even though many foods are available year round, we still adapt our cooking for each season and incorporate the seasonal vegetables into our menus. Spring vegetables are light and refreshing and quick to cook so meal preparation is much faster, they are perfect for sauting and broiling and make wonderful soups but, to experience the flavors in greater depth, steaming is definitely the method of choice. its easy to steam on the cooktop or in the microwave but if you want to incorporate steam into your everyday cooking and have the advantage of a second convection oven, then the Thermador convection Steam oven just might be the tool for you.

Convection Tips for Spring Meals Convection is the ideal mode for roasting meats, fish and vegetables, remember to take into account the resting and carving period when roasting meats and time your side dishes to be ready when the meat is ready to serve. ! roast Lamb // a semi-boneless roast is the ideal choice for even roasting and carving. rub minced garlic and rosemary into the meat with some kosher salt and a little vegetable oil a few hours before cooking for added flavor. Place the meat on a rack in a shallow pan and roast it for 15 minutes at 400 in the Convection roast mode, reduce the temperature to 350 and cook for another 4555 minutes, depending on the degree of doneness you prefer.

THErMadOr COnvECTiOn STEaM OvEn

! baked Ham // a cured or smoked ham only needs to be heated through before the glaze is added and Convection keeps it incredibly moist. Place a 5-6lb bone-in ham on a rack in a shallow pan and heat for an hour uncovered in Convection 350. Brush the ham with your favorite glaze and cook for another 15-20 minutes.

Spring Vegetable Medleys


Snap Peas, Asparagus, Leeks & Mint Cut the asparagus into 3" pieces, and the leeks into 1/2" thick rings and toss with the snap peas together with a light coating of olive oil. Spread onto a rimmed baking sheet and cook in Convection 350 for 15 minutes. Toss with chopped fresh mint before serving.

Roasted Red Creamer Potatoes with Kale & Corn Toss the potatoes in some olive oil and kosher salt, spread onto a rimmed baking sheet and roast in Convection or Convection roast 350 for 15 minutes, turn the potatoes and cook for another 10-12 minutes or until crispy on the edges. Toss the chopped kale and corn in a light coating of oil and spread onto a rimmed baking sheet and roast for 15 minutes, combine with the potatoes before serving. Roasted Beets & Peas with Chives Wearing disposable gloves, peel the beets and cut them into 1/8" pieces. Toss with some kosher salt and olive oil and roast on a rimmed baking sheet, Convection 350 for 25 minutes. Fold in the shelled peas and roast for another 8-10 minutes, toss with chopped fresh chives before serving. for more recipes and tips on cooking in Convection visit www.purcellmurray.com/blog

Thermador: a history in the Making.


2010 was a special year for Thermador, marking 55 years since the company revolutionized home cooking by introducing the worlds first built-in wall oven. Since then, the name Thermador has become synonymous with the modern american kitchen, thanks to forward-thinking products and the endorsement of televisions domestic heroines.

despite the name, its no surprise that Best has created another gorgeous line of cutting-edge kitchen products. The Sorpresa collection of range hoods offers a truly artistic twist on an oft-overlooked appliance. Interview with alice Medrich.


ever get the urge for something sweet and satisfying, a deliciously sinful treat that instantly puts you in a happy place? alice medrich knows all about those cravings, and her new cookbook, chewy, gooey, crispy, crunchy, melt-in-your-mouth cookies, is all about helping you hit the sugary spot, no matter your palate, no matter your dietary needs.

Medrich is a culinary pioneer, worshipped by chocoholics everywhere as a cocoa goddess shes even known as The First Lady of Chocolate, a title that, surely, comes with some pretty sweet benefits. She is credited with introducing French-inspired chocolate truffles to the united States, an initially DIy business venture that quickly outgrew her Berkeley kitchen and transformed into the beloved chain of confectionaries Cocolat. PM: Tell us about the inspiration behind and research process of Chewy, Gooey, Crispy, Crunchy, Melt-in-Your-Mouth Cookies! Medrich: I wanted to create a collection of cookies that reflected our modern culinary sensibilities and spirit of adventure, but which also included all time favorites like chocolate chip cookies and snickerdoodles and classic sugar cookies and so forth. as a result, you will find in the book, for example, my classic chocolate chip cookies, but also very cool extra large ultra thin crispy chocolate chunk cookies, as well as whole grain chocolate chip cookies anD wheat free chocolate chip cookies! Classic sugar cookies and snickerdoodles include options for garnishing with new and interesting spiced sugars (like nutmeg sugar, clove sugar, salt and pepper sugar, garam masala sugar, etc.) instead of the usual plain or cinnamon sugar. Ive done interesting new things

