Justintimeforthemove,twobeautifulnewrefrigera tionunitsweredeliveredandplacedoutsidethenew KitchenatCOTSMaryIsaakCenter.Theseunitsare addingimportantnewcapacity. WelltakingfulladvantageofagenerousofferfromAmysKitchen,afoodmanufacturerwho isdonatingendofrunfrozeningredientstous.Andwehaveambitiousplansintheworksto developculinarytrainingprogramsandsomeadditionalfoodmanufacturingwhichwillhelp COTSprogramparticipantsgainneededjobskillsandwork experience.andperhapssomeincomefortheKitchentoo!

COOKING WITH YOUR HEART


"It's great!" commented volunteer and regular Monday cook, Nikki Lundberg as she excitedly talked about the new Petaluma Kitchen facility at MIC.
"It's clean, its got modern equipment. We have a steam cabinet where we can do some really healthy cooking - vegetables can be steamed and it frees up the stove. We've got a soup burner where we can do soups, sauces or stocks. The larger walk-in refrigerator is going to provide a greater storage capacity. The kitchen is set up nicely so you can have several different prep things going on at once." After her long career with the airlines industry, Nikki retired, trained as a pastry chef and started a second culinary career. "I always had an interest in food so when got to foreign countries would go to local markets and see what the local people were buying and bring it home to experiment with." A long time Petaluma resident, Nikki started volunteering at the Petaluma Kitchen about two years ago. "Petaluma has been very good to me over the years and this is my opportunity to give back and to help the best way that I can. Being retired now it's nice to be using those skills and pass them on to another generation. I think it's really important you have to give away whatever you have. So it's very satisfying to be able to do that." In talking about her volunteer experience, Nikki said, "I think the most important thing is to be doing it for people and to be doing it because you have a heart for it. There's a human element in this work - yes you're going to be chopping vegetables, etc. - volunteering is a job and you need to come on a consistent basis and be prepared to work hard. But you need to be prepared also to greet the community and be as helpful and pleasant as you can." "And I'll tell you there's nothing more satisfying than walking down the street in Petaluma and having someone yell at you, 'That was a great lunch on Monday! Thank you!' I had one man tell me when I asked, 'I'm doing ok. God bless you. What you do here helps me survive for one more day.'"
