A new promising programme
La cérémonie de remise des certificats de formation professionnelle de la formation en
boulangerie/pâtisserie a été organisée pour la première fois le 13 juillet 2004. Ont participé à la
cérémonie Monsieur Alain Freynet, Chef du service de coopération et d’action culturelle de
l’Ambassade de France, Monsieur Pham Van Ngo, représentant du Ministère de l’Education et de
Formation, les représentants de la Chambre de Commerce et d’Industrie de Versailles, de la
Chambre des métiers d’Indre-et-Loire et les invités de grands hôtels et restaurants tels que le Press
Club, Sofitel Plaza, Hoa Binh, Thuy Ta… Cette cérémonie est le résultat de la coopération entre
Hoa Sua et la Chambre des métiers d’Indre-et-Loire sur la formation en Boulangerie/Pâtisserie.
For the first time, on July 13th, the graduation ceremony took place for those who gained
their professional training qualification in Pastry/Bakery training. Mr Alan Freynet, Head of
Cooperation and Culture Service of French Embassy, Mr Pham Van Ngo, representative from
the Education and Training Ministry and other honour guests from Press Club, Sofitel Plaza,
Hilton, Hoa Binh, Thuy Ta... joined us at this event. The ceremony came about as a result of
the training links which exist between Hoa Sua and the Indre et Loire Trade Chamber.
L’accord de coopération pédagogique a été signé entre l’école Hoa Sua et la Chambre des métiers
d’Indre-et-Loire en Janvier 2003 à Hanoi. Il s’agit d’un programme de 18 mois, le premier où
s’intègrent la Boulangerie et la Pâtisserie pour répondre au mieux à la demande des employeurs et
où s’applique la formation en alternance entre l’école et l’entreprise. L’alternance sera mise en
place après les connaissances de base. Les élèves sont envoyés faire des stages d’une semaine
toutes les trois semaines. Le programme fournit aux élèves des connaissances et expériences
pratiques et leur permet de connaître la culture d’entreprise. L’école espère que cette initiative
contribuera à former des professionnels actifs, expérimentés et adaptés au monde du travail.
Pendant la formation, les spécialistes français viendront trois fois par an pour examiner
l’organisation du programme, le rythme des cours, la relation avec les entreprises et travailler sur
les examens.
The cooperation agreement between Hoa Sua and the Indre et Loire Trade Chamber was
signed in January 2003 in Hanoi. The programme consists of an 18 month course, the first to
combine Pastry and Bakery together, designed to respond better to the demands of employers
by alternating the training between the classroom and the workplace. Once basic training has
been covered by the students then spend one week in every four on work placements. The
programme provides the students with technical training as well as practical experience and
enables them to gain a better understanding of life in the workplace. The School hopes that
this initiative will lead to well rounded and trained professionals experienced in and
adaptable to the world of work. During the training programme, the French specialists will
come three times a year to review the structure and organisation of the programme and the
lessons, the relations with the workplace partners and the exams.
Hoa Sua prendra en compte les commentaires des employeurs pour perfectionner le programme de
formation. Mais grâce à son expérience et le soutien des experts étrangers et des entreprises, Hoa
Sua croit au succès de ce programme.
Hoa Sua will take into full account the feedback from the employers in order to fine-tune the
training programme. However, with the School’s own experience, and the support of both the
overseas experts and the local employers, Hoa Sua is confident in the success of this initiative.
It was in 1999 as a result of a reciprocal training cooperation, that the first teachers from Hoa
Sua went to Belgium to spend time at the Ter Duinen Hotel Trade School. Taking into account
the concerns that Hoa Sua had around improving the quality of the courses provided and the
on-going care of the students, Ter Duinen worked with the school to put together a
programme to provide training back-up for the teaching staff in Belgium. The school has also
worked to promote the work of Hoa Sua and publicised our work widely in Belgium.
Dans le cadre de la coopération entre les deux écoles professionnelles, Ter Duinen a envoyé deux
étudiants faire un stage à Hoa Sua. Pendant les deux mois de leur séjour ici, les jeunes feront un
tour de toutes les classes : Boulangerie/Pâtisserie, Cuisine européenne, Cuisine asiatique et Service
de Restaurant. De telles activités seront organisées régulièrement en vue d’intensifier les échanges
et le partage des expériences. La Direction de l’école Hoa Sua aimerait présenter ses meilleurs
remerciements à l’école Ter Duinen pour son soutien fidèle en terme de matériel et de formation à
Hoa Sua.
As part of the links between the two schools, Ter Duinen has recently sent two students to
study at Hoa Sua for two months. During this time they will spend time in all the classes:
baking, cake making, European cookery, Asian cookery and Restaurant service. We
anticipate organising such exchanges on a regular basis in order to share knowledge and
expertise. The Directors of Hoa Sua School would like to thank Ter Duien once more for their
continued support material, technical and spiritural.
