Abstract limfosit Protein is a polypeptyde that used to growth.

Protein quality can be evaluated with in vivo using mice as the experimental object because the needed of amino acids in mice is same as human need. Tempeh has been known as protein source. . Other substances that used in this research is Secang, this substance has a high antioxidant level. The purpose of this research is to determine the effect of protein that contains in tempeh and non-protein subject secang in maintaining lymphocyte level. The principal of this research is to compare the subject that consumed protein and the subject that did not consume protein. The lymphocytes level was counted directly through microscope with hemacytometer, and using tryphan blue. The result shows that the highest average of lymphocyte found in Secang about 20,5 x 106 cells/ml then followed by non proteins about 2,38 x 106 cells/ml, soy proteins abot 1,77 x 106 cells/ml, and the lowest average of lymphocyte found in casein about 1,49 x 106 cells/ml. The antioxidant level can affect the amount of lymphocytes. Higher antioxidant can give higher lymphocytes amount. On the other hand, the addiction of nutrient in feed can increase proliferation in lymphocyte cells, the results shown that Secang can increase the proliferation in lymphocyte cells so it can increase the amount of lymphocyte cells. Keywords: Protein, Tempeh, Secang, Antioxidant, Lymphocyte Abstract MDA Tempeh has been known as an antioxidant source, the antioxidant that found in tempeh is isoflavon. Isoflavon has three kind of antioxidant such as daidzein, gilisitein, and genistein. Genistein has the highest antioxidant activity in tempeh. Secang has antioxidant compund called brazilin. The identification of antioxidant can be related to the level of oksidative activity in liver. In this research, the oksidative activity was measured by malonaldehyde (MDA). The purpose of this research is determining the effect of protein tempeh, casein, non-protein substances, and secang in reducing the concentration of malonaldehyde (MDA). The malonaldehyde can be measured by the reaction of MDA with TBA (Thiobarbituric Acid) in a high temperature. The reaction was made a complex of MDA-TBA that produces red color, the color then measured by the spectrophotometer in 532 nm wavelengths. The results showed that the highest level of MDA was found in Secang about 0.0279 l/ml, then followed by standard feed about 0.0251 l/ml, tempeh 0.0230 l/ml, and the lowest level of MDA was found in non-protein feed about 0.0198 l/ml. Based on the theory, higher level of antioxidant can affect the level of MDA. Higher antioxidant can affect lower malonaldehyde level.
