Until a year ago, Dominquita Corizs life was
punctuated by turmoil. She had suffered the loss of
a close family member, was losing the fight against
diabetes and admits, I was depressed real bad.
Medications shaped her daily life. In the decades that
followed her diabetes diagnosis, the disease progressed
until she was prescribed as many as seven medications
simultaneously, plus insulin, just to keep the diabetes in
check. Her body was in so much pain that she couldnt
travel the short distance to pick up the pills she needed to
survive.
But that was a different Dominquita Coriz.
About a year ago, the Kewa Pueblo woman was
referred to Love Your Heart, the tribes cardiovascular
health program for people with diabetes. Health
administrators helped her skim the unhealthy stuff from
her diet and encouraged regular exercise. She said it was
a drastic change from her routine of years.
Before, I ate anything, whatever I wanted. I liked
the fried things fried potatoes, fried meat. Now its the
green stuff, Coriz said.

Changing direction
Exercise, diet fixes and determination can turn diabetes diagnosis around

But the results have been just as drastic as the lifestyle
changes. Its clear from the way she describes her days
now, one year after she implemented diet and exercise
changes to manage her diabetes.
She uses words such as flexibility and control to
describe her life. She walks, bikes and uses the treadmill.
She can pick up her own diabetes medications.
Now in her 50s, Coriz cant remember a time when she
felt more optimistic about her health and her diabetes.
Im down to three medications and insulin now, she
said. And Im not scared of the doctor.
The severity
Health administrators at Kewa Pueblo have seen their
share of tribe members develop Type 2 diabetes. And not
all of them are success stories like Coriz.
Diabetes is so pervasive that the pueblo has acquired
its own dialysis center to help treat sufferers. Kewa also
recently purchased a hyperbaric chamber, which is used
to help prevent amputations a too-routine side effect
for many with advanced-stage diabetes.

Nationwide, about 7.8 percent of Americans have been
diagnosed with diabetes, according to 2007 numbers
from the Centers for Disease Control and Prevention.
That number is about 7.5 percent in New Mexico and
4.8 percent in Santa Fe County, according to the states

Department of Health. Diabetes was the sixth-leading
cause of death in New Mexico in 2009.
But diabetes hits Native Americans and Alaska
Natives especially hard particularly Type 2. Their
rate of diagnosed diabetes hovers around 16.3 percent
making them 2.2 times more likely than non-Hispanic
whites to have the condition. An additional 30 percent
have pre-diabetes.
Department of Health statistics show diagnoses of
diabetes among Native Americans aged 20-29 jumped
58 percent from 1990 to 1998. And Kewa Pueblo isnt
immune to this trend.
According to Jan Atencio, director of Kewas health
programs, diabetes affects some 15 percent of its 4,913
people. Further, she believes that number could be about
a percent higher if she factors in people who have not
been diagnosed or who receive treatment outside of
Indian Health Service. The number of those diagnosed has
increased by 3.5 percent since 2006.
Im concerned at how the rate has increased. To other
people it might not be a lot, but to us, its huge. Its a huge
climb in the wrong direction, Atencio said.
In such a community-based culture, one family
member with diabetes has a negative effect on the entire
group, she said.
Ray Tafoya, tribal programs administrator, said that
dietary restrictions of those with diabetes put a strain on
cultural activities, especially those that center on food.
Its hard to see that some of our elders or our younger
generation cant take part in our cultural activities
because of diabetes. Its sad to see it taken away from
them, he said.
Kewa has numerous programs to help those with
diabetes and to prevent others from developing it. Theres
the cardiovascular initiative that helped Coriz, and a
strong network of outreach workers who make house
visits to monitor the ill. And the pueblo recently partnered
with Johns Hopkins University to develop a community
garden meant to reintroduce traditional farming and diet
practices to the younger generation.
Tafoya and Atencio see their community becoming
more enthusiastic about the programs. Zumba classes are
more crowded. The pueblos track program energizes the
youth. And more seniors are attending support groups.
But despite the outreach and the progress, Tafoya and
Atencio are realistic about the diabetes epidemic at Kewa.
Theres a lot of misconception out there that being in
a rural setting, were not affected by Western culture,
Tafoya said. We do have regular access to those
unhealthy foods and unhealthy lifestyles that contribute to
diabetes running rampant here on the reservation.
New diets
About 40 miles from Kewa, back in Santa Fe, Native
chef Lois Ellen Frank is leading efforts to reclaim a truly
traditional Native American diet. That reclamation is
crucial because diabetes was not a problem in Native
American communities when diets were still plant-based,
said Frank, who teaches plant-based Native American
cooking classes and is completing her Ph.D. in Native
foods.
Frank says the rising number of Native Americans with
diabetes can be attributed to a colliding of cultures that
brought tribes a new diet filled with foods that can trigger
diabetes when eaten often.
When the Spanish invaded, for example, they brought
pork, beef, sheep and wheat, Frank said. Suddenly meat
and yeast breads were a part of the Native diet.
Then came the commodity-food period. According to
Frank, when tribes such as the Navajos were forcibly
removed from their land, they were given army rations
things such as yellow cheese, lard and flour. Given
those ingredients to survive, Native Americans showed
great creativity by adapting their diets, the chef said. But
the adaptations werent healthy.
They took ingredients they were familiar with and
some they werent familiar with and made all these
things, Frank said. Fry bread became the only thing they
had to eat. Its creative, but its a sometimes food.
Growing up in the Midwest, Donna Hall remembers
the commodity diet well. Her parents were the second
generation to live with those foods the flours, the
sugars, the canned meats and they became the staples
of her diet.

