Aging for the Morassino is entirely in 15 hectoliter casks for 2 years while vinification takes place in stainless steel. Roberto disdains the use of enzymes and other additives, though he admits to have experimented with small lots of wine using them. Nebbiolo must be pure. There are not shortcuts, he says.

Bearing this in mind, the present owners have started their adventure in producing wine in Poggio Salvi, with great passion about 20 years ago.
Since 1980 when Mrs. Laura Bicchi and her mother Grazia Mari, helped by Mr. Roberto Bonucci have taken on the management of the estate, they have always worked at improving the quality of the products with the aim to regain their former fame. Continuous improvements of the vineyards were undertaken by planting excellent new Sangiovese Grosso (Brunello) and Merlot vines and the upgrading of local vines like Colorino, Ciliegiolo and Malvasia del Chianti. The low production of grapes per hectare, the scrupulous care in following every phase of the production from the selection during harvest right through the nal wine making by the very capable oenologist Leonardo Bellaccini. The use of precious French "tonneaux" in order to rene and the assistance of an important estate such as San Felice for bottling and packaging. All these have allowed Poggio Salvi to obtain remarkable wines such as Campo del Bosco, the Chianti Colli Senesi, the Refola and the Vin Santo. These factors, together with the owners' and collaborators' expertise has resulted into the good balance of quality and price and has given Poggio Salvi international fame and the ability to face future market challenges.

In his book "The history of vineyards and wine", Arturo Marescalchi (agricultural technician, as well as the Director of Agrarian Encyclopedia U.T.E.T.) tells that certain wines, such as Rosso di Costalpino and of Rosia, the Viteccio (the castle is situated a few hundred meters from Poggio Salvi), the Vin Santo di Sovicille and of Toiano, were already mentioned in a wine book of the year 1863, next to the famous French chateaux wines and other wines from old Italian noble estates. Santo Lancerio, who was Pope Paul III Farnese's (1468 - 1549) wine taster, said of one of his journeys in the area of Sovicille "it is one of the sunniest and better protected areas from the north wind, which produces excellent and rich wines, such as those of the Toiani hills close to Sovicille where the wines are excellent and worthy to be served at important dinners".

Tasting notes: Garnet red with heady aroma of spring violets, strong avors and soft tannins. Ideal with meat platters and roasted meat.

Vin Santo del Chianti Classico DOC 1999 Vine variety: 20% Sangiovese, 50% Trebbiano, 30% Malvasia Aging: 4 to 6 month in bottle Alcohol: 15% vol. Medium age of vineyard: 18 years Tasting notes: This blend is fermented in sealed oak and cherry wood casks for a period of four years. The resulting wine has a solid amber color, with subtle honey. Castello di Querceto is located at about 7 kilometers from Greve in Chianti. Its land extends over 190 hectares, 60 of which are planted with vineyards and 5 with olive trees, while the remaining are covered with oak and chestnut woods. The Castle, heart of the estate, dates back to the XVI century and the lands surrounding it are full of history. From 1897 the castle is property of the Franois family, which moved to Tuscany during the XVIII century from France, as one of its members was assigned to the Granducato di Toscana. At the beginning of the last century, Carlo Franois took over the estate and turned it from a country residence into an agricultural farm, assuming immediately an important role in the wine world: in 1911 it won its rst international enological prize and in 1924 it was one of the 33 founding members of the Consorzio del Vino Chianti Classico. In the old cellars there are still bottles dating back to the rst vintages of the 20th century. In 1978 Alessandro, Carlos grandson, followed in the family footsteps and began taking care of the estate management. Since than he has been the company director, managing the commercial and the promotional activities, helped in this task by his wife, Maria Antonietta who takes care of the estate image. They are supported by their daughter Lia, accounting manager and their son Simone, director of the whole production. Other very important persons in the estate with an essential role are the winemaker Giovanni Cappelli who gave a big support to the development of Castello di Querceto in the past 20 years and the agronomist Giacomo Grassi, responsible for the improvement and well being of the vineyards. Most of the vineyards of Castello di Querceto were planted between 1975 and 1985. The grapes are mostly red such as: Sangiovese Grosso, Canaiolo Nero, Cabernet Sauvignon, Cabernet Franc, Syrah, Colorino, Merlot. The aim of the agronomist Giacomo is to obtain the best grape quality possible while respecting the environment. Organic fertilizers are used instead of chemical one. The ghting of phytopathologies is based on natural ways and, when necessary, very gentle phyto-medicines. The producion is kept to a low yield that goes from 45 to 50 hectoliters per hectar for the Chianti Classico and from 35 to 40 hectoliters per hectar for the crus wines.

Merlot IGT 2007 Vine variety: 100% Merlot Aging: 6 months in bottle Alcohol: 12% vol. Medium age of vineyard: Tasting notes: This is a typical Italian Merlot. Silky with intense blackberry, luscious currant and notes of spice, tobacco and chocolate. The texture is velvety and it is perfect to be drunk also in its young age.

In 1992 Giovanni Tessari and wife Rosetta, aware of their land great potential, decided to stop selling the grapes to the local cooperative and started to produce their own wine. The Suavia estate is located in Fitta a small village in the municipality of Soave. The modern winery has been built with the best available technology and it makes large use of gravity to move must and wine with the purpose of minimizing the negative effect of mechanical pumps.
Today the Estate is run by the Tessari sisters: Arianna, Meri, Valentina and Alessandra. They combine their family tradition with a fresh spirit of innovation aimed at producing the best the Soave region can offer.

The Tessari family has owned vineyards in the heart of Sovae Classico area since 1887. For generations the Tessari have dedicated themselves passionately to the cultivation of the vine.
12 hectares right in the middle of the Soave Classico area. On this volcanic soil the Tessari family tends to to old vines of Graganega and Trebbiano di Soave. These are the only two grape varieties used by Suavia for the production of Soave,remaining faithful to traditions though the new regulation would allow the use of other varieties.

The landmark of the Terre di Santamaria winery is a 200 years old pine tree
It is in the middle of the spectacular landscape and villages around Trapani, that lies the Terre di Santamaria winery. This is the province of western Sicily that brings Italy to the centre of the Mediterranean, a unique territory where the ancient history meets a unique nature. Here for centuries man has grown the vines and enjoyed wine. Terre di Santa Maria is a rising and dynamic winery run by its owners Matteo and Franco Giacalone. The vineyards cover a total surface of 110 hectares all within the borders of Trapani province. Only a tiny fraction of the grapes produced are used for wines that carry the winery label. It goes without saying that these are the selected fruits from the best vineyards with the best terroir. The rest of the grapes are sold to other wineries. The landmark of the winery is a 200 years old pine tree that can be seen on the high plateau of Kelbi. The vineyards have been planted after careful consideration of the soil and micro climate
in order to nd a perfect match between the grapes and the terroir. Because of the hot Sicilian summers the hight of the vineyards is a critical point in order to ensure the necessary cooler nights. This is guaranteed by the perfect location on the high plateaux at 250 meters above see level. The winery uses indigenous grapes as well as some international one giving to all its products a clear Sicilian identity. At the moment Terre di Santamaria enjoys the collaboration and the knowledge of the famous Oenologist Riccardo Cotarella.
