1 Introduction Food technology has become one of the most important branches of modern technology.

Over the past few decades, people have spent a great deal of money and energy to research the various food processing. The results of this research have shown that food processing involves not only the quality of the raw materials, the manufacturing processes, the chemical changes in the storage process, the enzyme and microbial functions, packing, and consumers preference, but also the machinery and equipment used to process food. In order to improve the techniques of processing food, the entrepreneur must acquire new ideas in management. According to current marketing trends, automatic food processing is the most practical method of producing food, not only because it increases the production efficiency, but also because it is more sanitary. This of course, requires the use of high quality food processing machinery. One phase of good processing which employs the use of such machinery is the production of biscuits. Biscuits may not be a basic life necessity, but nowadays more and more consumers enjoy them as their daily snack and as the standard of living around the world continues to rise, the demand for biscuits will also continue to rise. Therefore, an investment in a biscuit making plant should prove to be a profitable one. 2 General Process Information 2.1 Flow Chart: 2.1.1 Soft Biscuit

2.2 Process Description 2.2.1 Weighing of raw material Each and every ingredient is weighed in accord ance with the lower case, prior to mixing. However, the quantity of sugar is to be used may be varied. The sugar should be liquefied prior to mixing with the other ingredients in the mixer. 2.2.2 The flour is sifted and the water put through the water chiller. All materials are then placed in the mixing bowl of the universal mixer for mixing. 2.2.3 The dough be placed in the dough tab box.

2.2.4 (A) When making soft biscuits, the dough is put into the rotary machine and molded into round shaped biscuits. (B) When making hard biscuits, the dough is put into the laminator to be stretched and folded in the form of a belt. It is then sent through the cutting machine to be cut into rectangular shaped biscuits. 2.2.5 This formed and shaped dough is then sent through the band oven for baking. 2.2.6 The baked biscuits then go down the cooling conveyor. 2.2.7 The cooled biscuits are automatically sent down the working conveyor and packed by the operators manually. 2.2.8 The packages of biscuits are sealed by the heat sealer and the process is thus completed.
