“Wines with Soul”

The wine program at REDD encourages discussions of


vineyard before winemaking. It should be far more
educational and informative to ask:
“What can you tell me about this vineyard?”
rather than:
“Who made this wine?”

To truly understand what makes each wine unique and different


is to understand a wine’s “soul” and to learn what neighborhood
those grapes hail from. The juice inside a grape is nourished
and filled from the ingredients deep within the soil. The liquid
that becomes the wine is influenced and flavored by the soil as
it is sucked up from the ground by the roots. When a wine has
“mineral” characteristics like the oyster shell notes in a Chablis,
that flavor actually came from the ancient fossilized oyster shells
and chalk that the vine grows in. The grape is nourished from
the soil and in turn influences the eventual taste when the grapes
are pressed to make wine. A winemaker’s job should be to deliver
all the influences of the land, the varietal, the rain, the sunshine,
etc. and turn that juice into wine with minimal influence.

Look for asterisks * that denote wines that are made from
biodynamically farmed vineyards. These wines are made naturally
without the usage of herbicides or pesticides and take the current
trend of sustainable and organically grown wines to an even further
level of responsibility.

B. Kosuge

Byron Kosuge is a quiet, demure winemaker, not a rockstar, nor a


publicity hound. Instead he quietly makes some of California’s top
wines with personality, soul and intensity allowing the lonely vine
to bask in all the attention. Having spent 15 years at Sainstbury,
he describes himself as “ordinary, without a fancy winery, making
modest amounts of interesting wines I want to drink myself”.
