Spain is an ancient wine-producing country and produces nearly as much wine as the number-
one and number-two wine producers in the world: Italy and France. Spanish wine is at least three
thousand years old. This beautiful country with its extreme contrasts in climate, and soil produces a
wide variety of wine: from delicate fine sherries to rich dessert wine, old vintage wines to strong and
hearty reds.
Today, Spain’s winemakers are adapting modern practices while also respecting the country’s
honored winemaking traditions. In addition, new wine laws inspire visionary producers to experiment
with traditional and international grape varieties in regions never before known for quality or in
unexplored territory. The resulting wines are rich and lively, crafted in styles that are recognizably
“Spanish” and complement a wide range of today’s cuisines. This new world of wines in an old-world
setting offers fertile ground for enjoyable exportation.
At the Columbia Restaurant we believe that two aspects of elegant dining deserve special
attention: The preparation and serving of the cuisine and the selection of the finest wines to
accompany each meal. In keeping with our tradition of serving the most elegant Spanish dishes, we
have chosen to feature the finest collection of Spain’s finest wines in the world and wines from
California with connections to Spain.
This wine list illustrates the depth of knowledge and concern the Gonzmart family
possess’, by keeping abreast of the wine market in the United States and by traveling to Spain two or
three times a year. Each Spanish wine region can be defined in its elevation and its proximity to the
ocean or the sea. To break Spain’s geography into its autonomous regions we have broken the country
into climatic categories.
At the Columbia we take measures to be sure our wines are stored at a temperature of 56º and
75% humidity, like the natural cellars from where they were created and stored.
We are confident that you will find the perfect wine to make your meal a memorable one.

WHITE VARIETIES
Airén – The most widely planted grape in the world, but planted only in the center part of Spain. The million acres of Airén sited
in Spain’s Meseta amount to far more than all the acres of Cabernet in the world, as well as any other grape you can name. It is
generally used for brandy and for light, simple white wines. Native.
Albariño – Depending upon the vintage and the sub-region of Rías Baixas, this indigenous variety of Galicia in the northwest
Spain can be rich and expressive, with peach and apricot notes, or tart and bracing, like green apples and lemon peels. Native.
Chardonnay – Grown in many regions, but especially Penedés, Navarra, and Somontano. Foreign.
Godello – A relatively unknown variety that can express depth and character in Valdeorras, and increasingly more in Ribeiro.
Think green apples and texture, and in ripe vintages, add some peaches. Native.
Hondarribi – A cause célèbre in some markets, this produces the bracingly tart, txakoli (Chacolí)-style white wine of Basque
Country. Native.
Listán – Synonym for Palomino, Sherry’s critical grape.
Loureira – A secondary grape in Galicia that can produce rich peach to apricot aromas in Rías Baixas blends. Foreign.
Macabeo –This is a synonym for Viura, but is known as Macabeo in southern Spain. In the Penedés region it is mainly used for
Cava production. Native.
Malvesía – A Greek variety with vibrant aromatic qualities, whether vinified as a dry wine or as a sweet and exotic wine. It used
to be more widely planted and used in Rioja but has been eclipsed by Viura there. Foreign.
Moscatel de Alejandría – Good for sweet wines and for tables grapes and raisins, this grape can offer utterly charming dessert
wines. Foreign.
Muscat a Petits Grains – High-quality and wildly aromatic dry and sweet wines are made from this grape in southern Spain and
throughout the Mediterranean basin. Foreign.
Palomino – The grape of sherry, it can provide the underpinning of the lightest and freshest manzanilla or the richest and most
exotic amontillado or oloroso. Also know as Listán. Also used for still white wine in Andalucia. Native.
Pansa Blanca – See Xarel-lo.
Parellada – The bulk ingredient of most Cava and pleasant table wines. Commonly found in Penedés. Native.
Pedro Ximénez – Generally speaking, a variety used in the production of sweet sherry. In Montilla_moriles, this grape can
produce great dessert wines, but also a few dry0styled wines. Native.
Sauvignon Blanc – Sneaking into Rueda to te detriment of Verdejo, but also showing promise in Penedés. Foreign.
Treixadura – A tertiary grape in use in Rías Baixas, it’s usually crisp and lemony. Foreign.
Verdejo – A delightful and textured grape, with citrus elements covering notes of melon, apple, and stone fruits. Often it is
blended with Sauvignon Blanc in Rueda. Native.
Viura – A grape that performs differently in different places. In Penedés, especially in Cava production (Macabeo), it’s the fat and
friendly part of a blend. But in Rioja or Navarra, you can find partisans who believe it simply requires careful vinification to
unlock its character and even longevity. Native.
Xarel-lo – One of the principal constituents of Cava, this surprisingly interesting variety goes into the production of some lovely
wines form the slate soils of Alella. It can be the layered and age-worthy part of Cava. Native.

