excess fat and slash
the edges

Preparation - Mustard Lamb Chops


Combine, crumbs, thyme, garlic& Pepper.
Stir in 3 tbsp of mustard.
Brush chops all over with the remaining mustard.
Broil 4" from heat source for 5 minutes.
Turn over and spread crumb mixture on top of
chops.
Broil,for 2-3 minutes or until desired doneness and
the topping is golden.

Preparation - Roasted Rosemary


Balsalmic Lamb Chops
Mix all ingredients together except lamb. Brush lamb
with all ingredients and let marinate for 30 minues.
Heat pan to medium/medium high (coat with olive
oil) and fry lamb (hopefully 3/4 inch thickness lamb)
for 3.5 to 4 minutes on each side. Pan is warm
enough when water sizzles.
