Here are some cookie recipes start practicing now for next Christmas. All of
these are from my own files, so I know they work.
Brandy Sand Tarts (Karen these
1 cup butter, room temperature
are the cookies we took to Texas that you liked)
1 egg, room temperature
1 cup sugar
2 T brandy, or 1 tsp brandy extract,
or 2 T of orange juice
6 oz semisweet chocolate, coarsely
chopped
1-7/8 cup flour
pinch salt
Cream butter and sugar till light; blend in the brandy or orange JU1ce. Beat in

ungreased cookie sheet Bake in a preheated 350 oven for about 15 min.
Nutmeg Butterballs
1 cup butter, room temperature
1/2 cup sugar
1 tsp vanilla extract
1-1/3 cup ground pecans
2 cups flour
1/2 cup confectioners
2 tsp nutmeg

Cream butter and sugar til- light. Stir' vanilla and nuts. Gradually add
flour and blend well. Chill 30 min. Preheat oven to 325. Lightly oil cookie
sheets. Shape' into 1-1/4" d:iameter balls and place 2 inches apart on sheets.
Bake for 15-20 min. Combine the csnfectioners sugar and nutmeg; roll the still
warm cookies :in this m-ixture.
Strawberry Shortbread
1 stick butter, room temperature 1 cup flour
1/2 cup sugar Strawberry jam
1 egg yolk Sifted confectioners sugar

market. If y-u double the recipe , a 7 x 10 would be good .. or you. can use an

cut in small wedges. Beat the and sugar till light; beat in the egg yolk.
Beat in flour. Pat into the greased pan and bake ina 325 oven for
40-45 minutes. Remove from oven spread with a thin i yer of jam. Return to
oven for 10 min. Remove and let stand 15 minutes, cutting squares while
still warm . if you let cool it will harden and crumble when you cut them. When
completely cool, sift powdered sugar over top.
Brownies
3/4 cup butter
4 oz. unsweetened bakng chocolate
3 eggs,. room
1-1/2 cup sugar
1-1/2 tsp vanilla
3 I 4 cup flour
1/2 cup chopped nuts
Melt chocolate and butter together and then set aside to cool slightly. Beat
the eggs, sugar and extract until mixture is thick and piles softly. Add the
cooled chocolate mixture and beat till blended. Stir in flour and then nuts.
Turn into a greased 8 x 8 pan and spread evenly. Bake in a preheated 350 oven
for 30-35 min.
Peanut Butter Incredibles
1/2 JP
1/2 cup light brown sugar
1 egg, room tem-perature

I know this sounds weird .. no flour but these absolutely melt in your mouth ..
very rich, and if you like peanutbutter, you will love these. Just beat everything
together and drop by tablespoonfuls onto a cookie sheet and bake in a preheated
350 oven for 12-15 min. If you like, you can stir in 1/ ' cup M 8 M candies.

Cheesecake Bars
1/3 cup butter,
1/3 cup light brown sugar
1 cup flour
1/2 cup chopped

8 oz cream cheese, room
1 egg
2 T milk
1 T lemon juice
1/2 tsp vanilla
Cream butter and sugar till light. Add flour and nuts till well blended, using a
pastry blender to make a crumbly mixture. Set aside one cup of this for topping.
Press remaining mixture onto bottom of a greased 8 inch square pan and bake in a
.
preheated 350 oven for 15 minutes. Beat the 1/4 cup sugar with the cream cheese
until smooth. Beat in eggs, milk, lemon juice and vanilla and beat well. Spread
over baked crust. Sprinkle with the reserved 1 cup of crumbly mixture and return
to 350 oven for 25 min. Cool and cut into squares.

pack it down . ;measurement means tightly packed brown sugar. Do not use
