So glad you landed this ebook. I want to tell you FOUR things, then well going to jump right in like Charlie & the Chocolate Factory! 1/ Not everyone thrives with cacao. (Bummer.) You can read on that in a couple pages. 2/ This ebook was totally made for you. ANY questions at all, or just to say hello to me or Nudie, come find us on Facebook (or me on Twitter). :-) 3/ Speaking of, a very special thanks to Nudie Foodie for contributing her awesome sauce article and recipe. Ive tried to make it extra clear when its a Nudie item. (You can assume everything else is from me.) 4/ Chocolate is fun. Its like stirring magic potions and whatnot. So have FUN with it! I truly hope you enjoy this!

jumping into... the easiest intro to raw chocolate ever


So, any chocolate base is made up of pretty much 3 things: 1/ Cacao powder or carob powder ~ for the chocolate flavor 2/ Cacao butter or coconut oil ~ for the chocolate consistency 3/ Some liquid sweetener like agave or coconut nectar ~ to zap the natural bitterness And then, of course you would be crazy not to also include a pinch of sea salt and some fresh vanilla in there too. With carob, you will likely not need as much sweetener, but I like to include a bit of cinnamon. It rounds out the flavor of carob really nicely, and cacao too for that matter! An important piece to note is that the cacao butter and coconut oil must be liquified in a dehydrator. Alternatively, you can melt it by putting a metal bowl (filled with the butter or oil) over a pot of hot water. As soon as its liquid, you will mix in the other ingredients. Once you begin, you are in a race against time as the chocolates will harden at room temperature! Good thing is, if you take too long, you can stick your mix in the dehydrator and wait for it to become liquified again, even already mixed up. A warning for ya: Chocolates will probably melt if you ship them. (I learned that the hard way. Believe me. You cant just throw some chocolate in the mail!) The reason they will melt is because chocolate is solid at about room temp or colder and melts above that.

If you dont live in a particularly warm climate, you can keep your chocolates covered outside of the fridge. Otherwise, they are best kept in the fridge so they dont lose their shape. I personally prefer not to have them super cold because then they dont melt in my mouth the same way. So keep all of that in mind!

The great thing about every single recipe here is that they are ALL dairy-free, gluten-free, and totally free of all the nonsense that usually goes into preparing chocolate for the store. But what they do have is the push for quite an intense hit of seratonin (the happy drug our body makes). So, they are faaabulous to share with folks who arent into raw. Especially the ones who have the silly backwards idea that raw foodies are suffering and dont indulge. Its so far from the truth. Its the raw goodness that has all the Flavor jam packed in it! Lets look at the potential risks & benefits, shall we?
I know, starting the chocolate ebook ~ with all the love and seratonin and tastiness, with potential benefits and risks?! Dont worry, everything else will be all love, chocolate, and cream puffs. (Except the cream puffs part!) So heres the deal with chocolate. In the raw food world, you will find heaps and heaps of varying opinions. No one agrees. Im going to share a few quotes from people I trust (or at least, who are well-known... I wont tell you which one, but to be totally honest with you, one of these folks advice gets an extra few grains of salt from me!). All of the following quotes come from raw chefs & lifestyle educators: Ani Phyo, author of Anis Raw Food Kitchen says... The littlest bit of cacao, I can't handle it very well. But I think it's just a personal thing. I know people who do it every day and they're fine. I know other people who can't do it anymore, who may be used to do it.. Some people do it occasionally. I think it is a personal thing. Cynthia Perkins, M.Ed. says... The chemicals in raw cacao are actually much more potent than processed chocolate, because they are presented to us in raw form. Its also high in oxalic acid which inhibits absorption of calcium. David Wolfe says... They [ingredients found in chocolate] allow our neurotransmitters like serotonin to remain in our bloodstream longer that usual. This makes us younger. Philip McCluskey & Heather Pace say... You heard about all those antioxidants chocolate supposedly has, right? Unfortunately, unless you love the taste of bitter dark chocolate, youre not getting any of the benefits. Thats because when milk protein is added to cacao, it binds the antioxidants and makes it impossible for your body to absorb them. What good are antioxidants that your body cant even use? Chocolate also contains addictive substances particularly caffeine that have the power to alter your mood. And on top of that, it creates acidity in the body, whereas carob is naturally alkalizing.

