(Frozen Dough Division) Dofreeze, a Danish joint venture fast moving baking company in the region. It involves in the manufacturing of cake products like Swiss Rolls, Muffins, Pound Cakes and the state of the art frozen dough products like Pre-Prooved frozen Croissants, Puff pastry products and frozen Paratha with maintaining highest quality,hygiene & food DOFREEZE L.L.C. its safetystadards at manufacturing facility & also hasthe HACCP certification. Responsibilities: Position: The team leader for production system Responsible of the whole Frozen Dough Division managing raw material, production as well as finished product storage and dispatch. Development of procedures for the department (SOP). Worked as HACCP Team Member. Continual process development. Improving the process to achieve quality through introduction of cost effective methods. New product development. Evaluation and registration of raw material supplies and maintain a database. Development of specifications for raw material and packaging material.

Research paper published in the Turkish Journal of Biology (ISSN 1300-0152) with the topic of; Effect of Carboxy Mmethyl Cellulose and Gum Arabic on the stability of frozen dough for the bakery products. Turk. J. Biol. (29) 237-241. Another Research paper for the Frozen Dough Tech, published in the journal of Food Science & Technology with topic of Rheological and storage effect of hydrophillic gums on the quality of frozen dough pizza. Food Sci. Technol. Res. 13 (2), 96-102.
Research Experience:
I did my research project for my MSc(Food Tech.) thesis with the topic Effect of Carboxy Methyl Cellulose and Gum Arabic on the Stability of Frozen Dough for Bakery Products.