RED VARIETIES
Alicante – Sometimes called Garnacha Tintorera, it’s one of the few grapes to have not only color in the skins but also colored
juice. Native.
Aragón – Synonym for Garnacha.
Bobal – Ironaically, better known for its blending attributes (big, rich, and cheap) than for its stand-alone abilities, but there are
now delicious Bobals being made in the Valencia region. Native.
Cabernet Sauvignon – Planted in Spain once the scourge of phylloxera brought French winemakers to Spain in the nineteenth
century. it’s generally tolerated by the DO rules, except in Rioja where it is “illegal.” Nonethelrss, you can find small plots of it
there too. Foreign.
Cariñena – Known as Carignan in the rest of the world, but its rightful name is Cariñena, just like the eastern Spanish town from
which it probably originates. It’s called Mazuaelo in Rioja and doesn’t get much respect anywhere except in Priorat and Montsant,
where old vines can produce a powerful, notable wine. Native.
Cencibel – Synonym for Tempranillo used in La Mancha.
Garnacha – Known as Grenache in the rest of the world, it ought to be called Garnacha, as it originates in Spain, and traveled to
southern France in the eight and ninth centuries. the rap on the grape is that it is only great when it’s powerful and alcoholic.
That’s not necessarily true, but it does need to grow in a warm spot to display its best character. It’s the critical grape in Priorat,
and it is often bottled as a Rosado elsewhere in Spain. It’s the third most planted grape in Spain and the second most planted
variety in the world. Native.
Graciano – A very minor player in Rioja but one that has its fans. It can have beautiful aromatics, color, and tannins. Native.
Juan García – Grown in Zamora (in the northwest) but is more about potential than reality. Native.
Listán Negro – A grape that offers excellence on the Canary Islands. Native.
Manto Negro – Grown on Minorca and Mallorca and offering occasional excellence. Native.
Mazuelo – Synonym for Cariñena used in Rioja.
Mencía – Some folks think it’s Cabernet Franc. It’s not, but it’s easy to understand why. It carries the red-cherry intensity and
herbal note often found in Cabernet Franc. Like Cabernet Franc, Mencía can often be underwhelming. Even at its best, it is more
structured than lush. Native.
Merlot – Lots of enthusiasts for the vine, and lots of new plantings from Navarra to Utiel Requena. Most often, it’s seen as the
“blending grape” of Bordeaux, instead of being recognized as the most widely planted grape in Bordeaux and the dominant grape
of the ascendant properties of Pomerol and Saint Amilion. It can do good work in Spain as well. Foreign.
Monastrell – Known in the rest of the world as Mourvèdre, it’s a grape of Spanish origin. As in France, it is capable of producing
truly great wines, but so few people are focused upon that goal. The grape shows the most promise in Jumilla and Yecla. Native.
Moristel – A light and fruity grape in Somontano that almost never makes serious or powerful wine but can be a charming wine
nonetheless. Native.
Pinot Noir – Only a few examples of this grape are successfully made in Spain. While fashions may instigate a new plantings of
the grape outside Penedés, there are far more reliable grapes in Spain to focus upon. Foreign.