Jeremiah Smith, Healthy Nomad Apart from promoting good mental or emotional states, cacao is also beneficial for our cardiovascular system. Cacao has polyphenols which is similar antioxidants found in red wine. According to a research, cacao beans help in increasing good cholesterol (HDL) levels. The studies have also proved that cacao beans reduce the risk of blood pressure.

What does this all mean, Eva?! Who do I listen to?


Yourself. Yup, thats who. YOU! Heres why: We are all different. Our bodies, our genetics, our medication histories, our diet histories, our lifestyles, our exercise regimens, all different. How can David Wolfe or Heather Pace or any of us, tell you what is best for YOU?! We can learn from each other, yes, but if you indulge and feel fabulous without a crash, how can I tell you it is bad for you? Or if you feel awful, how can I say it is good for you? If I believed cacao to be harmful without benefit, I wouldnt share this ebook with you! But its still important, especially for people with weak adrenals, this may not be good daily.

My personal experience
I will tell you this: My situation is unique, just like yours! I have had way too much coffee in my time and also regularly took a prescribed medication for ADHD called Ritalin. It is a very strong stimulant. Between those two, I have taxed my adrenal glands quite a lot in the past. My adrenal glands have since healed quite a lot, thanks to raw food, and abstaining from coffee and ALL medications. I still, however, am sensitive to the effects of cacao or any other stimulating food. But boy do I enjoy the occasional chocolate milk, milkshake, or candy! I just make the effort to not eat it more than two days in a row (ever!) . And I dont want it too often, but when I do, I have at it with full pleasure and without an ounce of guilt!

If you are sensitive to chocolate... guess what?!


There is an alternative. ALL cacao powder in these recipes can be replaced with finely ground carob, which is different but both rich and indulgent. My friends Heather Pace & Philip McCluskey wrote a carob-specific eBook that can be found @ loverays.com/carob

These Chocolate-Dipped Strawberries are already a pairing of light and simple Strawberries meet decadent and complex Chocolate, but add Valentines Day (a celebration of the fluttering of two Hearts) to the mix, and youve got a recipe for one Steamy Night!

Chocolate ~ A long-time symbol of Love and Desire, throughout the ages, chocolate has confidently established itself as an aphrodisiac.
The Aztecs may have been the first on record to draw a link between the cocoa bean and sexual desire: the emperor Montezuma was said to consume the bean in copious amounts to fuel his romantic trysts. The New York Times Chocolate also contains two chemicals (Love Potions if you will), tryptophan and phenylethylamine. One is a mistress to serotonin, involved in sexual arousal; the other is released in the brain when people fall in love. Again, Lust meets Love, Infatuation meets Romance.

Strawberries ~ The perfect little Heart, an edible Valentine.


Strawberries are also touted to be an aphrodisiac. The fruit is associated with the Goddess Venus. As legend has it, when Adonis died, Venus wept tears of Strawberries, as they dropped to the earth. The plentiful tiny seeds have since been thought to be a symbol of fertility. The French held the tradition of serving Strawberries to newlyweds to stimulate their sexual appetites before their wedding night. It is said that if the unique double Strawberry is shared between two, they will fall in Love. One might consider Strawberries to be the mistletoe of Valentines Day.

