There are two types of vitamins: fat soluble and water soluble. When you eat foods that contain fat-soluble vitamins, the vitamins are stored in the fat tissues in your body and in your liver. They wait around in your body fat until your body needs them. Fat-soluble vitamins are happy to stay stored in your body for awhile some stay for a few days, some for up to 6 months! Then, when its time for them to be used, special carriers in your body take them to where theyre needed. Vitamins A, D, E, and K are all fat-soluble vitamins. Vitamin A Vitamin A is extremely important for your skin, the mucous membrane of the eye and your sight. It is also important for other mucous membranes and the bodys immune system, and contributes furthermore to a normal level of growth. Vitamin A helps to maintain healthy concentration levels of oxygen in cells and can be found naturally in eggs, oily fish, carrots, green leaf vegetables, dried apricots, liver and dairy products. Vitamin D Vitamin D strengthens the bodys immune system and counteracts the effects of osteoporosis. The most important source of vitamin D is sunlight, and a 30minute walk in the sun in the middle of the day is said to be as beneficial as drinking 100 glasses of milk. Oily fish, egg yolk and some enriched daily foods provide a supplement of the vitamin. A lack of vitamin D can cause rickets. Vitamin E Vitamin E exists in different forms and is an antioxidant that protects the bodys cells from free radicals. This means that the vitamin provides protection against various harmful substances. Nuts, almonds, beans, eggs, green leaf vegetables, vegetable oils and various cereals are all important sources of the vitamin . Vitamin K Vitamin K is important for blood-clotting, i.e. to stop the bleeding in a cut or wound. Leafy green vegetables, dairy products like milk and yogurt, broccoli are rich in this vitamin.
Water-soluble vitamins are different. When you eat foods that have watersoluble vitamins, the vitamins dont get stored as much in your body. Whatever your body doesnt need comes out when you urinate (pee). So these kinds of vitamins need to be replaced often because they dont stick around! This crowd of vitamins includes vitamin C and the big group of B vitamins B1 (thiamin), B2 (riboflavin), niacin, B6 (pyridoxine), folic acid, B12 (cobalamine), biotin, and pantothenic acid. Vitamin C Vitamin C is a very important antioxidant. It plays an essential part in the process of collagen formation in connective tissue, which strengthens the skin, teeth, bones and blood vessels. Vitamin C also helps the body to extract iron from food. Fruit, berries, sprouts, vegetables and root vegetables are common sources of this vitamin. It has also traditionally been linked to prevention of infections. The B-vitamins Around 30 different B vitamins are currently known of, although it is possible that researchers may discover even more. The various B vitamins interact in your body and can be found naturally in daily foods such as eggs, meat, fish, vegetables, root vegetables, nuts and wholegrain products. B1 (thiamine) is very important for nerve cells, the brain and the bodys energy metabolism. B2 (riboflavin) and B3 (niacin), are important for cellular respiration. B5 (pantothenic acid) and B6 (pyridoxine) are needed partly for energy metabolism and partly to protect nerve cells. Biotin (B8) is important for cellular metabolism. Folic acid (B9) is significant in normal cell division, growth and blood-forming and is particularly important for women who are either pregnant or of child-bearing age, as it protects the foetus from spinal cord injuries. Vitamin B12 is important for the brains nervous functions and blood-forming. Vegetarians are more likely to suffer from a lack of this vitamin.

Calcium Calcium is an essential mineral for your bones and more than 99% of the calcium in your body can be found in your skeleton. Calcium is also important for muscles, bloodvessels, heart rythm and for hormone release. Important dieary sources of calcium are milk and diary products, green leafy vegetables (broccoli, spinch), fish, seafood and nuts. Magnesium Magnesium is essential for us all. Too little magnesium can cause high blood pressure, migraine and muscle cramps. Magnesium rich foods are green leafy vegetables, nuts and whole grain products. Selenium Selenium is a mineral present in all our cells and a part of enzymes protecting our body against free radicals. Selenium is therefore considered an antioxidant and is important for proper function of the immune system. Selenium deficiency can cause high blood pressure, muscle and joint disorders as well as sterility and impotence. Iron Iron is an important constitutient of hemoglobin, which is the red colouring agent in our blood. Hemoglobin transports oxygen from the air that we breathe to the different tissues in our body. Without enough iron you become tired and weak. A pregnant woman needs increased amounts of iron. Vitamin C helps our body to absorb iron. Meat, liver, green leafy vegetables and strawberries are all good dietary sources of iron. Iodide Iodide is necessary for proper function of hormones controlling our energy metabolism. You get iodide from algae, fortified table salt, saltwater fish and seafood. Zinc Zinc is essential for the different functions in our cells, such as carbohydrate, protein and fat metabolism and turnover. Zinc is also important for the immune system and for production of hormones. You can find zinc in beef, liver, cheese, clams and wholegrain products. Severe zinc deficiency can cause skin lesions and hair loss. Copper Copper takes part in the turnover of iron in our body and is therefore an essential mineral. Copper contributes to normal heart rythm and is also important for production of bones, connective tissues and skin. It is also important for the pigmentation of hair and skin. Important dietary sources of copper are meat liver, seafood, fish and mushrooms.
Special requirements
There are some vitamins and minerals requirements which are special for men and women. Women -need more Iron, Folic acid and Calcium. Older women are more prone to a condition called osteoporosis (weakening of bones) and should therefore eat a lot of calcium which is an important component in strong bones. Iron is womens number one mineral deficiency causing symptoms like dizziness, tiredness and shortness of breath. Folic acid is very important for all young women in child bearing age. It is especially important to get prior to conception to prevent birth defects in the unborn child. Men -Important minerals for men are Selenium and Magnesium. Its good to know that I am getting all the nutrition that I need.
I have known for a long time that I needed to take better care of my body and lose some weight. But I just dont have the time to plan my meals and get enough exercise.