RED VARIETIES
Syrah – Just as in the rest of the world, this grape is much sought after and happily settles into virtually every region in Spain in
which it’s planted. Syrah will become one of the critical players in Spanish red wine. Foreign.
Tempranillo – The reigning indigenous red variety of Spain. Its various clones that are grown in different parts of Spain have very
different characteristics; int the south, it ripens early; in Penedés, growers say that it’s low in acidity and doesn’t age well; in Ribera
del Duero, it’s an ideal ager with moderate tannins and alcohol; and even
Rioja, growers accuse it of low acidity, yet it ages far batter than its structure suggests. The variety has performed exceedingly
well in the traditional style of Rioja; the soft, modern style of red wine; and also in powerful, rich, international school-style wines.
If Tempranillo still lacks a high profile, it is because it has failed at becoming an internationally successful grape – it tastes dull
and boring grown almost everywhere outside of Spain. it grows well at a high altitude and seems to respond well to strong shifts in
nighttime and daytime temperatures. Few grapes in the world can offer such an intense range of wines. Native.

Spanish Wine Terms
Amontillado – After the flor dies or is killed off by an extra addition or spirit, the resulting fino is known as an amontillado once it has aged for a
period of time, usually ten years or more. Most are dry, although some brands bottle them with a touch of sweetness
Añejo – A new term designating any Spanish wine that has been aged a minimum of 24 months in oak barrels. Ther term can be applied only
to a Vino de la Tierra wine or better.
Bodega – A generic term meaning winery, but sometimes applied to wine shops or cellars.
Cava – The term is reserved for those sparkling wines that are made by the classic method used to make Champagne. By law, European
countries can’t use the term méthode champenoise, so in Spain the term método tradicional or método clasico is placed on the bottle instead.
Criadera – A collection of vintage wines in barrels making up the younger part of a solera (see below).
Crianza – Any DO or DOC red wine that has been aged a minimum of 24 months, with six months in barrel. In the regions of avarra, Rioja, and
Ribera del Duero, that minimum barrel time is one year. White wines must be a year old, with six months in barrel.
DO – “Denominación de Origen” was the top of Spain’s very short ladder of wines until 1988. The term is comparable to France’s AOL
(Appellation d’Origine Contrôlée), and all DOs have regulatory bodies, Consejos Reguladores, that are responsible for creating the definition
of each DO.
Doble Pasta – a powerful wine made using methods similar to Italy’s ripasso, that is, the addition of grape skins to a finished or fermenting wine.
DOC – “Denominacíon de Origen Calificada” was created in 1988, following Spain’s entry into the EC. The national committee determines
which DO’s are deserving of DOC status. For the first 15 years, only Rioja earned that title. In 2003, Priorat was awarded its DOC, fulfilling all
requirements, including that its wines cost at least double that of the national average for DO wines. With this and other DOC rules in place, it
may be some time before the other DOC hopefuls, such as Ribera del Duero, Bierzo, and Toro, can gain this premium designation as well.
Flor – The beneficial yeast film that forms inside a barrel of fino-style sherry.
Fondillón – Sweet wine made of Monastrell grapes with 16 to 18% alcohol, from the Levante region.
Gran Reserva – Any DO or DOC wine that has been aged a minimum of five years, with one and a half years in barrel. In the regions of
Navarra, Rioja, and Ribera del Duero, that minimum barrel time is two years. White wines must be four years old, with six months in barrel.
Joven – A term applied to any DO or DOC wine; typically the wine sees little or no time in oak and is sold as a fresh and fruity wine.
Manzanilla – Another light, dry, aperitif-style Sherry. If a fino Sherry is aged in the windy, coastal town of Sanlúcar de Barrameda, it is called
manzanilla to differentiate it from other, less delicate fino Sherries.
Noble – A new term used to designate a wine with at least 12 months in oak barrels. The term can be applied only to a Vino de la Tierra wine or
better.
Oloroso – A type of Sherry that is naturally dry but is often blended with Pedro Ximénez (PX) or other sweetening agents to produce a sweet
syle.
Orujo – The Spanish form of grappa or marc, a distillate made from grape pomace.