with meringues, with sesame seeds (which I love), with rose and orange flower waters, cacao nibs (of course) and even freeze dried fruit. The collection is fun and quirky and interesting, but still very, very accessible. PM: What do you think has changed about the American palate since you first started making truffles? Medrich: We enjoy flavors and ingredients from all over the world: herbs and spices and cheeses; interesting grains; all kinds of raw sugars, etc. We used to be able to list our basic baking ingredients and flavors on two hands (flour, sugar, butter, eggs, cream, chocolate, lemon, vanilla, cream cheese, and cinnamon). PM: What is your ultimate comfort dessert? For example (speaking of cookies), my mothers chocolate chip cookies are like bites of nostalgia, and they always hit the spot. I make them whenever I miss her or whenever Im feeling down. Do you have a dessert that serves that purpose? MEDriCh: This is always a hard question, and I dont have just one ultimate anything. But let me just say that sometimes its as simple as a really good chocolate pudding made with really good natural cocoa powder (like Scharffen Berger) and great chocolate and only enough cornstarch to do the job. purcell murray PM: Can you please describe a particular recipe success story, and a time that you maybe had to try, try again with a technique or an ingredient? Medrich: I am the queen of trying things again and again. I am always interested in what will happen if. even if a recipe tastes good, I am apt to wonder, What if I tried a little more or this or a little less of that, or what if I melt the butter instead of creaming it? years ago, testing shortbread recipes, my assistant and I learned that we liked using melted butter instead of creamed butter or cold butter. The only way to learn this was to make several samples and taste them side-by-side. at the same time we tested shortbread baked fresh versus shortbread baked after the dough had rested two hours, four hours, and over nightyou can imagine how many batches it took to learn all of this! Then, sometime later I decided that baking the shortbread twice (kind of like biscotti) improved the results even more. Thus: Twice Baked Shortbread! Similar testing took place for lots of recipes, which is why you will find some recipes that call for melted butter that you might not expect, and lots of recipes in which I recommend resting the dough overnight if possible. and these examples are just the tip of the iceberg! PM: Who are your kitchen heroes? Personal heroes? Medrich: Julia Child, the late Barbara Tropp, Shirley Corriher, and rick Bayless, to name a few. My father is a personal hero. My daughter too! PM: What would people be surprised to learn about you? Medrich: I most often prefer savory food to sweets!

ultrathin chocolate chunk cookies


Makes fifteen 5-inch cookies.

ingredients
1 1/3 cups (6 ounces) unbleached all-purpose flour

10 tablespoons (1 1/4 sticks) unsalted butter,

/ cup (1.5 ounces) quick rolled oats / cup (3.5 ounces) granulated sugar / cup (1.75 ounces) packed dark brown sugar 2 tablespoons plus 1 teaspoon (2 ounces) light corn syrup 2 tablespoons whole milk

together thoroughly with a whisk. In a large bowl, whisk together the melted butter, oats, sugars, corn syrup, milk, and salt. Mix in the flour mixture. If the batter is warm from the butter, let it cool before adding the chocolate. Stir in the chocolate chunks. If possible, let the dough rest for at least several hours at room temperature or (better still) overnight in the fridge. The rest makes for an especially crisp and extra-flavorful cookie! Divide the dough into 15 equal pieces (each a scant 1/4 cup or about 1.75 ounces). Lay out 3 sheets of aluminum foil, cut to fit your cookie sheets, on the counter. arrange 5 pieces of dough (4 in a square and 1 in the center) well apart on each sheet of foil, remembering that the cookies will spread to 5 inches. With your fingers, flatten each piece of dough until it is about 3 1/2 inches in diameter. Slide two of the sheets onto baking sheets. Bake for 20 to 25 minutes, until the cookies are thin and very brown. If they are too pale, they will not be crisp. rotate the pans from top to bottom and front to back halfway through the baking time to ensure even baking. Slide the foil with cookies onto racks to cool completely before removing the cookies from the foil. repeat with the third batch you can even slide the next foil and cookie dough onto a hot baking sheet as long as you put the pan in the oven immediately. Cool the cookies completely before stacking or storing. May be kept in an airtight container for at least 3 days.
