Pengertian
Active packaging mengacu pada penambahan bahan
tambahan tertentu pada lapisan pengemas atau
dalam bahan pengemas dengan tujuan untuk
menjaga atau memperpanjang umur simpan produk
Menjalankan fungsi tertentu yang diharapkan, dan
bukan sekedar menambahkan / memberikan
penghambat yang bersifat inert terhadap kondisi
eksternal
Berbeda dengan pengemas pintar maupun intelligent
packaging, yang mengacu pada pengemas yang bisa
merasakan (mendeteksi) dan memberikan informasi
kepada pengguna.

Oxygen in the package headspace:
Increases respiration rates of fruits and
vegetables
Increases the number of microorganisms that
grow in presence of oxygen
Increases the rate of oxidation for foods
containing fat, labile pigments and vitamins,
causing enzymic discolouration
Causes physical and chemical reactions in foods
Shortens shelf-life of foods

Principle:
iron based powder + water (from food) hydrated metallic reducing
agent
Hydrated metallic reducing agent scavenge oxygen & convert it into
stable oxide
Iron powder is separated from food by keeping it in small, highly
oxygen permeable sachet and labeled Do not eat for safety
reasons and regulatory purposes ( for example: USDA regulatory)
First developed and introduced by Mitsubishi Gas Chemical Co.
(Japan) and known as Ageless
Hot & humid climate in summer successful in Japan
Suitable for high, intermediate and low moisture foods and foods
containing lipids
Active even at refrigeration temperatures

Temperature effect?
Spoilage mould in cheese and processed meat can be
inhibited completely at oxygen level < 1%
Disocolouring of sliced smoked meat can be inhibited at
oxygen level < 4%
Beverages (juices):
- orange j. (control): ascorbic ac. decrease 8 to 0
ppm (1 month at 25oC; 75 days at 4oC)
- ox. scav. system: oxygen was removed in < 3 days
and vit.C loss was halved (one year); browning was
reduced by 1/3 after one year at 25 oC