Spanish Wine Terms
Pago or DO Pago – A classification created in 2003 for a single estate, which designates that Pago (vineyard-estate) as a fine producer of wine.
the Pago is allowed to set its own rules for grapes and production. All grape growing, vinification, and bottling must take place on the estate.
Palo Cortado – A rare type pf Sherry, usually completely dry, which lies between an amontillado and an oloroso.
Rancio – A high-intensity wine with distinct oxidative flavors and usually with more than 16 percent alcohol.
Reserva – Any DO or DOC wine that has been aged a minimum of 36 months, with one year in barrel. White wines must be two years old,
with six months in barrel.
Roble – Literally “oak,” but this term can appear upon a label, most often, of a Joven wine; it informs the buyer that the wine has spent at least a
little time in barrel.
Rosado – Rosé or pink wine, made from red grapes fermented with little or no time on their color-laden skins; hence the wine is white or rosé in
color.
Solera – A dynamic aging process, practiced in jerez and Montilla-Moriles, whereby younger and older wines are aged and blended together
in a proscribed manner.
VCIG – “Vinos de Calidad con Indicación Geográfica” was created to act as a way station between those areas that were stuck at the Vino de
la Tierra level and underneath the DO status. after five years as a VCIG, the region can apply to be promoted to a DO.
Viejo – A wine with a minimum of 36 months in barrel, and showing an “oxidative” character. The term can be applied only to a Vina de la
Tierra wine or better.
Vinos de Autor – Classical wines with an added dimension: wines made from selected grapes (from old vines, from a single vineyard, or from
specials parcels or plots), usually featuring plenty of new oak, produced in limited quantities, and sold in a special packaging. Also known as
High Concept wines, Signature wines, or Flagship wines.
VT – “Vino de la Tierra” wine is a level above Vino de Mesa, it means “wine of the country”; this designation emulates France’s Vins de Pays and
offers a wine of a particular place, but with few requirements of grape varieties, yields, site, or, especially, aging.
Vitivinicultor – A new term used to describe a Spanish winemaker who is both the grower and the maker of the wine, the equivalent of the
French term vigneron. (Interestingly, the Spanish had to invent a new word to describe the person who is responsible for all aspects of the
creation of the wine. In the past, these roles have been compartmentalized in the large companies. And small companies have not been part of
the landscape of important Spanish wine until recently.)
VOS – “Vinum optimum signatum” or “very old Sherry” is a new Sherry term used to guarantee that the wine has been aged in barrels a
minimum of 20 years. that long time in oak causes a high degree of evaporation, so the VOS designation suggests that the wine is expensive to
produce.
VORS – “Vinum optimum rare signatum” or “very old rare Sherry” is a new Sherry term used to guarantee that the wine has been aged in
barrels a minimum of 30 years. That long time in oak causes a high degree of evaporation, so the VORS designation suggests that the wine is
very expensive to produce. These wines are bottles in very limited quantities.

Don Cesar
These wines were selected to honor the memory of Cesar Gonzmart. Through his love of music and food and his
remarkable ability to make them both magical and memorable, Cesar Gonzmart kept the spirit of the Columbia
Restaurant alive.
About the label: As he dined at the Columbia Restaurant, world famous artist, LeRoy Neiman, was so inspired by the
performance of Cesar Gonzmart’s Magic Violin that he sketched this animated portrait capturing the essence of Cesar.
Adelita
Adela Hernandez Gonzmart had long been admired as the Matriarch of the Columbia Restaurant and Ybor City. Her
love and devotion to her family, her heritage and the arts has long been the secret to the success of the Columbia.
Through Adela’s culinary skills the traditional, nearly century-old recipes have continued at the Columbia
Restaurant, founded in 1905 by her grandfather, Casimiro Hernandez, Sr. These wines stand in memory of our mother
Adela, the wonderful woman they were made to honor.
The cool and misty climate necessitates a focus upon earlier ripening grapes, especially white
varieties. But the advantage conferred upon this sort of climate is that aromatic varieties are virtually
guaranteed to be, well, aromatic.

