The great thing about every single recipe here is that they are ALL dairy-free, gluten-free, and totally free of all the nonsense that usually goes into preparing chocolate for the store. But what they do have is the push for quite an intense hit of seratonin (the happy drug our body makes). So, they are faaabulous to share with folks who arent into raw. Especially the ones who have the silly backwards idea that raw foodies are suffering and dont indulge. Its so far from the truth. Its the raw goodness that has all the Flavor jam packed in it! My personal experience
I will tell you this: My situation is unique, just like yours! I have had way too much coffee in my time and also regularly took a prescribed medication for ADHD called Ritalin. It is a very strong stimulant. Between those two, I have taxed my adrenal glands quite a lot in the past. My adrenal glands have since healed quite a lot, thanks to raw food, and abstaining from coffee and ALL medications. I still, however, am sensitive to the effects of cacao or any other stimulating food. But boy do I enjoy the occasional chocolate milk, milkshake, or candy! I just make the effort to not eat it more than two days in a row (ever!) . And I dont want it too often, but when I do, I have at it with full pleasure and without an ounce of guilt!

Chocolate ~ A long-time symbol of Love and Desire, throughout the ages, chocolate has confidently established itself as an aphrodisiac.
The Aztecs may have been the first on record to draw a link between the cocoa bean and sexual desire: the emperor Montezuma was said to consume the bean in copious amounts to fuel his romantic trysts. The New York Times Chocolate also contains two chemicals (Love Potions if you will), tryptophan and phenylethylamine. One is a mistress to serotonin, involved in sexual arousal; the other is released in the brain when people fall in love. Again, Lust meets Love, Infatuation meets Romance.

The Recipe
Easy ~ not you, the recipe!
If there is one night you want to spend less time in the kitchen and more time in the bedroom, its Valentines Day. This recipe will have you do just that! Savor these with your Love and a glass of red or a flute of bubbly. Think of them as your sexual power bar. If youre planning to serve this delectable Dessert at a party or give it as a gift, I would suggest making them the day of, a few to several hours prior. They hold their shape better fresh, and they stay dry. As for me, I like to make this Dessert in advance and allow it to sit lightly covered, or refrigerate it overnight. The Strawberries will break down under the romantic influence of the Chocolate, as little beads of sugary precipitation form, making for Strawberries that taste even sweeter. The Chocolate and Strawberry flavors then meld and become more like Strawberries in syrup enveloped in Chocolate. Ahhhh makes my mouth water. If youre smart, and its as cold there as it is here, you would find your lover and take a dish of these confections straight to bed with you, eating them under that cloud of a comforter. (Please note: Cold weather is not a prerequisite for enjoying strawberries in bed, neither is a lover)..

* Chocolate-dipped Strawberries *
Recipe by Nudie Foodie
Of course theyre great for the Day of Love, but you can indulge yourself with these yummies any day of the year! And with the notes Nudie made on everything chocolate (in her usual Nudie style!), your mouth will water before you even grab your ingredients!
INGREDIENTS *1 Large container (1 lb.) Fresh Strawberries *1/2 cup chopped Chocolate/Cacao Paste *1 Tbsp. Coconut Oil, liquified *1 tsp. alcohol-free Vanilla flavor *1 packet Sweet Leaf Stevia and/or 1 Tbsp. Agave, Coconut Nectar, or Raw Honey* *pinch Himalayan Pink Salt *1/2 tsp. Lecithin powder (optional, used to thicken and emulsify) *Note: Honey is not a vegan product.

