Recipe:

Bread slices as many number of sandwiches you want to make. (I use whole sproute
d grain bread for a healthier version)
Aloo again depends on your sandwiches
Onions finely chopped
Ginger minced well
Green chillies finely chopped as per taste
Red chili powder as per taste
Salt to taste
Garam masala for flavor and aroma
Cilantro finely chopped
Grated carrot (optional)
Boil aloo and mash it well. Mix all the above ingredients to it. Apply butter to
one side of a bread and place a couple of spoonful of the aloo mixture.
Cover it with another slice of bread. apply butter on the top of the covered bre
ad so that it can toast and get golden brown. Toast it in a sandwich maker. Serv
e hot as is or with a side of ketchup/cilantro chutney.
TIP: You can also spread some cilantro chutney on one side of the bread for extr
a zing and also some peas along with carrot if you prefer.

Toasted aloo sandwich is a delicious and easy breakfast option as well as any ti
me snack. They are also a good option for Tiffin. They are also liked by kids.
Recipe of aloo sandwich
3 boiled potatoes- peeled and mashed
Salt to taste
2 green chillies- chopped
1 onion- chopped
1/4 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp amchoor (dried mango powder)
A pinch of hing (asafoetida)
1/4 tsp mustard seeds
1/4 tsp garam masala powder
1 tbsp oil
5-6 curry leaves (optional)
Chopped coriander leaves
Bread slices
1. Heat oil in a pan (wok) and add cumin seeds and mustard seeds. When they splu
tter, add hing.
2. Add onion, curry leaves and green chillies and sauté till onion become transpar
ent.
3. Add potato. Add turmeric powder and salt. Roast the potatoes. While roasting,
keep removing the scrapings from the pan. Add garam masala, amchoor and coriand
er leaves and mix well.
4. Take a bread slice and place just enough potato mixture so as to cover the br
ead. Place another slice over it. Make sandwich either in an electrical or gas t
op sandwich toaster. Similarly make other sandwiches.

1. To prepare aloo paneer sandwiches, take paneer and cut it into small piece
s.
2. Take potatoes and smash them. Add paneer to potatoes and also add onion, g
reen chillies, salt, chat masala and red chilli powder.
3. Mix them well to form a paste. Put the mixture between two bread slices. N
ow heat a toaster. Put some butter in it and place the sandwich in the toaster.
4. Aloo Paneer Sandwiches are ready to be served. Serve hot with ketchup or y
our favorite chutney.

There are some dishes which remind me of my childhood. I will post these here, s
o that every time I read these, they will remind me of my mother. She has a alum
inium sandwich maker with long handles, which looked somewhat like this. She use
d to keep the bread slices in these, and then keep the sandwich maker on that ga
s stove. Believe me, this procedure was not at all as easy as it sounds. The san
dwiches used to stick to the sandwich maker and make a mess. So it required a lo
t of patience to grease them well to avoid sticking. If I was in her place, I wo
uld never even attempted to make these sandwiches. But since these were my broth
er s and my favorite snacks, she used to make them every now and then. I salute he
r for the kind of patience and energy she had/has to cook every possible thing t
hat we ask for.
In those rainy days, when we got back from school, drenched to the bone, she wou
ld serve us with piping hot sandwiches and tea. Oh, how I miss those days. I alw
ays think of cooking some delicious dishes for her when she visits us, just as a
thnak you for whatever she did for me, but I become a kid when she is with me.
Today I made these sandwiches for breakfast, because they are so filling and tas
ty. I remembered those childhood days. These sandwiches have become my husband s f
avorites these days. So I make them very often. I hope you all try these at leas
t once, they are too good to resist. The poha masala gives a very good aroma to
the stuffing.
Ingredients:
Bread slices
1 cup boiled, peeled, mashed potatoes
1/2 cup fresh/frozen green peas
1/2 tea spn mustard seeds
4-5 curry leaves
A pinch asafoetida
1-2 tea spn poha masala powder
A pinch turmeric
1-2 tbl spn fresh/frozen coconut
Oil
Butter
Salt
Method:
Heat oil and add mustard seeds. When they start popping, add asafoetida, curry l
eaves. Add peas and little water. Cook till the peas are almost done(do not mash
them). Add potatoes, turmeric, poha masala, salt, coconut and mix well.
Butter a sandwich maker and keep a bread slice. Keep the potato mixture on top a
nd cover with second bread slice. Take out from the sandwich maker when the slic
es have browned well.
Serve hot with tomato ketchup.
Serves : 2-3

4nos Bread Slices


1no Onion (chopped)
1no Potato(cooked)
1/4cup Frozen green peas
1/2tsp Ginger (grated)
1/4tsp Garam masala powder
1no Green chilly (chopped)
1/2tsp Mustard seeds + cumin seeds
Oil
Salt
Heat oil in a pan, add the mustard seeds n cumin seeds n let them crack..add the
chopped onion, chopped green chilly, grated ginger n stir for a while, add the
cooked potato pieces, frozen green peas n stir them for few minutes, add enough
salt n garam masala powder n toss everything well until the oil get separates...
Take teaspoon of this masala n spread over the bread slice n serve as sandwich..
