Our soba noodles are made by our soba master daily. To make these traditional Japanese noodles, our soba master skins the buckwheat husks, grinds the buckwheat, then kneads and rolls the dough by hand. The dough is then delicately cut to create the noodles. Try some noodles alone, breathe in the aroma, and enjoy its crisp taste. Try dipping the noodles into our

homemade dipping sauce (tsuke-jiru). Enjoy the firmness of the noodles in combination with a hot or cold dipping sauce.