Quality winemaking in Bierzo is too new for us to really know exactly what will happen with the area’s
occasionally remarkable wines. Vineyards are found as high as 2,300 feet, with a mix of chalk and clay in the
elevated vineyards and alluvial soils in the lower vineyards. Bierzo’s predominant local variety grape is the
Mencia, descended from grapes brought by the Roman settlers and widely regarded as the immediate
precursor to the Cabernet Franc. Nearly all of the vines are over 30 years old, with a preponderance of vines
over 100 years old.

Rias Baixas
(The Wine of the Sea)
The Southwestern part of the region of Galicia (just north of Portugal, along the Atlantic coast), is where green, misty
hills are punctuated by sharply defined estuaries. Rias Baixas, is a home to a superb wine region called Rias Baixas.
This is the area from which the famed Albariño wines come from. Albariño, considered a native vine of Galicia has
impressed the wine world with its delicate and aromatic fruit.

The Duero River Valley
The Duero River Valley has been the seat of power for much of Spain’s history. The area hosts
extremely elevated but very workable vineyards. Vega Sicilia and Pesquera are two of the famous
Spanish wineries residing in the Duero River Valley. Other upstart sub-regions, such as Toro and
Rueda are on the short lists of anyone trying to keep up with emerging Spanish brands.
The Duero valley averages about 2600 ft. above sea level which makes for a relatively short
growing season. Temperatures reach extremes during the season, with very hot summer days up to
104˚ but then falls sharply at night. These extremes however, seem to be a positive factor when it
comes to making high quality wine. It is widely believed that these conditions combine with the
mountain air of the Duero to help Tinto Fino to retain more acidity than Tempranillo wines from other
parts of Spain, and thereby provide the resulting wines with great structure and longevity.

Cigales
High above sea level in the region of Castilla y León, Cigales is ideally
suited to growing Tempranillo, Garnacha and Verdejo grapes. Red wine production has increased as producers in the
area have begun to emulate those in the Duero Valley. The climate is hot and dry in the summer, wet and cool in winter.
The vineyards are planted at an average altitude of around 2,500 ft. Much of the soil consists of limestone beneath
large, flat rocks that retain heat. This soil composition is often considered to be ideal for Tempranillo or
Tinto del País as it is known locally.

Ribera del Duero
The region is about two hours north of Madrid in the province of Castilla and Leon, stretching sixty eight miles
along the banks of the Duero River. The original grapes were cultivated and made by the Romans. The D.O. is home to
Spain’s most famous wineries, Vega Sicilia and Pesquera. The grape most used is the local Tinto Pais (Tempranillo).
This region, too, has seen some amazing changes in the past decade. Ribera del Duero has enjoyed official
appellation status only since 1982, but growth in the area has been phenomenal. Quality is such that Ribera del Duero
is challenging Rioja, aiming to become the country's premier red-wine region. The grape of Ribera del Duero is the
Tinto Fino, a local clone of Tempranillo, although Cabernet, Malbec, and Merlot are also allowed within the
appellation. Ribera del Duero is often more tannic and linear than its cousin, Rioja.

Ribera del Duero
Bodegas Arzuaga-Navarro
Founded at the beginning of the 1990 by the Arzuaga-Navarro family, the wine cellars named after them, are a fine
sample of dedication and passion for land and wine. Florentino Arzuaga is an enthusiast of the boundless horizons and
wide open spaces of Castile where there is still room for nature and wildlife to exist undisturbed. Here, not far from the
silent-running waters of the Duero river, Florentino bought an estate which due to its large size has horizons of its own.
Later came the vines, the winery and, finally, the wine. Florentino has sought a red wine with structure, elegant,
assertive and comple at the same time. Florentino Arzuaga has the tenacious spirit of an entrepreneur coupled with an
aesthetic and perfectionist sensitivity

This wine is produced from 90% Tempranillo, 10% Cabernet and Merlot. It is aged for a
period 14 months in a combination of 75% American oak and 25% French oak. The oak is a
combination of new and one to two years old. This wine shows great fruit flavors and
excellent balance. Very well integrated and subtle, with an elegant and long finish.

