Great Harvest Bakery is a family-owned bakery since 2000
Great Harvest serves various kinds of bread, pastries and sandwiches in
their menu. They also offer coffee and drinks in their small cafe space in
the corner of their store. All their goods are freshly made every morning
using locally grown ingredients.

The bakery was founded by the co-owners, Tom and Judy. Currently, their
children manages the 2 branches in Metro Manila. The first branch is
managed by their daughter Amanda, while the second branch is managed
by their son Harold.
The company has 1 Human Resources Department and each branch has 1
Sales Department and 1 Production Management.

Bakery
• Founder: Entrepreneur who started the Great Harvest Bakery. They are the ones who created the
business thus they facilitate everything that happens in the company.

• Manager: The person is responsible for controlling or administering a branch of Great Harvest Bakery.
Managers have what is known as a fiduciary responsibility to owners. They are responsible for
safeguarding the company’s assets and handling its funds in a trustworthy manner.

• HR Manager (human resources manager): The people who are knowledgeable about the jobs the
organization needs performed they also plan, direct, and coordinate the administrative functions of an
organization. They oversee the recruiting, interviewing, and hiring of new staff; consult with top
executives on strategic planning; and serve as a link between an organization’s management and its
employees.

• HR Assistant (human resources assistant): Schedules meetings with employees or staff by


coordinating appointments. Welcomes new employees to the organization by conducting orientation.
• Head baker: Responsible for the overall production of bakery products and the
training and oversight of the mission of the staff.

• Assistant bakery manager: Responsible for performing all duties and job functions
of an experienced bakery clerk.

• Cashier: Receive payments by cash, check, credit cards, vouchers, or automatic


debits. Issues receipts, refunds, credits, or change due to customers.

• Baker: Responsible for making wide range of breads, pastries and sandwiches
products of Great Harvest Bakery.

• Part-time assistant chef: Helps with time and daily management like scheduling
of meetings, note taking, and answering phone calls while he/she works less than a
40 hour per week.

• Delivery Man: A delivery person must transport items from one place to another
and take care of others' food, property and documents, company's money and name.
Process
The process begins with the accountant wherein they prepare
the money to be used to buy ingredients for the baked goods.
If the seasonal ingredients are bought the menu for seasonal items is prepared.
If not, the seasonal menu is not showed to the customers.

The chefs prepare the bread in small batches


and the head chef inspects the bread if it is up to his/her standards.
If the bread is not up to standards the bread will be put aside and will be taken
home by the staff.
If the customer orders a sandwich, the sandwich is made on the spot by the
chefs because they believe that sandwiches are best served fresh.
If the customer ordered on the phone the order is delivered to them by the
company’s delivery men.
If the customer ordered an item that is not available, the cashier will offer them
a different choice from the menu.
