Kothimeera /coriander rice

Ingredients:1 cup raw rice 1 bunch of coriander leaves Green chilies 3 grated coconut 3 tspns grated carrot 3 tspns green peas 1/4th cup Salt to taste Seasoning:oil/ghee 2 tspns cumin seeds 1 tspn (jeelakarra) chana dal 1tspn (pachi sanaga pappu) urad dal 1 tspn (minapappu) Preparation:Cook the rice normally. After cooking spread the rice on a plate so that it gets cool down (Now start the other preparations) Chop the coriander and grind it to paste along with grated coconut and green chillies..add little water to make it to paste Heat the frying pan with two tspns of oil /ghee When the oil is hot enough reduce the flame to sim -- medium and add all the seasoning ingredients and saut (meaning stir fry) till the chana dal turn little dark..Now add the shredded carrot and green peas and saut for 10 seconds. Now add the coriander paste and enough salt..saute for one minute till the raw smell of the coriander disappears. Add the cooked rice ..mix it well ..reduce the flame to sim and allow it to cook for 5 minutes..later adjust the salt if necessary and off the flame. We can add lemon juice while having this rice if we like

Quick egg fried rice


This quick version of egg fried rice is easy and tasty onei used to make this dish when i have no time to prepare rice n curry to lunch boxUsually fried rice consists of different kinds of sauces like soya sauce n al..i didn't use any sauce here except redchilli sauce/bell pepper sauce to get the spiciness to the dish. Ingredients:Cooked rice 1 medium sized bowl full Eggs 2 green peas 1/4 cup one carrot (very finely chopped into small pieces) green chillies (2 chopped finely) salt to taste pepper sauce 1tspn oil 3tspns

Preparation:Heat the oil in the skillet 2. When the oil is hot enough add the chopped green chillies,chopped carrot and green peas and saut for 3 to 4 minutes and break the eggs in the skillet..saut the egg yolk well by stirring the spatula well so that the eggs will be broken into small pieces and cooked..here we need as mall piece of eggso we need to separate the the big piece with the spatula while sauting..saut till the egg is cooked..now add cooked rice to it and also add enough salt,little pepper powder and pepper sauce and mix it welllet it fry for 5 to 7 minutes and off the flame..

Veg pulav is a quick , easy and tasty rice dish..this can be made in rice cooker very well..even the bachelors can make this dish easily Ingridients:rice 2 cups (basmati rice proffered)

cloves cinnamon bay leaves d javitri (n what ever masala ingredients u have..adjust the amount of garam masala ingredients to ur taste n amount of rice cook) Preparation:1. wash rice n soak in water for 15 minutes. 2. Chop all the vegetables: chop the onions and green chillies into long slices,peel of the potato n chop into medium cubes,chop the carrot into long n thin slices to give good look. 3 Heat ghee in a frying pan..when it is hot enough add whole masala ingredients and saut for half minute and add chana dal and cashews and saut till cashews turn little brown in color..Now add chopped green chillies and onions and saut for 1 minute..now add all the vegetables and let them saut for 2 minutes and add washed and soaked rice with out water and stir well..let it remain for 3 to 4 minutes( so that the rice will not become sticky after cooking) 4. Now transfer all these to rice cooker or other cooking vesseladd water to rice in the ratio of 1:1 1/2 ( for one cup rice add 1 and half cup of water).Add cumin powder,coriander powder and salt..also add chopped coriander leaves in the cooker and let it cook till the rice is done.. 5. Serve hot with Raita/aloo kurma /or with any nonveg curry