Ribera del Duero
Bodegas Alejandro Fernández
Alejandro Fernandez personifies the mercurial 10th-Century Spanish experience. Since 1982, fermentation has been
de-stemmed whole berries only, maceration varying from 12 to 20 days. The unclarified wine goes directly to small oak
after pressing. Barricas are an astute blend of American, Spanish and French oak, custom-cured and made in Spain’s
finest coopers. Filtration and cold stabilization are not practiced. Wines produced by Alejandro Fernández are made
exclusively from the difficult, quick-maturing Tempranillo variety, of which he is the acknowledged master.
Pesquera
In 1972 Alejandro and his wife, Esperanza, licensed their bodega in the town of Pesquera in Ribera del Duero. The
estate now has over 500 acres of mature vineyards, situated on a variety of different soils. Vinification includes total
de-stemming, maceration for up to twenty days and maturation in small oak barrels. The wines are neither filtered nor
cold-stabilized.

The Condado de Haza estate includes 500 acres of prime tempranillo vines. Encompassed within the historic county of
the hilltop village Haza, high above the opposite bank of the Duero River, the Condado de Haza reflects Alejandro’s
bold winemaking style.

In 1864, Eloy Lecanda founded the winery that symbolizes the golden legend of Spanish red wine. Throughout
its long history, this winery has belonged to different owners, but has always maintained an unquestionable personality,
making concentrated, mature, generous and extremely elegant wines.
In 1982, El Enebro S.A., a company owned by the Álvarez Mezquíriz family, acquired the winery and the
vineyards from the Venezuelan businessman Miguel Neumann. From that year onwards, the family, with David
Álvarez and his children Pablo, Jesús David, María José, Emilio, Juan Carlos, Elvira and Marta, have developed a policy
of harmonization of present innovative techniques required by the wine sector with the traditional winemaking
process. The vineyard area has been extended and the vineyards and vines, which were almost half a century old, have
continued to be planted in rotation.
This legendary bodega along the Duero River remains in a class by itself. Vega Sicilia’s red wines have
garnered awards, critical praise and high prices ever since the grapes were first planted on the estate in 1864. The
varietal mix is usually 60% Temparnillo, 20% Cabernet Sauvignon, 10% Merlot, 10% Malbec. Vega Sicilia
continues to be recognized as Spain’s finest red wine.
Unico
This is the reference wine of Vega Sicilia, although it shares its special character with the rest of the wines from
the winery. It comes from the older vines on the estate and is made with the varieties of tempranillo and more cabernet
sauvignon than merlot. Although it is old, the red wine maintains its liveliness thanks to its good acidity level
compensated by solid alcohol content. It has an intense ripe cherry color, with the lively edge of a wine that is always at
its best. The aroma prevails with hints of toast from the wood, and touches of hazelnut from its oxidative evolution from
its years in the cask. It has generous tastes of old but clean wood, with dry tannins that are pleasantly embittered by the
oak, together with the sensation of its light sweetness of its alcohol. It is a pedigree wine with a long, lasting taste. The
King of Spain is only allowed one case of “Unico” a year.

three or four different vintages, and the average age of the wines used is usually at least 30 years old. In Vega Sicilia,

together the best of each vintage in order to make a true designer red wine. The Reserva Especial has a dark cherry
tone that is opaque and full of color. It is elegant on the nose, with a fine spicy bouquet. Time in the bottle have given it

Valbuena is the youngest of Vega Sicilia's red wines, a "fifth year" wine made from grapes from younger vines, a wine
therefore less concentrated in its structure. Valbuena has the same colouring as its older brother, the Vega Sicilia
"Unico", a garnet-cherry red with an orangeish edge and brick-red reflections, the result of an excellent evolution in
cask and bottle, one of the specific traits of the red wines of Vega Sicilia. The personality of Valbuena is defined by the
persistence of varietal traits, revealed for example in the ripe red fruity bouquet. In the mouth, although Valbuena is
slighter in structure than Vega Sicilia Unico it still posses all the vinous-fruity complexity of a fine reserva.

to produce a wine with a philosophy and an identity different and independent from that of Bodegas Vega Sicilia.
Thus, the possibility of making the wine in the Vega Sicilia installations was discarded; the Álvarez’s did not wish to
create a brand that might be considered as a second wine from the mythical name.