Coming into my adult life, I started teaching my kids that,
because thats all I knew, said Hall, who moved to Santa
Fe in summer 2009 to attend the Institute of American
Indian Arts.
A few short months ago, Hall and her children were
eating a diet that she describes as something fried,
something salty, something sugary. Among them, they
went through two bags of chips per day, 6-10 pounds of
meat per week and large quantities of soda. And then
there were the meat-and-cheese loaded Indian tacos,
eaten twice each week.
When Hall saw a sign for the Food for Life Healthy
Native America Cooking Program, the programs
emphasis on a Native diet appealed to her. Although Hall
doesnt have diabetes, she saw her father develop Type 2
and wanted to help her children avoid the disease.
During the classes, she learned to adapt fry bread and
Indian taco recipes into healthier, plant-based meals. She
said the change was difficult at first. We still love our
meat and cheese, she said. But the family stuck with it.
They now are growing their own sprouts and eating
meals full of veggies and rice, thanks to cooking
demonstrations led by Frank, local instructor Rita Condon
and Dr. Neal Barnard, who revolutionized the plant-based
diet for those with diabetes.
Hall has seen improvements in her arthritis and is
experiencing less pain from her non-Hodgkin lymphoma.
And Ashley, her 11-year-old daughter, couldnt be
happier.
I thought we should be eating more healthy, she said.
And now I have more energy at school.
Caroline Trapp a longtime nurse and director
of diabetes education for the nonprofit Physicians
Committee for Responsible Medicine, which sponsored
the cooking classes said the plant-based diet the
participants learn is an effective way to prevent or
manage diabetes.
She has seen patients with Type 2 diabetes cut down
medications after switching to a diet based on plants
rather than meat. Ive seen a really effective treatment
(for diabetes) related to lifestyle. It doesnt come in a
bottle and it doesnt have to be injected. Its something we
can do for ourselves, Trapp said.
For Frank, the switch to plant-based foods is about
more than just health. She says its also a way for Native
Americans to reclaim their culture and their cuisine.
As you revitalize food, you revitalize everything thats
attached to it the songs that go with planting, the
prayers, the agricultural techniques, she said. (The
younger generation) wants to know.
Frank partners with Chef Walter Whitewater to develop
Native recipes and educational programs. For more

This recipe is one of my favorite chile bean recipes and
was originally made for the Begay family in Pion, Ariz.,
for their family gatherings and ceremonies. I usually cook
it in a large cast-iron pot with a handle that was passed
down to me by my mother. The taste from the cast iron
makes this chile bean stew even more delicious. This
recipe is so great because you can make one recipe to
feed 6 to 8 people or you can add to it and make enough
to feed 60 to 600 people. It is a favorite at all family
and ceremonial gatherings. This recipe goes great with
tortillas, or homemade no-fry bread. It makes a hearty
meal by itself or a side to any feast.
Vegan Pion Chile Beans
(Serves 8 to 12)
1 large yellow onion, chopped
1 green bell pepper, seeded and chopped
Olive oil cooking spray to coat cast iron pot
2 cups chopped fresh Roma tomatoes or
(1) 28-ounce can whole peeled tomatoes with basil
2 1/2 cups cooked dark red kidney beans
2 1/2 cups cooked pinto beans
2 cups cooked corn kernels (fresh, frozen or canned)
3 tablespoons dried red mild chile powder
1 teaspoon salt
Heat the cast iron or soup pot over medium-high heat.
Add onions, saut for two minutes until translucent, then
add green bell peppers and saut another two minutes.
Cut each of the whole tomatoes from the can into
eight pieces (a large dice) and add them to the onions
and green bell peppers. Cook for another two minutes,
stirring constantly. Add the kidney beans, pinto beans
and the cooked corn and stir well. Bring the chile beans
to a boil, and then reduce heat to low. Stir in the dried red
chile powder and salt. Let simmer for 20 minutes, stirring
occasionally to prevent burning. Serve hot with no-fry
bread, or homemade corn or flour tortillas.

The NewMexican
Marizabel Ulibarri, a therapist with the Santa Fe
Recovery Centers outpatient program, said every-
thing on her office walls has a special meaning and
is designed to make her patients feel comfortable.
What it says here is, My world starts with my
family, Ulibarri said, translating a section of a
poster hanging prominently in her office, which still
has a hint of a fresh-paint smell. She pointed out a
garland of roses above her window, a statue of the
Virgin Mary and a tin cross with sections of mirrors
in it. Everything is designed to reflect some part of
her Spanish-speaking patients culture, she said.
But the therapist doesnt have to try hard to make
her patients feel comfortable in the outpatient pro-
grams new2,300-square-foot building located
off Lucia Lane, next door to the centers residential

Question: What is being done to enable
ocean fish populations to rebound after
being so overfished? Are nations coming
together on this? Deborah Kay, Milford,
Conn.
Answer: There is no overarching inter-
national agreement to limit global over-
fishing, but a fewgovernments have been
able to implement and enforce restrictions
at regional levels that have resulted in
rebounding fish stocks. The success of
these isolated examples gives environ-
mentalists and marine biologists hope that
protecting marine hot spots fromoverfish-
ing can save the biodiversity of the worlds
oceans.
The results of an extensive four-year
study released in 2006 by leading
fisheries expert Boris Wormof Canadas
Dalhousie University and colleagues
showed overfishing would put every
commercial fishery in the world out of
business by 2048, with the oceans poten-
tially never recovering. But University
of Washington fisheries scientist Ray
Hilborn challenged Worms frightening
conclusion, offering evidence that several
fisheries in parts of the U.S., Iceland and
NewZealand were recovering. The two
men decided to teamup on a new, more
comprehensive survey of fisheries around
the world.