INSTRUCTIONS 1. Rinse Strawberries and place on a clean towel to dry thoroughly. Line a baking
sheet with parchment or wax paper (a dehydrator tray with teflex also works). 2. Finely chop the Chocolate/Cacao Paste and place in a low dish. Place dish in the dehydrator, set at 105 degrees. If needed, the Coconut Oil may be placed in the dehydrator to liquify. Allow Paste to melt completely, stirring occasionally to distribute heat. 3. Remove melted Chocolate and whisk in liquified Coconut Oil, Vanilla, Stevia/Sweetener, and Pink Salt. Begin with only 1 packet of Stevia or 1 Tbsp. Agave/Coconut Nectar/Honey, and sweeten to desired taste. I typically use only 1 packet of stevia, as I crave a truly bitter Chocolate. 4. Dip the strawberries in the melted Chocolate (before it cools!), leaving the top of the strawberry and stems bare (allowing a little sexy strawberry shoulder to show). 5. Place each dipped Strawberry, one at a time, on lined baking sheet. Spread approx. 1 inch apart. 6. Allow Strawberries to cool completely and harden for a few hours at room temperature. For longer storage, keep refrigerated. 7. Savor and Enjoy!
TIP
If youve misjudged your Chocolate-to-Strawberry ratio and therefore have leftover Chocolate Dip, place back in the dehydrator for a few minutes while you scurry to find anything and everything dippable... Think Chocolate-Covered (dried) Mango strips, Raisin and/or Nut Clusters, Pineapple, Papaya strips, Blueberry Chocolate Clusters need I go on?

INSTRUCTIONS
1. Blend only the Brazil nuts, water, and ice until smooth. 2. Separate the liquid from the pulp* using a nut milk bag*. 3. Add the remainder of the ingredients and blend again.

Ideally, Brazil nuts would be soaked for 8-12 hours and then rinsed prior to use in any recipe. If you want to keep soaked nuts on hand so youre always ready, just keep in mind that they should not be stored in the fridge for more than 3 days.
You can special order these from raw food distributors, but thats not always simple or affordable. Two very useful substitutions include a 1-gallon paint strainer bag (which will look just like a nut milk bag) or cheesecloth. The goal is simply to separate the pulp from the milk. You can even do without and simply drink less smooth milk!
Before you even think about wasting the pulp, let me tell you a secret... you can use it! Here is a simple dish to pull together: mix the pulp with some fresh herbs, olive oil, spices, just a touch of some kind of sweetener, enough salt to pull the flavors together, then serve this on top of cucumbers topped with paprika as a crudite. Play, play, play!
VANILLA SEEDS
Please do not pay full price for vanilla! Its so affordable in bulk. If you go onto the uncooking101 website, click ingredients on the left then click on vanilla for purchase info & how to open the bean.
DATE PASTE
Soak 1 cup of smooshed, seeded dates until soft. Blend with soak water and as much water as needed to turn over. Stores for 1 week and Voila! you have an excellent and totally natural sweetener.

A recipe to make your own unique chocolate creations & have fun along the way...
1.You get some raw cacao butter and melt it in a dehydrator at 115 degrees. (It'll take
awhile, just put some music on and come back later.) If you cant drink it (dont drink it!), its not ready. Just put on some rockabilly and groove on out if necessary. 2. When youve rocked and melted enough, add an equal amount of powder (including mostly raw cacao powder, and small amounts of mesquite, spices like chili powder or cinnamon, maca and/or lucuma). 3. Whip it. Whip it good. You could use a fork or even a whisk if you have such things in your kitchen. Act like you're making the batter for cake. Get it nice and smooth. 4. Finally, add some coconut nectar or raw agave nectar to taste. I put about 1/4 of the total amount of powder + cacao butter, but seriously, taste test! Have fun with it! And dont forget to break some rules. LICK THE BOWL! (Or else it wont taste right!) 5. Your last step is to pour the liquid into some chocolate molds or even rubber ice trays. Now stick this in the freezer for 15-20 minutes (or until solid) or even in the fridge for 30-40 if you don't have much freezer space.

Oh my! Let me just tell you this one thing! Carlos and I spent MAX 3 minutes preparing it, then as soon as we tried it, he was busy plotting away on we could bottle it and sell it. So we could become FILTHY RICH because its that good. Hes such a kook. But seriously, its SO EASY! And SO GOOD! I hope you will enjoy a glass of this yummy treat. If not for the taste and ease, drink it for the selenium boost. You will find selenium in only a few raw foods, so its exciting that Brazil nuts in particular are INCREDIBLY rich in selenium! Selenium helps with joint health and can be a real nightmare to be deficient in. So, CHEERS to good health and happy joints!