Une fois de plus, le Groupe des jeunes d’avant-garde de Hoa Sua a bien réfléchi pour donner
naissance à la Voix de Hoa Sua au mois de juillet 2004. Fort de l’aide des étudiants de l’École des
affaires sociales en stage à Hoa Sua, les élèves sont déjà capables de concevoir une émission de
radio (préparer le contenu et animer l’émission). Le programme est projeté tous les lundis, donnant
aux auditeurs des informations sur l’école, sur leurs études, leurs distractions, les leçons de la vie,
leurs histoires de coeur, les chansons… La Voix de Hoa Sua est devenue l’amie non seulement de
Luong, Duc, Bich, Mac… de l’équipe des organisateurs mais également de tous les élèves de Hoa
Sua.
Once again, the group of forward thinking youngsters at Hoa Sua thought long and hard
before creating ‘The Voice of Hoa Sua’ in July 2004. Backed up by the help of students from
the School of Social Affairs, who are currently on a study placement at Hoa Sua, our students
have already conceived and developed a radio programme - both researching and scripting
the content and presenting it. The show is broadcast every Monday, giving listeners
information about the school, their studies, their free time activities, the life lessons learnt,
stories of the heart, songs etc… The Voice of Hoa Sua has actually become not only the friend
of Luong, Duc, Bich, Mac and the team of organisers but also to all the Hoa Sua students.
Tu as de bons souvenirs?
Oui, beaucoup. Je ne pourrai jamais oublier les premiers cours où j’ai commencé à faire la pâte, à
goûter le pain, à faire mes premiers croissants et à attendre mes premiers produits sortir du four
pour voir s’ils sont beaux, s’ils sont bien gonflés, s’ils sont assez colorés et comment les
améliorer… C’est drôle aussi quand nous apprenons à déterminer la quantité de farine pour tel ou
tel produit… J’aime également les pauses où on peut nous reposer et causer. Je fais partie du
Groupe des jeunes d’avant-garde de l’école et nous avons souvent des activités extrascolaires. J’ai
moins participé à ces activités ces derniers temps car j’ai mes examens mais ce sont vraiment des
activités utiles et j’en ai beaucoup retiré.
Comment est-ce que tu envisages ton avenir et qu’est-ce que tu feras après tes études à Hoa
Sua?
C’est un peu trop tôt pour penser à ouvrir mon propre restaurant ou boulangerie et je sais que c’est
vraiment difficile. Donc, avant tout, je veux exercer le métier appris à Hoa Sua, gagner de l’argent
pour moi et pour ma famille. Je pense que je peux commencer par les petites choses.
Ce sont ces petites choses qui permettent aux jeunes défavorisés d’avoir une vie autonome. Et ce
que Hoa Sua essaie de faire est de les aider à réaliser leurs petits rêves… des petits rêves mais une
grande préoccupation de toute la société.
Where do you see your future and what will you do after Hoa Sua?
It’s a bit too early to be thinking about opening a restaurant or a bakery myself, and I know that this
would be quite hard anyway. So, above all else, at the moment I want to use the trade that I have
learnt at Hoa Sua and to make some money for myself and for my family. I think I'll start with some
small steps first!
These are the small things which enable under privileged young people to lead an independent life.
And what Hoa Sua tries to do is to help them to make their own small dreams come true.

1. Coopération d’amitié avec un lycée luxembourgeois
Depuis 2001, le lycée Alexis Heck spécialisé dans l’hôtellerie et la restauration a accueilli des
professeurs de Hoa Sua dans des cours de perfectionnement professionnel d’une durée d’un an. Le
premier juin 2004, les directeurs des deux écoles ont signé le Traité d’amitié entre Hoa Sua et
Alexis Heck qui laisse voir de nouvelles perspectives de coopération dans la formation entre les
deux écoles professionnelles.

1. The Luxembourg High School which extends the hand of friendship
Since 2001, the Lycée Alexis Heck, which specialises in the hotel and restaurant trade, has
welcomed teachers from Hoa Sua on their one year ‘professionals’ programme. In June 2004, the
Directors of both schools signed a ‘Friendship Treaty’ which will create new levels of cooperation
between our two schools.
3. Field trip for the Hoa Sua students to the Hilton Hotel, Hanoi
At the beginning of July 2004, the students from the Front of House Service class de la 11ème
promotion? enjoyed a field trip to the Hilton Hotel. These visits are organised to give the youngsters
a complete overview of the high level of standards which are demanded in the trade in which they
are currently being trained. The hotel staff made presentations to the students on the day-to-day
activities and roles within a major world class hotel, and took their questions. The on-going and
invaluable support of the Hilton Hotel continues to contribute significantly to the training
programme of the school. A big thanks from us all to the Hilton.
