Chicken Lettuce Wrap

Filled with chicken, mushrooms, pear and carrots, these wraps are both healthy and yummy. The hoisin sauce will give them delicious Asian flair

Chicken Lettuce Wraps

Ingredients

1 pound boneless skinless chicken breasts, cubed 2 tablespoons olive oil 1 small onion chopped 4 cloves of garlic minced cup chopped fresh mushrooms 1 cup fresh pear fruit 2 tablespoons reduced-sodium hoisin sauce 1 cup shredded carrots 6-10 Iceberg lettuce leaves 1/3 cup sliced almonds, toasted

Directions

In a large nonstick skillet cook chicken in 1 tablespoon olive oil for 3 minutes; drain. Add the onion, garlic, mushrooms and pear cook 4-6 minutes longer or until chicken is no longer pink. Add the reduced-sodium hoisin sauce and shredded carrots. Spoon onto lettuce leaves; sprinkle with almonds. If desired, fold sides of lettuce over filling and roll up.

Mushroom- are a good source of B vitamins, such as riboflavin, niacin and pantothenic acid, and the essential minerals, selenium, copper and potassium. Fat, carbohydrate and calorie content are low, with absence of vitamin C and sodium. 4. Carrot- Carrots are rich in Vitamin A for good vision and also rich in dietary fiber, antioxidants, and minerals.

5. Lettuce- lettuces contain antioxidants and vitamin K. Lettuces are considered green leafy vegetables which are usually high in Magnesium. It has been discovered from studies that a diet with low Magnesium has a high possibility for blood pressure to rise. 6. Almonds- Are rich in dietary fiber, B vitamins, essential minerals and monounsaturated fat, one of the two "good" fats which potentially may lower LDL cholesterol.

7. Olive Oil- rich in monounsaturated fats helps in reduction in the risk of coronary heart disease.