In October 2001 in my travels visiting the great wineries of Spain one of the highlights was discovering this
jewel located in the Duero river valley at Tudela. Located a few miles from the city of Valladolid but due to be it’s
geographical a location and local politics Mauro does not qualify for the Ribera del Duero DO. But it didn’t matter as
this small producer of only about 160,000 bottles earned wide world reputation for it quality in a contemporary style,
sort of like the super Tuscan reds from Italy. Mauro was a creation in the 70’s of Luciano Suarez, an architect Felix
Choque, cousin of the famed winemaker Mariano Garcia of Vega-Sicilia fame. Mariano has always been the spiritual
force behind the winery with his sons taking over the day to day operations and winemaking here.vThe super rare and
delicious Terreus is only produced in outstanding years with a maximum production of 8,000 bottles.

Sardón del Duero
Sardon del Duero has a long history of winemaking. As far back as 2,000 years ago, there is strong evidence of
grape growing and winemaking by the Romans. Located just outside of the more famous region of Ribera del Duero,
the wines of Sardon del Duero are also based around Tinto Fino and traditional Bordeaux varietals such as Cabernet
Sauvignon, Merlot, Cabernet Franc, and Petit Verdot.
Sardon del Duero does not benefit from the constancy of climate in the Southern part of the country and
experienced dramatic shifts in temperatures and climatic conditions throughout the year. The winters are quite cold,
with temperatures as low as 18 degrees Celsius, and the summers are hot and very dry, with lower than average rainfall
than the rest of Spain. Altitude is between 750 and 950 meters and the soil is made up of clay alternated in many parts
by sheets of limestone and harder chalk.

Rueda
While red wines are produced here it’s only the white wines that matter. Indeed, it’s one vine in particular, Verdejo,
which produces wines of great crispness and occasionally of wonderful richness and texture. Other white grapes are
grown here as well: Viura is used for blending; Sauvignon Blanc is utilized for aromatics; and Palomino is grown here
because, not so long ago, Rueda wines were all rancio in style, and the oxidized style lent itself better to the Palomino
grape. But Marques de Riscal, assisted by Emile Peynaud, led a charge to create a fresh white wine and saw an affinity
between the grapes Verdejo, Sauvignon Blanc, and Viura. Others have been emboldened by Verdejo’s success, and
many believe that Verdejo deserves to be seen on its own.

Toro
Toro is located further along the Duero river. This once forgotten DO is exploding. Manuel Fariña brought it to
prominence a few decades ago with excellent wines at fantastic prices, and seemingly everyone with an ego and a fat
wallet has decided to try their hand as well. The massive character of Toro’s full, plush and sometimes overpowering
Tempranillo-based wine is the result of the warm conditions, ideal exposures, and very friable soils. But the elevation,
as with Spain’s other top spots, gives the wine structure, relative elegance, and, it is hoped, ageability. The word “Toro”
means “bull” and it aptly describes the robust character of these reds. Toro may be the next big thing for Spanish wine.

The Ebro River Valley
The Ebro River Valley is where the Cantabrian Mountains, or the Sierra de Cantábria, are
located. Mountains shelter some of Spain’s most important vineyards, including those in Rioja and
Navara. Farther south, Calatayud, Campo de Borja and Cariñena offer great value, and to the east,
the Pyrenees are mostly forgotten for wine growing. The only DO immediately south of the Pyrenees
is Somontano where the rare Moristel grape is charming some with its easy ways, along with
Tempranillo, Cabernet Sauvignon, Merlot and others.
The hills, valleys, nooks, and crannies among the mountains hold nearly endless opportunity.
For now, the money is on Rioja, the traditional area of quality, and Navarra, the traditional area of
quantity.
In the foothills of the Sistem Ibérico, the less-known and limestone-rich DO’s of Campo de
Borja, Calatayud, and Cariñena offer great value, if only from a handful of focused producers at the
moment. And to the east, Somontano, too is starting to look like a sure thing. Cabernet is the surprising
king, but Chardonnay, Garnacha, Merlot, Moristel, and Tempranillo have all offered exciting wines in
the past few years.