The Recipe

If there is one night you want to spend less time in the kitchen and more time in the bedroom, its Valentines Day. This recipe will have you do just that! Savor these with your Love and a glass of red or a flute of bubbly. Think of them as your sexual power bar. If youre planning to serve this delectable Dessert at a party or give it as a gift, I would suggest making them the day of, a few to several hours prior. They hold their shape better fresh, and they stay dry. As for me, I like to make this Dessert in advance and allow it to sit lightly covered, or refrigerate it overnight. The Strawberries will break down under the romantic influence of the Chocolate, as little beads of sugary precipitation form, making for Strawberries that taste even sweeter. The Chocolate and Strawberry flavors then meld and become more like Strawberries in syrup enveloped in Chocolate. Ahhhh makes my mouth water. If youre smart, and its as cold there as it is here, you would find your lover and take a dish of these confections straight to bed with you, eating them under that cloud of a comforter. (Please note: Cold weather is not a prerequisite for enjoying strawberries in bed, neither is a lover)..

Recipe by Nudie Foodie
Of course theyre great for the Day of Love, but you can indulge yourself with these yummies any day of the year! And with the notes Nudie made on everything chocolate (in her usual Nudie style!), your mouth will water before you even grab your ingredients!

INGREDIENTS *1 Large container (1 lb.) Fresh Strawberries *1/2 cup chopped Chocolate/Cacao Paste *1 Tbsp. Coconut Oil, liquified *1 tsp. alcohol-free Vanilla flavor *1 packet Sweet Leaf Stevia and/or 1 Tbsp. Agave, Coconut Nectar, or Raw Honey* *pinch Himalayan Pink Salt *1/2 tsp. Lecithin powder (optional, used to thicken and emulsify) *Note: Honey is not a vegan product.

EQUIPMENT *Parchment or wax paper *Dehydrator *Whisk

INSTRUCTIONS 1. Rinse Strawberries and place on a clean towel to dry thoroughly. Line a baking

sheet with parchment or wax paper (a dehydrator tray with teflex also works). 2. Finely chop the Chocolate/Cacao Paste and place in a low dish. Place dish in the dehydrator, set at 105 degrees. If needed, the Coconut Oil may be placed in the dehydrator to liquify. Allow Paste to melt completely, stirring occasionally to distribute heat. 3. Remove melted Chocolate and whisk in liquified Coconut Oil, Vanilla, Stevia/Sweetener, and Pink Salt. Begin with only 1 packet of Stevia or 1 Tbsp. Agave/Coconut Nectar/Honey, and sweeten to desired taste. I typically use only 1 packet of stevia, as I crave a truly bitter Chocolate. 4. Dip the strawberries in the melted Chocolate (before it cools!), leaving the top of the strawberry and stems bare (allowing a little sexy strawberry shoulder to show). 5. Place each dipped Strawberry, one at a time, on lined baking sheet. Spread approx. 1 inch apart. 6. Allow Strawberries to cool completely and harden for a few hours at room temperature. For longer storage, keep refrigerated. 7. Savor and Enjoy!

TIP

If youve misjudged your Chocolate-to-Strawberry ratio and therefore have leftover Chocolate Dip, place back in the dehydrator for a few minutes while you scurry to find anything and everything dippable... Think Chocolate-Covered (dried) Mango strips, Raisin and/or Nut Clusters, Pineapple, Papaya strips, Blueberry Chocolate Clusters need I go on?

This recipe is so simple and yet really hits the spot when you are looking for the kind of treat in a glass that will bring you back to childhood. But better. Cheers!

INGREDIENTS

1 cup Brazil nuts 2 cups water 1 cup ice 2 T ground cacao 1/4 cup coconut nectar or date paste* 1 vanilla bean Pinch sea salt

EQUIPMENT
Blender Nut milk bag*

*Find tips on the next page for nut milk bags, the leftover pulp & date paste.

INSTRUCTIONS

1. Blend only the Brazil nuts, water, and ice until smooth. 2. Separate the liquid from the pulp* using a nut milk bag*. 3. Add the remainder of the ingredients and blend again.

FUN SERVING IDEAS
*Drizzle chocolate sauce (see the next page for a recipe!) along the edges of the glass before pouring your milk. *Add some cinnamon to the recipe, and serve in a short glass with a cinnamon stick. *Add (raw!) cream to the top using a pastry bag, and put a cherry and drizzled chocolate on top of the cream. *Add colorful glass straws and an umbrella on top. To throw even more of an elixir feel into the mix, add small ice cubes.

