INDANG: Upland Market Center The operation and continuous expansion of the public market and the full

operation of the towns slaughterhouse have gained recognition for Indang as an Upland Market Center of Cavite. A proposed vegetable section and the completion of the wet section building are some of the projects undertaken by the municipal government to increase economic activities in Indang. The town further aims to capitalize on its rich agricultural lands and numerous springs and to direct Indangs development to becoming the vegetable center of Cavite. For these reasons, the municipality plans to establish good farm to market roads to facilitate transport of goods and services. Indang also tries to address its solid waste management by the provision of a temporary dumpsite. The protection of the towns natural resources and the development of tourism and recreational centers are likewise encouraged.

Ingredients for puto 2 cups all purpose flour 1.5 cups fresh milk 1 tbsp plus 1.5 tsps baking powder 1/2 cup sugar 1/4 tsp. iodized salt cheese as desired 1/16 powder color if desired

Methods 1. Combine sugar, all-purpose flour, BAKING POWDER and IODIZED SALT. Dissolve POWDER COLOR in milk and add to dry ingredients. Beat until well incorporated. 2. Prepare muffin pans or puto molds greased with FERNA BUTTINA BUTTER SUBSTITUTE. Pour the mixture into the puto molds, top with strips of cheese and steam for 30-40 minutes. Ingredients for Kutsinta 1 1/2 cup rice flour 1/2 cup all-purpose flour 1 cup brown sugar 3 cups water 1 1/2 tsp lye water 2 tsp anatto seeds grated coconut

Methods Boil water for the steamer. In a bowl, blend all the ingredients except grated coconut. Mix until smooth and free from lumps. Strain. Half-fill small muffin pans. Steam for 10-20 minutes. Cool for 5 minutes then remove from the pans. Serve with grated coconut

Ingredients

2 1/2 cups Glutinous Rice 4 cups Coconut Milk(or 1 can coconut milk plus enough water to make 4 cups) 3/4 cup Sugar TOPPING

1 can Coconut Cream or 1 1/2 cups Kakang Gata 250 grams Brown Palm Sugar or Dark Brown Sugar Banana Leaves, heated Vegetable or Canola Oil

Methods Dissolve the sugar in the coconut milk and put in a pot. Wash the glutinous rice and pour into the coconut milk and sugar mixture. Bring to a boil, then turn the heat down to simmer for about 15-20 minutes or until the liquid is fully absorbed by the rice. On a separate pan over medium heat, put the Coconut cream and Palm sugar and cook stirring continuously until the liquid has reduced in half. Assemble the Kalamay in a baking dish. Place the banana leaves at the bottom, and brush with oil. Spread the cooked sweet rice onto the leaves and flatten evenly. Spread the topping onto the sweet rice and bake on a 350 degrees F, pre-heated oven for 20 25 minutes. Cool for 30 minutes before serving.