Navarra
Rosado has always been Navarra’s curse and blessing. Countless bottles have been sold, but Navarra is capable
of far more than simple, pretty Rosado wine. It has been only a decade or so since Navarra began producing more red
and white wine than Rosado.
From generally oxidized rosés to full-bodied reds, the transition in Navarra's winemaking has been sudden and
overwhelming. Garnacha, the workhorse rosé grape now is less than 40% of plantings, compared with 90% in the
1980's. Its place has been taken by the Spanish Tempranillo, and, equally excitingly, by Cabernet Sauvignon and
Merlot. Now, after a frenzied seesaw, Garnacha is finding favour in red wines with producers who are prepared to crop
low, and to use the fruit of old vines. Navarra's winemaking regions fall into five zones: Tierra de Estella, Valdizarbe,
Baja Montaña, Ribera Alta and Ribera Baja.
There are some very dynamic families and producers in Navarra, and great value, as well as surprising wines.

Rioja
Rioja remains the benchmark of Spanish wines, as it has for two centuries or more. There is not one true style of Rioja;
instead, several versions are valid. The ancient style of Rioja exemplified by oxidative red, white and rosé wines, may
not be to everyone’s taste, but the mode remains legitimate, if unusual. The more modern school, with labels that came
forward in the 1960’s to the 1980’s, emphasizes time in oak for other reasons; these wines seek supple expressions and
softer structures. And the new internationalist schools are in full effect in Rioja; there are plenty of producers with
powerful wines, inky-dark and joltingly tannic with new French oak. So the bastion of Spain’s wine tradition has many
rooms in this mansion, as it were, and each ought to be viewed as genuine.

Conca de Barbera
The Denominacion d’ Origen Conca de Barbera located just east of Barcelona, sandwiched between the DO
Tarragona in the southeast and the DO Costers del Segre in the north-west, has 9,000 hectares of vineyards and a
production of 250,000 hectolitres of wine. The wines from Conca de Barbera are mainly whites and roses. The Conca
region is based around two river valleys, the Francoli and the Anguera. The area is quite dry, with cool winters and hot
summers; ideal ripening conditions for grapes. The concave bowl of this limestone-rich valley can, and has, produced
some lovely wines for British grocers and for the Torres family. Among other wines, the Torres Gran Muralles is proof

40% Cabernet, 30% Garnacha, 20% Mazuela, 10% Syrah. This has quite a vivid nose, with a slight note of
fish oil/mackerel, and a schisty quality, with some dusty black fruit coming though. There is a little toast and
caramel in the background. The palate it has lovely fruit; a juicy quality with blackcurrant and a touch of juicy,
ripe black plum. Some liquorice in the tannins, with a fine bittersweet note, and fine charry quality in the finish
but the pure, fresh fruit stays focused.

1995 celebrated the 125th Anniversary of the Torres winery. In honor of the fact, His Majesty King Juan Carlos I visited
the winery and saw the vineyards and installations, showing great interest in every aspect of winemaking. While
tasting the wines, His Majesty showed particular appreciation for a red wine from the Santa Margarita de Agulladol
vineyard. At this high altitude location, presided over by a Romanesque chapel dating from the 12th century. The fine
slate soils produce very small harvests of an exceptional wine that subsequently ages and becomes more refined in new
oak barrels from the forests of Nevers (France). In 1997 this Reserva Real (Royal Reserve) was vintified separately in
memory of the visit by His Majesty, King Juan Carlos I.

California traces its winegrowing roots back to the mid 1700’s when Spanish explorers &
Franciscan fathers moved north from Mexico and established religious retreats throughout California.
Although the early winemaking began with the native Mexican mission grape, this rustic wine made
fulfilled a need by the missions for sacramental ceremonies and medicinal purposes.
Almost every kind of climate and geologic resource exists in California – from the 840 mile
