Apple and Spinach Salad


2 Tbsp fresh lime juice
2 Tbsp fresh orange juice
2 tsp Dijon mustard
2 tsp honey
1/4 tsp salt
freshly ground black pepper to taste
1/2 cup thinly sliced red onion
8 cups fresh baby spinach (about 8 ounces)
1 large apple, cored and thinly sliced
1/4 cup (1 ounce) crumbled blue cheese
Combine juices, mustard, honey, salt and pepper in a small bowl and whisk together. Place onions and spinach in a large bowl. Add dressing and toss
together. Top with blue cheese.

I tried this salad for a potluck at work and everyone really liked it. It was refreshing. The apple and red onion were nice off setting tastes.

I made this salad for an employee retirement luncheon and many people enjoyed it and asked for the recipe. You do not even miss not having oil
in the dressing! I would definitely recommend this simple but delicious salad as a bring along dish for a barbeque!

I have made this salad twice now. The first time I substituted lemon juice for orange juice yuch! I would definitely stick with the orange juice for
the right amount of acidity and taste. Besides my error in judgement though, this is a wonderful salad. Ill be making it several times this summer

This salad was really good, loved the dressing, didnt need anything else to be added. My hubby didnt care for it..think itwas the blue cheese

Loved it - didnt have an orange so I substituted with 1T of orange marmalade. It was delish. Ill make it again and add some thinly sliced

This salad is FANTASTIC! The contrast of flavors between the sweetness of the apple, the savory red onion and the tang of the blue cheese is
wonderful! Instead of buying one orange (for just 2 Tbsp of juice), I used the good-quality orange juice that we have every morning with
breakfast. That was the only substitution I made. My husband LOVED this and declared this recipe a keeper. We will definitely have this in the
future again and again!
