Tetra Pak's gone back to basics for the development of its new production line for yogurt

production

ts an exacting science.

Production planning and recipe configuration with Tetra PlantMaster provides a complete overview of the process and control in every stage of production. On the aseptic side. Tetra Pak has developed Lactenso Aseptic, a customised aseptic production solution that enables dairy producers to achieve consistent product Tetra Pak reports 8.8bn for 2008 sales Tetra Pak must be doing something right because the Swedish packaging and processing equipment giant announced net sales of 8.8 billion in 2008 - up five per cent from 2007 in comparable terms. Its Packaging Solutions sector reached 7.8 billion in sales in 2008 - an increase of 4.S per cent over 2007, while sales of Processing Solutions reached 949 million in 2008, up 9.3 per cent over the previous year. In 2008, Tetra Pak continued its planned investment in new plant and equipment around the world announcing plans to invest in a state-of-the-art packaging material manufacturing plant in Pakistan and in new equipment in order to increase production in Brazil and Italy To strengthen its portfolio of complete production solutions for cheese and dairy powder. Tetra Pak acquired two specialised food processing companies. Downer MBL Pty Ltd and Downer MBL, from Australia-based Downer EDI. In 2008 Tetra Pak supplied 141 billion individual packages around the world to deliver over 70.6 billion litres of liquid. That represents a three per cent rise over the number of beverages consumed in Tetra Pak cartons in 2007. The company also supplied 503 packaging machines. 1,838 processing units and 1,372 pieces of distribution equipment tn 2008.

Sometimes, it takes the rethinking of an entire line, rather than just replacing one machine

with another. Rather than develop a new unit for che processing line, the engineers at Tetra Pak's headquarters in Sweden have looked at the entire production solution and range of equipment needed to produce yogurt. As a result. Tetra Pak is also able to provide a carbon footprint for new installations, enabling dairies to control and improve their environmentai performance. Dan Bjorklund, manager fermented solutions. Tetra Pak dairy and beverage systems says, "We can make these

claims not just on the basis of our research and testing programme but also because of our practical experience with over 200 yogurt production lines. "In order to achieve first class yogurt processing solutions you need to know the nature of yogurt. Our food technologists work side by side with engineers and automation specialists, as well as with dairy customers. By sharing details on yogurt cultures and milk microbiology, this helps dairies improve line layout and product quality." A key element in the production is the Tetra Therm Lacta processing unit, a platform based unit for pasteurisation of a range of liquid dairy products. This flexible unit includes deaeration, separation, homogenisation and a holding cell of 300 seconds. The unit delivers the yogurt milk with an outgoing temperature of S'-iS^C depending on the yogurt product. In the Tetra Therm Lacta pasteuriser a new energy hibernation function allows an 85 per cent decrease in energy consumption by reducing power, steam and water use during hot water circulation, giving an overall energy reduction of up to 12 per cent. 22 DII May 2009

quality while reducing operating costs by up to 20 per cent and minimising their environmental impact. Technologies, such as energy hibernation and IntelliCIP, work alongside upgraded existing equipment such as the Tetra Therm Aseptic Flex for indirect UHT treatment, and the Tetra Alsafe aseptic buffer tank. Tetra Pak estimates that the systems offer 40 per cent lower product losses compared with current industry standards, use up to 75 per cent less water and cut chemical use by up to 20 per cent. The third generation Tetra Therm Aseptic Drink needs 20 per cent less energy and reduces product losses by up to 40 per cent. Keith Goodby, category manager dairy for Tetra Pak points out: "Tetra Lactenso Fermented has the flexibility to optimise production of a wide range of yogurt, including drinking yogurt, sec yogurt and fermented long life

products." Improving environmental performance is an important area for many dairy sectors, not just yogurt production. In other parts of the industry Tetra Pak Processing is already working with dairies and other processed food suppliers to improve sustainability wherever possible. Meanwhile, Tetra Pak has also launched several other new products. Tetra Pak iLine solutions, a new generation of high-performance aseptic carton packaging solutions, which "takes line integration and automation technology to a new level thanks to a novel process control and information management system," according to the company. Capacity can be increased and operational costs reduced by up to 40 per cent, depending on the configuration. This product portfolio includes the Tetra Pak A3/CompactFlex iLine, the Tetra Pak A3/Flex iLine and the Tetra Pak A3/Speed iLine. On the package side. Tetra Pak has introduced the Tetra Top packaging for high acid ambient distribution (hIAAD) of still drinks. The company has also launched its Tetra Gemina Aseptic globally, a roll-fed gable top shaped package with full aseptic performance for the packaging of both juice and milk-based products. BD I
