Easy Cornbread Catfish Gumbo
Pumpkin Torte
Ingredients 1 1/2 cups cornmeal 2 1/2 cups milk 2 cups all-purpose flour 1 tablespoon baking powder 1 teaspoon salt 2/3 cup white sugar 2 eggs 1/2 cup vegetable oil Method 1. Preheat oven to 400 degrees F (200 degrees C). In a small bowl, combine cornmeal and milk; let stand for 5 minutes. Grease a 9x13 inch baking pan. 2. In a large bowl, whisk together flour, baking powder, salt and sugar. Mix in the cornmeal mixture, eggs and oil until smooth. Pour batter into prepared pan. 3. Bake in preheated oven for 30 to 35 minutes, or until a knife inserted into the center of the cornbread comes out clean.
Ingredients 1 pound catfish fillets, cut into 1 inch pieces 1/4 cup vegetable oil 1/2 cup celery, chopped 1/2 cup green bell pepper, chopped 1/2 cup onion, chopped 1 clove garlic, chopped 2 cups water 2 cubes beef bouillon 2 (8 ounce) cans diced tomatoes 1 (10 ounce) package frozen okra 1 teaspoon salt 1/4 teaspoon red pepper flakes 1/4 teaspoon dried thyme 1 bay leaf 1/8 teaspoon hot pepper sauce Method 1. In a 3 quart pot, bring the 2 cups of water to a boil. Dissolve the bouillon cubes in the boiling water. 2. In a medium skillet, heat the vegetable oil, and cook the celery, green pepper, onion and garlic until tender. 3. Add the tomatoes, okra and cooked vegetables to the boiling water. Season with salt, red pepper flakes, thyme, bay leaf and hot pepper sauce. Reduce heat, cover and simmer for 30 minutes. Add catfish, cover and simmer for 15 minutes or until catfish is flaky and tender.
Ingredients 1 package (18-1/4 ounces) yellow cake mix 1 can (15 ounces) solid-pack pumpkin, divided 1/2 cup milk 4 eggs 1/3 cup canola oil 1-1/2 teaspoons pumpkin pie spice, divided 1 package (8 ounces) PHILADELPHIA Cream Cheese (softened or cubed), softened 1 cup confectioners' sugar 1 carton (16 ounces) frozen whipped topping, thawed 1/4 cup caramel ice cream topping 1/3 cup chopped pecans, toasted Method In a large bowl, combine the cake mix, 1 cup pumpkin, milk, eggs, oil and 1 teaspoon pumpkin pie spice; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Pour into two greased and floured 9-in. round baking pans. Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. In a large bowl, beat the cream cheese until light and fluffy. Add the confectioners' sugar, and remaining pumpkin and pumpkin pie spice; beat until smooth. Fold in whipped topping. Cut each cake horizontally into two layers. Place bottom layer on a serving plate; spread with a fourth of the filling. Repeat layers three times. Drizzle with caramel topping; sprinkle with pecans. Store in the refrigerator. Yield: 10-12 servings. With sabayon and fresh mint leaf.

Live Entertainment Various rhythmic music venues are throughout the weekend for your listening pleasure. Artist Call for Entries: All forms of media including paintings, sculpture, glass, fiber, clay, wood, photography, digital, jewelry and other. New! Youth Art Competition The Youth Art Competition is for kids in grades kindergarten through eighth-grade, or ages 5 to 12, to have the opportunity to enter their works of art created during the school year. All entries will be publicly displayed throughout the weekend in Youth Art Competition tent; artwork must be made only by the young artist. $250 cash awards with four total prizes to be judged by participating artists. Youth art applications are available online at www.HotWorks.org and are due by Oct. 1 for the fall show and Dec. 15 for the winter show. The Estero Fine Art Show happens twice annually in the fall on Nov. 5 and 6 and the winter on Jan. 7 and 8, 2012. This art show brings high quality juried artists from around the globe and top-notch local artists to sell their artwork at Miromar Outlets. The events happen on the southeast side of the mall, near the intersection of Corkscrew and Bell Hill Griffin roads. This shows main focus is for artistry and community enrichment. The quality of artwork is juried by art professionals in the art industry. Many of the nations best artists exhibit at this show. In order to attract the high quality artists, artist awards are given. Our goal is to create an atmosphere that enhances the artwork and creates a relaxing environment for art lovers. Event hours on Saturday and Sunday are 10 a.m. to 5 p.m. daily; the event is free and parking is free.
