Expt subjects:(N=9; BMI=25; non-diabetic; 29-38y) fasted overnight, came to clinic between 8-9 AM. Mixed meals: Egg muffin, sausage, muffin sandwiches, 2 hash browns (81g CHO, 51g fat; 32 g protein=910 kcal) finished in 15 min. Control subject: (N=8; BMI=24.3; 26-50 y) given 300ml water Blood samples: 1, 2, 3 h after the meal.

Ergothioneine
Although ET was isolated a century ago, its physiologic function has not been clearly established.
Foods with highest concentrations of ergothioneine are mushrooms, kidney, liver, black and red beans, and oat bran. (Ey J, 2007)
Ergothioneine (2-mercaptohistidine trimethylbetaine) is a naturally occurring amino acid analogue found in up to millimolar concentrations in several tissues and biological fluids.
Ergothioneine inhibits oxidative stress- and TNF-a-induced NF-kB activation and interleukin-8 release in alveolar epithelial cells.