BRAZIL NUTS, SOAKED?

Ideally, Brazil nuts would be soaked for 8-12 hours and then rinsed prior to use in any recipe. If you want to keep soaked nuts on hand so youre always ready, just keep in mind that they should not be stored in the fridge for more than 3 days.

NUT MILK BAG - AN ALTERNATIVE

You can special order these from raw food distributors, but thats not always simple or affordable. Two very useful substitutions include a 1-gallon paint strainer bag (which will look just like a nut milk bag) or cheesecloth. The goal is simply to separate the pulp from the milk. You can even do without and simply drink less smooth milk!

NUT PULP - WHAT TO DO WITH IT

Before you even think about wasting the pulp, let me tell you a secret... you can use it! Here is a simple dish to pull together: mix the pulp with some fresh herbs, olive oil, spices, just a touch of some kind of sweetener, enough salt to pull the flavors together, then serve this on top of cucumbers topped with paprika as a crudite. Play, play, play!

VANILLA SEEDS

Please do not pay full price for vanilla! Its so affordable in bulk. If you go onto the uncooking101 website, click ingredients on the left then click on vanilla for purchase info & how to open the bean.

DATE PASTE

Soak 1 cup of smooshed, seeded dates until soft. Blend with soak water and as much water as needed to turn over. Stores for 1 week and Voila! you have an excellent and totally natural sweetener.

Isnt it high time you invited your girlfriends over to play in the kitchen? Why not have a girls night with old music, laughter, child-like enthusiasm, & even... [ fill in the blank here! ]

PLAY TIME WITH CHOCOLATE!

A recipe to make your own unique chocolate creations & have fun along the way...

1.You get some raw cacao butter and melt it in a dehydrator at 115 degrees. (It'll take

awhile, just put some music on and come back later.) If you cant drink it (dont drink it!), its not ready. Just put on some rockabilly and groove on out if necessary. 2. When youve rocked and melted enough, add an equal amount of powder (including mostly raw cacao powder, and small amounts of mesquite, spices like chili powder or cinnamon, maca and/or lucuma). 3. Whip it. Whip it good. You could use a fork or even a whisk if you have such things in your kitchen. Act like you're making the batter for cake. Get it nice and smooth. 4. Finally, add some coconut nectar or raw agave nectar to taste. I put about 1/4 of the total amount of powder + cacao butter, but seriously, taste test! Have fun with it! And dont forget to break some rules. LICK THE BOWL! (Or else it wont taste right!) 5. Your last step is to pour the liquid into some chocolate molds or even rubber ice trays. Now stick this in the freezer for 15-20 minutes (or until solid) or even in the fridge for 30-40 if you don't have much freezer space.

1 1/2 cups ice 2/3 cup Brazil nuts, soaked if possible 3 large bananas or 5 banana maa 1 cup water 2 Tablespoons cacao or carob 1 teaspoon cinnamon (optional) Pinch sea salt

Blend well, and youre done. (Yes, really, thats it. No need for freezing bananas or straining nut milk!)

Oh my! Let me just tell you this one thing! Carlos and I spent MAX 3 minutes preparing it, then as soon as we tried it, he was busy plotting away on we could bottle it and sell it. So we could become FILTHY RICH because its that good. Hes such a kook. But seriously, its SO EASY! And SO GOOD! I hope you will enjoy a glass of this yummy treat. If not for the taste and ease, drink it for the selenium boost. You will find selenium in only a few raw foods, so its exciting that Brazil nuts in particular are INCREDIBLY rich in selenium! Selenium helps with joint health and can be a real nightmare to be deficient in. So, CHEERS to good health and happy joints!

So, here goes, some things about me in regards to raw food... I didnt really plan to be raw until one day when I had enough of the ulcers and other (embarrassing!) health issues I dealth with. She has the most beautiful collection of food photography that I have ever seen, hands down, even in comparison to all the fancy-pants recipe books out there. You cannot NOT want to eat the screen with her photos. Its absurd. I dont know how she does it.
