Rice bran oil ,also known as rice bran extract is the oil from the germ and inner husk of rice. he bran fraction, which includes the germ or embryo in most commercial milling operations, represents only about 8% of paddy weight but contains about three-fourths of the total oil .Rice bran oil offers several unique properties that make it very interesting as a specialty oil markets. It has a very appealing nut-like flavor and once extracted is very stable with good fry-life. The fatty composition of rice bran oil is as follows Fatty acid Myristic acid Palmitic acid Stearic acid Oleic acid Linoleic acid -Linolenic acid Percentage 21.5% 21.5% 2.9% 38.4% 34.4% 2.2%
It is popular as a cooking oil in several Asian countries, including Japan and China.. It is notable for its high smoke point of 213 C (415 F) and its mild flavor, making it suitable for high-temperature cooking methods such as stir frying and deep frying. a. Frying Rice bran oil exhibits excellent frying performance and contributes a pleasant flavor to the fried food. It possesses good storage stability and fry life without hydrogenation. b. Stir-Frying Rice Bran Oil is also a great choice for use in stir-frying. While its delicate, nut-like character complements the natural flavor of stir-fried meats, sea foods and vegetables, it never overpowers them. An important component of rice bran oil is the antioxidant -oryzanol, at around 2% of crude oil content. It is relatively high in fractions of tocopherols and tocotrienols. Rice bran oil is also rich in other phytosterols which may provide health benefits. Oryzanol Crude rice bran oil contains about 1.5% or more gamma-oryzanol, a group of ferulate esters of triterpene alcohols and phytosterols. The high antioxidant property of gammaoryzanol has been widely recognized. There are several effects to gamma-oryzanol and related rice bran oil components. They include its ability to reduce plasma cholesterol ,
reduce cholesterol absorption and decrease early atherosclerosis , inhibit platelet aggregation and increase fecal bile acid excretion . Oryzanol has also been used to treat nerve imbalance and disorders of menopause . Tocotrienols Rice bran oil is the only readily available oil, other than palm, that contains significant levels (approximately 500 ppm) of tocotrienols . These occur in at least four known forms .. They belong to the vitamin E family and are powerful natural antioxidants . The protective benefits of dietary antioxidants in the prevention of cardiovascular disease and some forms of cancer are well known. Cholesterol Rice bran oil and its active constituents improve blood cholesterol by reducing total plasma cholesterol and triglyceride concentration, and increasing the proportion of HDL chole. Menopause The rice bran oil component -oryzanol was shown in Japan to be effective in relieving hot flashes and other symptoms of female menopause. Antioxidant stability The antioxidant stability in rice bran oil remains almost constant even when heated at frying temperatures. The oxidative stability of rice bran oil was equivalent to or better than soybean, corn canola, cottonseed, and safflower oil in a model system that simulated deep frying conditions. Other important properties of rice bran oil include modulation of pituitary secretion, inhibition of gastric acid secretion, antioxidant action and inhibition of platelet aggregation.
